Banana Coconut Cookie Bars

This is my own creation. I took everything I liked and combined it into a bar that was simple to make. You can use your choice of cookie crumbs or chocolate chips and still end up with a good tasting cookie bar. With 5 growing boys in the house this treat does not last!!!!!! So go ahead, use your imagination, more coconut, less coconut, butterscotch chips - The choice is yours!!!! -- posted by Boyz 5

From Cooking Light website. Something different to make with over-ripe bananas (this is the key to a strong banana flavour--the more spotted the banana the tastier.)
Banana Oat Cookie Bars

I tried playing around with a few recipes, and this is the one that worked out the best for my family. It's a light cookie; I found that making it into bars worked better for me, since I only had one hand and could not spoon them onto a cookie sheet. I also used a food processor to mix the batter to make it quicker and easier to do while holding my daughter. :) -- posted by Angel1205

Ridiculously Healthy Banana Oatmeal Cookies

In a bid to add to my seemingly-naughty-but-actually-very-healthy recipe collection, I invented these ridiculously healthy banana oatmeal cookies! They have no added sugar, no butter/marg and no flour in them and (considering this) taste rather magnificent if I do say so myself! I'll say it now - if you're NOT on a diet then you probably won't think so much of these. They are pretty yummy, but there are probably plenty of nicer recipes (ie. with butter and sugar) if you're not weight watching. I find these to be a really nice, healthy, filling treat though, and I hope you enjoy them too! -- posted by Wendy-Bob

Right out of the Martha Stewart September Living magazine. Couldn't wait to try these and they did not disappoint. Much easier then they sound.
I myself used dark brown sugar is that is what I had and I misread the recipe using the entire teaspoon vanilla in the batter then adding the extra in the filling. Came out wonderful. -- posted by podapo

Dreamy Peanut Butter, Banana & Oatmeal Elvis Bars

The generous amount of Peanut Butter makes these bars taste rich and creamy, the banana keeps it *ultra* moist and takes on a mellow background flavor, and the oatmeal holds it all together PLUS some chocolate thrown in for good measure :) These are better the next day, don't contain and eggs or flour, and are a good way to use up some ripe bananas! -- posted by roweena

Pumpkin Seed Raisin Squares

A delicious and simple snack or dessert that can be left raw or baked in the oven. It is also completely sugar-free. Select raisins that are moist. If the only raisins that you can find are dry and hard, try soaking them for a few hours. Note: It makes a really good granola if it ends up too crumbly.
Banana Chocolate Chip Muffins

This recipe is very versatile because it can be made in the form of muffins, bread or CAKE! If you like, you can add a bit less sugar and leave out the chocolate chips and make it more appropriate for breakfast/brunch. Walnut are are great addition, but are by no means necessary. I think these are amazing just as they are. From: Joy of Vegan Baking! Please note: Cook time for MUFFINS is stated below. If baking as a "bread" or cake it should probably bake for 40-45 minutes -- posted by Kozmic Blues
