			<description>I came up with this recipe when trying to find something to take to a potluck BBQ picnic. I wanted something cheap to make that would satisfy and serve a bunch of people. So far on my initial taste tests, it is wonderful! It's spicy, but light, with many beautiful colors, tastes and textures. It does not have a heavy dressing, I'm not usually fond of pasta salads as the dressings always seem to vinegary to me, this is just right. You can vary the ingredients, by adding artichoke hearts, any kind of onions from scallions to purple onions, any additional veggies (cucumber, celery) or any pasta you prefer, cheese would also be a good addition. I tried to not make this too spicy since it was a Boy Scout function feeding a lot of kids. It should go over big, (I hope). 			<description>This is a great, quick, fresh tasting salad with a Mexican &amp;quot;flair&amp;quot; that's easy to whip-up for cookouts or picnics or anytime you're grilling.  I got it originally from gloryfoods.com, but have modified it slightly(mainly less oil, more cayenne).  It's a terrifc way to use the cukes from your garden and your homegrown tomatoes could easily be used in place of the grape tomatoes.  Cannellini beans, garbanzo beans or black-eyed peas can be substituted for the butter beans. 			<description>Wanted a refreshing wholesome side dish to accompany some spicy Mexican meatloaf, and this is what happened. Use a LARGE bowl to mix as it makes quite a significant amount. With the seasoning amounts given, the predominant tastes are the lime, cumin, and cilantro. My family doesn't like spicy things, so there isn't much kick to it, so you could probably double the chili powder, increase the other seasonings, and add some cayenne if you desire. 			<description>I found this in Sam the Cooking Guys's cookbook called 'just a bunch of recipes'.  I needed to use up a bounty of corn purchased at a farm stand.  I tweaked it to our tastes, of course.  The original recipe called for 1/2 to 1 tsp. of cayenne pepper (way too much for my husband's taste)_so I used 1/4 tsp.  The original called for the juice of 1 lime, which I would have been happy to use but, I lacked a lime so I used 2 T. of bottled lime juice.  Also, the original called for crumbled goat cheese but I used what I had on hand....a Mexican (Cacique) Cotija Queso Seca cheese that crumbles.  I think you could use any crumbly type cheese but I would stay away from really strong flavored ones, such as blue or roquefort.  The Cacique was perfect for our tastes, just right!  I'm posting the recipe with my changes.  Oh, also, if you don't like cilantro, please don't try this recipe because, in my taste buds, the fresh cilantro really makes this dish.

When I made it, I used only one can of beans and that was plenty for us.  I also used garlic salt instead of regular salt.  This is a very good and refreshing salad that goes well with Mexican food. Fresh off the cob is perhaps the best way to eat summer corn, but corn tossed with beans and tomatoes is a close second. The sweetness of the beans and the acidity of the tomatoes bring out the flavor of the corn. We wanted to find the best way to combine and flavor this trio. Heres what we discovered:
Boil the ears of corn until just tender, then cool them quickly under running water so that they dont overcook.
Canned black beans taste fine, as long as you rinse and drain them thoroughly to remove any of the liquid in which they come packed.
