White Chocolate Blondie Bites

These are so good! Moist and chewy with nice vanilla and subtle chocolate flavor. I topped these with the chips left in the bag before adding on the almonds.
Noel Cookies

Our daughter simply adores these cookies. They are only ever made for Christmas, so that in itself makes them special. These freeze very well, so you can bake ahead and hide. Too bad I can't hide them from myself. :) I think this may have been a Robin Hood recipe from many years ago, but I'm not completely certain. -- posted by Diana #2

These are nice bars that are a little different from the regular crispy treats. I like the nutty flavor and all the different textures in them.
Rum-Raisin Bars

Here is another recipe from the www.bettycrocker.com website. "Why wait for the holidays to make a flavor favorite? Rum-Raisin Bars are easy enough to make for a weeknight treat." Substitution - Use orange juice for the rum. You’ll get a slightly different but yummy flavor. How-To: A plastic food-storage bag makes quick work of crushing cereal. Fold or close the open end and squeeze with your hands or roll a can of food over the bag to crush. -- posted by senseicheryl

Passover Almond Thumbprint Cookies

These delicate little almond cookies, from "Gourmet" (April 2006), are really delicious. They don't taste like Passover cookies and are good enough to eat year-round. The contrast between the crisp cookie and gooey-sweet jam is pretty addictive; you may want to double the recipe. You can substitute a whole almond for the jam, if you prefer. If you like marzipan, you'll love these! And they are quick to whip up. Dough requires 1/2 hour to chill. -- posted by blucoat

Exceptional Passover Brownies

This recipe is from Claire Sauerhoff, pastry chef and owner of a New York bakery called "The Exceptional Brownie". Her bakery won COPIA'S "Best Darn Brownie Contest".
To achieve a fudgy result, be careful that you don't overbake the brownies. After 35 minutes, begin to test for doneness with a cake tester or a toothpick that you stick in the middle of the pan. You're looking for the tester to come out with just a little batter on the end. -- posted by blucoat

A delicious and simple snack or dessert that can be left raw or baked in the oven. It is also completely sugar-free. Select raisins that are moist. If the only raisins that you can find are dry and hard, try soaking them for a few hours. Note: It makes a really good granola if it ends up too crumbly. You can also use the seed and raisin mixture to make a pie crust. -- posted by VeggieChallenge

Energy Bites (Mock Larabar)

Energy bars like Larabars are expensive ($1.75/bar) to buy. But you can easily make them using healthy ingredients. I made mine into small bites, vs. a bar. You can vary the ingredients using chopped dates, dried cherries or raisens or whatever dried fruit you have on hand. Yesterday at Costco I bought dried spiced apples and cranberries for under $3. I also buy my dried blueberries at Costco. Enjoy! -- posted by Jan Marie

Asa Ransom House Brownie Mania

In 1799, the Holland Land Company offered lots 10 miles apart in what is now Clarence, New York, to "any proper man who would build and operate a tavern upon it". A young silversmith named Asa Ransom, had been plying his trade in the little fur trading post on the shores of Lake Erie. He was among the first to accept this opportunity and in the hollow of the ledge, near a pine grove, built a log home & tavern. In 1803, he built a grist mill, the first in Erie County. Over time, the business has evolved into a charming inn noted for it's authenticity, hospitality and cuisine. -- posted by Molly53

Old World Butter Horns

Light and flaky filled cookie. One of my mother's dear friends, a woman of German heritage, shared this recipe with her more than 40 years ago. At the time, it had been in her family for more than 100 years! It has always been my favorite cookie for special occasions and still is.
We use two variations for the filling:
the traditional orange date nut filling provided here or, mincemeat, a family favorite, during the holiday season.
The filled cookies freeze well and can be baked off straight from the freezer.
For best results, be certain that the dough is thoroughly chilled before rolling out and that the filling has cooled completely before use. -- posted by Hotelier in Holland

Healthy Granola Bars

I was searching for a healthy granola bar recipe, one without butter and any added sugar. I came upon one called "grab-and-go breakfast bars", which I changed up to make this recipe. You can use any combination of nuts/fruits that you would like. I just used what sounded good to me, and it came out great! These granola bars have about 4g fiber and 4g protein in a serving, and make a great snack. -- posted by Chef #1360260

Coconut-Orange Thumb Print Cookies

Adding this to my holiday cookie trays. Adapted from a recipe in The Seattle Times provided by Lynne Rossetto Kasper. Something wonderful about orange at Christmas. Coconut is always so festive too. The article noted this dough really benefits from resting overnight in the refrigerator so start the day before. Over working this dough seems to make tough cookies - think I'll be using cake flour. Prep time does not include overnight dough chilling. -- posted by Buster's friend

I haven't tried this recipe yet but I couldn't pass up posting it because I don't want to lose it and others might enjoy a "legal" cookie recipe. I'm totally guessing at the yield. Zaar is listing the calorie and fat content (mostly fron the nuts) for a dozen cookines. Dividing 12 into that amount breaks down to each cookie having 33.5 calories. If you wish to lower it more just use less nuts. -- posted by Annacia

German Chocolate Cookies

Found in the Washington Post who attributed it to cookbook author Sally Sampson's "Cookies". The dough can be frozen for up to two months. The cookies keep 5 days room temp in an airtight container (good for mailing!) & two weeks in the freezer after being baked (handy!). NOTE: To toast the pecans, spread them on a baking sheet and place in a 325-degree oven, shaking the sheet occasionally, for 15 minutes. Watch carefully; nuts burn quickly. *****these were one of the first gobbled up cookies on our Christmas trays! They are very dark & lumpy bumpy - suspicious looking in fact - but once tried were scooped up fast!****** -- posted by Buster's friend

Golden Coconut Macaroons

Who can resist a pretty little macaroon sitting on a Christmas platter; the hand just goes for them. O-M-G! Macaroons made richer with the use of whole eggs! I am imagining this dipped in bittersweet chocolate (toes curling in anticipation LOL!)... Found this gem in The Washington Post who adapted it from a Jayne Sutton recipe in "Cookies Unlimited," by Nick Malgieri. Make room on the platters, these little babies are coming on board! Pssst! Super easy to make too! based on the review I made some chnges when I got to this recipe today. They turned out fluffy & chewy (& ORANGE!). I put my changes in parentheses so the original recipe is still here too. I suspect letting the mix sit for an hour would help if using 2 eggs. BTW - I recommend NEVER buying the Hiram Walker's Pumpkin Spice Brandy - undrinkable in anything but oddly enough worked well here. Go figure. I have enough for Christmas macaroons until... well, a long time. -- posted by Buster's friend

Rachel's Special Chocolate Coconut Oat Bars

I was in the mood for all three and concocted this: it has the urban decadence of chocolate, the tropical staple of coconut, and the rustic comfort of classic oatmeal. These bars are special because those three things symbolize the various walks of life I have experienced. Open for all kinds of other toppings too! This calls for cream of coconut, crema de coco-- not to be confused with coconut milk or coconut syrup. Would make a wonderful gift or a party/potluck dessert!
