			<description>I concocted this on getting acquainted with the taste and texture of a roasted spaghetti squash (also known as a calabash squash). It's an alternative to the idea of treating the squash as a substitute for spaghetti noodles. The roasted squash really has slaw-like texture--soft yet crunchy. Spaghetti squash is an ancient New World food source in Central and South America, so I decided to try making something that combined an ancient native trio of ingredients: corn, beans, and squash. On sampling the roasted squash by itself, my first thought was &amp;quot;black beans,&amp;quot; and my second was &amp;quot;spicy.&amp;quot; Here's what I did, based on what I had in my kitchen this evening. 			<description>This corn casserole recipe is almost identical (at last) to the traditional Jiffy corn mix, sour cream, etc recipe that my family has made for years. Upon diagnoses of celiac disease, this was one of the first things I decided to try and replicate while converting it to gluten free ingredients....and I think Ive got it!! Since we never make this casserole just for my family, many non-celiacs have tried it as well and cannot believe it is Gluten Free! In fact, some relatives of mine have even proclaimed that this version is better than the original! Not bad, eh? :)

The moisture in the husks and silks will create steam to cook the kernels, so there's no need to soak the corn in water first. The blue cornmeal makes for a beautiful presentation but it tastes just as delicious with yellow.  Toast pinenuts on a cookie sheet at 350&amp;deg;F for 5 minutes.  Best served warm. It's a fun soup for the whole family, and your kids will LOVE it with grilled cheese sandwiches! I love my grilled cheese dipped in this soup. :) This is my very own recipe: my uncle is a professional chef and taught me how to cook in his massive kitchen but I can't do the insanely complex stuff he does. Thus while trying to find vegetarian and vegan recipes, I discovered this mixture by accident-- and have now perfected it instead of eating some overly salty Progresso crap.

Update...had a chance to make this and I really like the recipe - it's very quick to throw together.  The only thing I wanted to come back and adjust is the amount of chili powder - suggest starting with a tsp and working your way up from there, because chili powders vary so much. Feel free to use your own spice mix or taco seasoning, I use Recipe #389616.
