Melodee's Hot Wings

I don't remember where I got this recipe, but I have tweaked it here and there over the years. My family likes this version because it is not sloppy wet like so many others out there. However, this recipe can be served wet too. -- posted by Melodee

Chicken Broiled With Mustard, Herbs, and Breadcrumbs

Another one from the great Julia Child's book 'Mastering The Art of French Cooking.' Can be served hot or cold, it is tasty either way. I recommend reading the directions a few times over before preparing, to avoid confusion when cooking. Julia recommends in the book that this be served with baked whole tomatoes and green beans, and, if you'd like, a chilled rose wine. -- posted by ChipotleChick

A Unique & Yummy Salsa!

I am a a stickler for using fresh ingredients so when my boyfriend from 5 years ago made this up for the first time I cringed! Pardon me for saying so, but if I hadn't have been living with him I never would have eaten it! Hahahaha!!!! The boyfriend is long gone but this is the only salsa I'll eat! If you aren't used to cilantro it may take a few minutes to grow on you - it did me. Give it a chance though. It is seriously yummy!! -- posted by Lottidawe

Mango-Avocado Salsa

This is an easy tropical dish that is full of flavor! I like to serve it with chips, or as a side dish. It would be easy to try slightly different versions by adding lime juice, ginger, pineapple, or jalapenos, depending on your personal taste. If you have any other suggestions, I would love to hear them! Thanks! -- posted by Calla Lily

Sea Bass Ceviche

I've been a huge fan of shrimp and scallop ceviche for years but on my last trip to Costa Rica I discovered the wonderful sea bass ceviche that they serve in almost every restaurant. I had it every single night while there. It's just wonderful. The recipe calls for letting the fish marinade for 1 hour but I prefer at least 3 hours. I definitely want my fish "cooked". -- posted by sassafrasnanc

Absolute Best Chicken Soup

This is a family recipe I stumbled upon through marriage. It is a Latin-style chicken soup and it is the best I have tasted. Basically, my mother-in-law makes this soup with a few founding ingredients and then throws in whatevers available. Its always good, but I've narrowed it down for myself and you to the best ingredients to use.

This recipe is great for serving to a large amount of people.

*Note: You use a whole (8-piece cut) chicken if you want to serve 6-8, but if you are serving more than 6, for the purposes of the stock, use only split leg quarters.

The recipe is best when fresh ingredients are used, especially cilantro. Don't even bother with the recipe if you don't have fresh cilantro.

After the chicken is fully cooked, you can try to fish it out and separate the meat from the bones, but I don't usually bother with it. -- posted by Tabasco Saucy

Lime Chicken Linguine W/Cilantro Cream Sauce & Roasted Zucch

My husband made this for dinner last night, I don't know where he got the recipe, but man....it was like eating in a 5 star restaurant!
Don't let all the steps and ingredients scare you off, this recipe is for the entire meal!
The flavour reminded me of being in Costa Rica :)
