The blue cornmeal makes for a beautiful presentation but it tastes just as delicious with yellow.  Toast pinenuts on a cookie sheet at 350&amp;deg;F for 5 minutes.  Best served warm. 			<description>In our early married years my husband always talked about his grandmother's pickled corn but with a child's view point the only thing I could get out of him was that she pickled it on the cob in ten gallon crocks, that he and his brother used to get into before it was ready, and that it was really good. So after doing some searching when we didn't have a computer, I found some general directions in the Foxfire Wood Stove Cookery book and Carla Emery's Old Fashioned Recipe Book. I played around with proportions and found the right combination. If you are from W.Va., Kentucky, Georgia or anywhere along the Alleghany Mountain Range you will probably be familiar with this pickle. The flavor of the brine is similiar to saurkraut but the corn flavor still comes through. Good with mash potatoes.Hope you enjoy it.(yield depends on size of ears and method of canning. You can use any kind of crackers for the topping that you like, I usually use a club style cracker.  Sometimes I even mix the ingredients in the casserole dish, although that can be messy if you are not careful.  I hope you enjoy this recipe, we sure do!

This &amp;quot;is a recipe that has been handed down pre-Civil War.&amp;quot;  Wow.  Unlike most corn puddings, it does not contain sugar and purists do not put sugar in their corn pudding.  Do make this only during corn season when fresh corn is at its sweetest.  It's from &amp;quot;A Love Affair with Southern Cooking&amp;quot; by Jean Anderson. The second time, though, it was beautiful and tasty, so here it is.  I figured out the problem.  Do not put this in the wrong size dish.  I made a triple batch, and cooked half that night in an 11x7&amp;quot; casserole and froze the other half.  The second half I baked in a 9x13&amp;quot; dish.  If you need to cook more than 6-8 servings, make it in two 9x13&amp;quot;s. 			<title>Dehydrator Creamed Corn</title>

			<description>To rehydrate and cook dried corn:  In a saucepan, combine 1/4 cup dried corn with 1 cup hot water.  If the corn has been blanched, it will rehydrate in 5 to 10 minutes, unblanched corn will take about 30 minutes or longer.  Bring the rehydrated corn to a boil and cook for 3 to 5 minutes, cover and let sit for 5 minutes.  Drain.  This will yield 3/4 cup cooked corn.

It's very good and the corn flavor just explodes in your mouth!
You would never guess that this recipe is mainly cheese and corn.
Make it in the crock pot.   Adjust the amount of cream cheese if you like.
