Chocolate Mint Truffle Cookies

These cookies are our very favorite Christmas cookies. My husband has been making these with our kids since the oldest was just 1 1/2 years. They are amazing - chocolaty, fudgy and moist. A true winning combination. The dough needs to be refrigerated for 2 hours which is not included in the prep time. Cookies can be frozen for about a month and will last in airtight container for about a week (although we never actually have been able to test this time because the cookes are gone in no time).
Chocolate No Bake Bundles

Yes ... a desert from me. I'm not too much into desserts, but this is worth mentioning. My girlfriend made these for a bridal shower we both attended last month and they are absolutely delicious. Crunchy, sweet and even though I like chocolate, I'm not a "chocoholic," so for me to really like these, it says a lot. They just firm up on the counter and take minutes to make. A perfect like snack for a party. She found the recipe in a small local cookbook from her home town in TX. She cooks very little, but loves to bake, however, she admits ... her idea of baking is never having to turn on the oven. Well, this was the perfect dish for her and it was a hit with everyone. So I had to share. -- posted by SarasotaCook

Light Pumpkin Cookies With Splenda Sugar Blend by Kim

It time for fall and holiday baking. Nothing makes the house smell better, feel warmer, and seem more inviting. This is a great recipe to use your canned , homegrown, or jack-o-lantern flesh. These turn out soft and delicious. For those of you that enjoy the flavor of nutmeg, you may add 1/8 tsp. to the recipe. This recipe certainly doesn't need it though. In fact, I prefer the cookies without it. Don't be afraid to try the Splenda Sugar Blend. It is significantly cheaper than Splenda alone and you can't even tell that you didn't use all that real sugar. No, seriously. If you don't believe me you can substitute the Splenda Sugar Blend with 1/2 cup of sugar. You're going to love these cookies. If you have kids, or a sweet tooth like myself, you could also toss in some chocolate chips. I haven't tried it yet, but I think it would taste great. -- posted by KRice, PA

Lime Butter Cookie Wreaths

Found this in the Womans Day Holiday Magazine and it looks so cute I've got to try this for Christmas. Though it shows how to make the wreaths by hand, my guess is that if you have a cookie press could do the same thing with the wreath design. These should look so pretty on a holiday cookie tray. This looks like a lot of work, but hey - the holidays only come once a year right!! When decorating you can use a thin red or green ribbon to tie a bow on top if you really want to be fancy, which is what they did in the magazine -- posted by Bonnie G #2

Coconut Cookie Slices (Danish Fedtebrød)

These cookie slices were my absolute favorites growing up in Denmark; they are simple but yet so delicious - especially if you are a sweetened coconut fan. I have done my best to convert recipe into cups/tbsp but if you have a scale I recommend that you weigh the ingredients instead of using the other measures. The cookies freeze well. -- posted by Deantini

This recipe was passed on to me by my friend, Amy, who got it from another expat friend living in Bitola, Macedonia. The recipe calls for 3/4 tsp peppermint flavor extract but I usually double it so that it has a stronger peppermint flavor. -- posted by Chef #940153

Soft Banana Cookies With Splenda Sugar Blend by Kim

This recipe produces soft, cookies that taste even better the next day. This is a great recipe to use for family functions or just to use up your browning bananas. A half cup of chocolate chips or walnuts make great additions. If you are skeptical that these taste great with Splenda (you can't even tell), then add 1/2 cup of sugar in place of the Sugar Blend. These cookies will be a hit. -- posted by KRice, PA

Pumpkin Whoopie Pies

I spied these on Seriouseats.com this week and couldn't resist (they're originally from the bakery Baked). We enjoyed them at our office Halloween party. Recommendation: Eat them fresh -- they lose their punch when they sit overnight in the fridge and can get too wet. Expect a denser, cake-like cookie and not the usual fluffy chocolate whoopie pie. To up the orange color, maybe mix in some food coloring to the icing or add colored sugar to the edges. -- posted by Kristine at Recipezaar

