Pineapple Macaroon Bars

I was looking for pina colada bars without rum, and couldn't find exactly what I wanted: a bar cookie that had 3 layers: cookie, pineapple, and coconut. So I found two recipes and combined them to make what I wanted. (They are Cherry Pineapple Bars and Cherry Macaroon Bars.) I omitted the cherries (marashino - yuck!), and already reduced the sugar to half, since most recipes have too much sugar. It was just right. You may want to adjust to your taste. -- posted by Triplit Mom

I almost hesitated putting "coconut" in the title, because I do not like coconut myself. In fact, no one in my family does. But these cookies are quite a treat. So easy to make, and each one has a toasted hazelnut in the center of the coconut ball. What a great, tasty combination! Try them. You won't be disappointed. -- posted by ~Srb~

Kokosmakronen (German Coconut Macaroons)

Kokosmakronen are very typical German Christmas Cookies. Traditional Kokosmakronen are nt using lemon peel in the dough. But it adds a fresh note to the coconut cookies. You can decorate the cookies with icing chocolate. I use a whole milk chocolate of a good quality. The method of heating the egg white mixture to 70°C will give the cookies more stand during baking and the keep their shape much better. If you don't have a suited icing bag you could spoon the dough on the wafers. -- posted by Thorsten

Better than the kind in the tin, homemade soft and delicious coconut macaroons, dipped in chocolate. YUM! (These will be gobbled up before the second seder, so make sure you get one at the first seder while you have a chance!) From Joan Nathan. Note: Zaar won't let me specify matzah cake meal, it only recognizes matzo meal. Be sure to use the cake meal variety. -- posted by Susiecat too

Michelle's Most Delicious Cassava

"Cassava" is a dessert from Guam. Traditionally served at barbecues these chewy tapioca and coconut bars are sure to be a hit anytime. Cassava is what the root of the yucca plant is called and tapioca is derived from it. It is also the main ingredient in "cassava," the dessert.
Healthy Cowboy Cookies

I fell in love with a recipe for Cowboy Cookies that I found on this site, and figured that a couple of cookies with a glass of milk would make a pretty good breakfast except for the high amounts of fat and sugar.
In an effort to reduce the "bad" calories and increase the nutrition, I replaced some of the butter with an equal amount of beans, (I know it sounds weird, but you really cannot taste them), I reduced the sugar some, I switched to whole wheat flour, and increased the nuts so that 2 cookies would have half of a daily serving of nuts. If you want more of a dessert cookie increase both sugars by 1/4 cup.
Note: This recipe is still a work-in-progress. It tastes fine, but there is too much leavening in it for my tastes. As soon as I figure out what the correct amount is, I will update the recipe. -- posted by MistyCat82

Coconut Brownie Bars With Chocolate Ganache

Pastry Chef Cheryl Burr of San Francisco's Bacar loves candy, as is obvious from her homage to the Almond Joy. Her luxurious take consists of a supremely fudgy brownie topped with a layer of chewy, flaky, exceptionally tender coconut. She dots each bar with a crunchy roasted almond, then coats them in silky bittersweet-chocolate ganache. F&W Magazine, October 2008.It takes about 7 hours cooling time.
German Chocolate Cookies

Found in the Washington Post who attributed it to cookbook author Sally Sampson's "Cookies". The dough can be frozen for up to two months. The cookies keep 5 days room temp in an airtight container (good for mailing!) & two weeks in the freezer after being baked (handy!). NOTE: To toast the pecans, spread them on a baking sheet and place in a 325-degree oven, shaking the sheet occasionally, for 15 minutes. Watch carefully; nuts burn quickly. *****these were one of the first gobbled up cookies on our Christmas trays!
Golden Coconut Macaroons

Who can resist a pretty little macaroon sitting on a Christmas platter; the hand just goes for them. O-M-G! Macaroons made richer with the use of whole eggs! I am imagining this dipped in bittersweet chocolate (toes curling in anticipation LOL!)... Found this gem in The Washington Post who adapted it from a Jayne Sutton recipe in "Cookies Unlimited," by Nick Malgieri. Make room on the platters, these little babies are coming on board! Pssst! Super easy to make too! based on the review I made some chnges when I got to this recipe today. They turned out fluffy & chewy (& ORANGE!). I put my changes in parentheses so the original recipe is still here too. I suspect letting the mix sit for an hour would help if using 2 eggs. BTW - I recommend NEVER buying the Hiram Walker's Pumpkin Spice Brandy - undrinkable in anything but oddly enough worked well here. Go figure. I have enough for Christmas macaroons until... well, a long time. -- posted by Buster's friend

Rachel's Special Chocolate Coconut Oat Bars

I was in the mood for all three and concocted this: it has the urban decadence of chocolate, the tropical staple of coconut, and the rustic comfort of classic oatmeal. These bars are special because those three things symbolize the various walks of life I have experienced. Open for all kinds of other toppings too! This calls for cream of coconut, crema de coco-- not to be confused with coconut milk or coconut syrup. Would make a wonderful gift or a party/potluck dessert!
