			<description>This recipe originally called for lemon in place of the orange but orange and chocolate translates to Christmas for me. Found the original in The Washington Post who attributed the Ghirardelli Chocolate Cookbook. In homage, consider using Ghirardelli chocolate for this recipe. Whatever chocolate you use, use block chocolate, not morsels. ****dough needs 30 to 60 minute minimum chill in the fridge (good for making the day before)**** These turned out to be the star on the Christmas platters.  Several folks would not believe these were not purchased! They are that good with bittersweet chocolate &amp;amp; about 3+ teaspoons orange zest. The cookies keep 5 days room temp in an airtight container (good for mailing!) &amp;amp; two weeks in the freezer after being baked (handy!).  NOTE: To toast the pecans, spread them on a baking sheet and place in a 325-degree oven, shaking the sheet occasionally, for 15 minutes. Watch carefully; nuts burn quickly. *****these were one of the first gobbled up cookies on our Christmas trays! 			<description>I love chocolate chip cookies, and have been playing around for years to find what I consider to be the 'perfect recipe.' This is a combination of recipes from a few different sources, I don't consider it original, more stealing the tips I like from different places (alton brown, the ny times, and paula deen, among others). I particularly like it because the butter is melted - it saves your arm the usual pain of mixing softened butter. These make cookies I like - slightly salty, think, chewy, and butterscotch-y.

If anyone finds changes that work well, please let me know, this recipe is always a work in progress to me.

			<description>I love how well Nesquik lends itself to baking! This recipe is wonderful for doubling to take to parties and potlucks. Concocted these based off my Pink Brownies recipe, except no additional cocoa powder is needed because there's already chocolate in them. Prep Notes- you can use self-rising flour if you omit the baking soda and salt; AP and cake flours need them or else it won't come out right. If you take out the butter and use all applesauce, use another 2-3 TB or else there won't be enough moisture. If using just one serving of applesauce, those little Mott's single serves are awesome. Can also sub 3 egg whites for the eggs. 			<description>Had these on Christmas Eve and thought Santa came early!  Talk about simple - and sinful!  These were extremely easy (and a lot of fun) to make. 

We used reduced fat ( ::gasp:: ) Oreos, and they were just as good.  You could use low fat cream cheese as well. We also decided that covering the *entire* ball made them a bit too sweet (yes, I know - how can that be?!?). Next time, we will just dunk the bottoms in the chocolate.

			<description>This is a Cook's Illustrated recipe that was originally published in January 2009.  These are dark, almost fudgy cookies that are not crumbly at all.  They develop a nice, crackly top and are not overly sweet, even with the granulated sugar coating.  CI recommends using Callebaut Intense Dark L-60-40NV, but any high- quality dark, bittersweet, or semisweet chocolate will work. Light brown sugar can be substituted for the dark, as can light corn syrup for the dark, but with some sacrifice in flavor. That good to make me want to remember it. And we didn't keep Bisquick in my house so it was an especially great delight for me. Makes about 16-24 cookies depending on how big you make them. They may not taste as fine as pure from scratch cookies, but they still taste good and are a time-tested kid pleaser. Can sub vegetable oil or shortening for the butter but the butter tastes better.