- freeze dough for a few minutes to make it easier to handle

Old World Butter Horns

Light and flaky filled cookie. One of my mother's dear friends, a woman of German heritage, shared this recipe with her more than 40 years ago. At the time, it had been in her family for more than 100 years! It has always been my favorite cookie for special occasions and still is.
We use two variations for the filling:
the traditional orange date nut filling provided here or, mincemeat, a family favorite, during the holiday season.
The filled cookies freeze well and can be baked off straight from the freezer.
For best results, be certain that the dough is thoroughly chilled before rolling out and that the filling has cooled completely before use. -- posted by Hotelier in Holland

Sugar Cookie Cut-Outs

I had misplaced this recipe and recently found it again. When DD was in Kindergarten the children had to take turns bringing a snack to school for everyone to share and DD loved to bring these cookies. I love this recipe because it doesn't require refrigeration before rolling out and because the cookies always turned out beautifully. The recipe is from a little booklet called Wilton Christmas Recipes & Ideas.
Note: If you're using margarine, be sure to use the hard margarine that comes in a brick like butter, not soft tub margarine. -- posted by Dreamer in Ontario

Healthy Granola Bars

I was searching for a healthy granola bar recipe, one without butter and any added sugar. I came upon one called "grab-and-go breakfast bars", which I changed up to make this recipe. You can use any combination of nuts/fruits that you would like. I just used what sounded good to me, and it came out great! These granola bars have about 4g fiber and 4g protein in a serving, and make a great snack. -- posted by Chef #1360260

Adding this to my holiday cookie trays. Adapted from a recipe in The Seattle Times provided by Lynne Rossetto Kasper. Something wonderful about orange at Christmas. Coconut is always so festive too. The article noted this dough really benefits from resting overnight in the refrigerator so start the day before. Over working this dough seems to make tough cookies - think I'll be using cake flour.
I haven't tried this recipe yet but I couldn't pass up posting it because I don't want to lose it and others might enjoy a "legal" cookie recipe. I'm totally guessing at the yield. Zaar is listing the calorie and fat content (mostly fron the nuts) for a dozen cookines. Dividing 12 into that amount breaks down to each cookie having 33.5 calories.
Drommar

This is an almond butter cookie that melts in your mouth! An old Scandinavian recipe,I have been making this cookie for over 50 years: it was one of the first ones that my Swedish Grandmother taught me to make. However, this is NOT the cookie you make when you are running short on time. You must be proactive and do several steps before you can even begin the cookie itself. It is critical to really brown the butter as it's that key ingredient that adds all the flavour. I will make over 100 of these each Christmas: at the start of the baking day I wil brown and cool the butter. At the end of the baking day, I will combine the ingredients and bake it, knowing that these MUST sit out on the counter to cool 100% or they shatter. The next day I repeat the steps. But, these are so worth the little bit of extra preparation; they are the first cookie to disappear from the tray each year. -- posted by The_Swedish_Chef

Chewy Chocolate Gingerbread Cookies

I originally found this recipe on a baking blog, Cookie Baker Lynn. I made one major change to the recipe; melting the chocolate and incorporating it into the batter instead of using them as chunks in the cookie. I searched here and found two recipes for these cookies each giving credit to Martha Stewart's website. Both used chunks of chocolate rather than incorporating in the batter. I think this is a significant enough change to warrant another recipe and to claim my own spin ;) These cookies are thin chewy chocolatey goodness in every bite. Prep time includes chill time. -- posted by invictus

Have you ever had those sugar cookies at publix that are really fluffy and cake like? Well hear is that recipe. I think its the sour cream that makes it so fluffy. I also roll them out maybe 1/4 in thick and under cook them a little but thats probably a personal preference. They do take a little work just like any cut-out cookies but this is something that anytime I ask someone in our family what I can bring for dessert they always say this! I use my kitchen aid but before that I would use my hand blender as long as I could and then mix the last part of the flour in by hand. Hope you enjoy. -- posted by 998171
