			<description>I cut this recipe out of the Medford Mail Tribune a couple of years ago.  This is my 3rd Christmas of using this recipe and my family would go nuts if I didn't make at least four different kinds using this basic recipe.  Grated orange peel can be substituted for the lemon peel for a different taste.  Any kind of dried fruit can be substituted for the dried cranberries, and any kind of nut can be used for the pine nuts, pistachios are nice.  I vary the type of chocolate I use  to dip one side of each Biscotti either white, milk or dark chocolate.  I've substituted other flavors of extract for the vanilla also.  This basic recipe is good but if you are a baker who likes to experiment with flavors THIS is the one to try that with!!. I'm not an aniseed lover so I often omit it as it has a strong flavor of it's own that seems to cover other flavors. Putting two of my favorite flavors, citrus and ginger together into another of my favorites Biscotti...OMG have I died and gone to heaven?  Although a little time is invested in making Biscotti, it is well worth the effort.  Besides being a great snack to go with your coffee or tea in the morning it also is great in Gift Baskets with designer coffees or teas. 			<description>This is a delicious almond flavored biscotti-type cookie that is not overly sweet.  It was my favorite as a child (grandma used to make them).  God bless her--she made them by hand.  I use a machine (a Cuisinart or a stand mixer) for mixing the rather stiff batter.  If the dough is too sticky, lightly flour your hands to shape the loaves. 			<description>I included them on my Christmas cookie platters this year, and everyone made a point of telling me how good they were.  I found the recipe on the web.  The raisins were my idea.  Dried cranberries would be as good, if not much, much better.  Or leave them out completely.  Both light and dark brown sugar work beautifully, although I think I like the dark brown sugar version just a tiny tad more. I used good-quality white chocolate chips mixed with about 1/2 teaspoon of shortening for the drizzle.  And if you can, use freshly ground nutmeg.  Also, you can use up to 3/4 cup raisins or dried cranberries.  Any way you try it, I think you'll love them.
