			<description>This is a basic recipe for a clear soup--can be made with what you have already and helps use up leftovers. Doesn't it bother you when you find recipes that require you to buy cumin nostrils or some other obscure ingredient? Not this recipe. Do whatever you want to do with the ingredients beyond the basic part of the recipe.

This helps make a weeknight supper by adding a good salad and bread or a sandwich. If I add a lot optional ingredients it can make a meal on its own.

My son was 5 or 6 and would not eat many vegetables but liked this, so it was a keeper. He never noticed the okra in it. You can also substitue or add what you like to it easily. This makes a huge pot, so be ready to share or freeze some! I cook it on top of the stove in a dutch oven. I serve it with corn muffins and it is a meal. I hope other's enjoy it.

And there are so many good recipes here on RecipeZaar for bread bowls and I sure some family recipes which are favorites, so I am not going to go into a recipe for that.  Honestly, I tend to just order mine from my local grocer which are inexpensive and no work for me.  But, if you like to bake ... go for it.  I'm just more of a cook, not a baker, although I do, but I prefer not too if I had my choice.  You can also use premade frozen dough, make your own, or any method you want.  But this is about the chowder and the method of presentation.  I love the bread bowls and it always seems to make a great presentation.  This is one of my favorite things to serve for a football party on Sunday, or a BBQ for a small get together. Or just a nice dinner party with friends.  It is fun and different. Serve with grilled sausage, BBQ chicken, pulled pork sandwiches, pork tenderloin or even kabobs. It makes this a great comfort food dinner. It takes a little work, but the soup can be made the day ahead which is the best part and I always make sure I have the bread bowls ahead too. Queen Victoria was particularly fond of it, and it regularly appeared on state banquet menus.
However, this recipe has not had very good press over recent years - drab tinned brands and indifferent, greasy soups served in some lower end restaurants have given it a bad culinary name! I hope to redress that with this authentic recipe from Windsor in Berkshire, England - home to the Royal Windsor Castle. This freezes really well. I don't generally mesure but the great thing about this soup is it can be adjusted to suit your pallete. I kinda just emptied my cupboard and freezer with stuff I had on hand including left over turkey. Feel free to use chicken, tofu, or whatever you have on hand and the beef boulion could easily be substituted with chicken or vegetable if you prefer. It's similar to loaded baked potato soup, except that I don't care for sour cream or chives so I personally do not add them. However, if you would like to make it that way, I recommend a fourth cup of sour cream added in and about a fourth a cup of chives. You can tweak the amounts of those as well, based on how you liked your baked potatoes, but those amounts should give a good even flavor of everything. Please feel free to experiment with the amounts of seasonings if you'd like, but the ones provided should make it just right. The first time I made this, I followed the directions exactly and baked my potatoes for about 1 1/2 hours at 500 degrees. I passed the recipe on to my mom, who just boiled her potatoes and she said it turned out perfectly, so by all means, make things easier on yourself. Just thought I'd post orginal directions as they were given to me. I used an immersion blender to make the soup creamy, but still left a few small chunks of potato to add texture. 			<description>Yes layered soup, well that was their name ... &amp;quot;Creamy Corn, Chorizo and Bean Tortilla Chowder.&amp;quot;  It was at a small little Mexican restaurant in Taos, NM, about 10 years ago and it was amazing. The table next to me ordered it and it looked so interesting I had to try it. The soup was topped with small piles of the chorizo, avocado and olives, and cheese on top this beautiful creamy pale yellow corn chowder and then they took a bite and the bottom layer of the soup was black beans. It was picture perfect served in this big wide rimmed white bowl, it was almost to pretty to eat. Well it incorporates a spicy layer of black beans, onions and roasted jalapenos, topped with a perfect creamy corn chowder and then topped with small piles of the chorizzo, diced avocados with olives and a pepper jack cheese. A squeeze of lime and cilantro. Take advantage of cooking the chorizo, black beans and chowder well ahead of time so when it comes time to serve ... just reheat and plate up. I serve this with my chicken enchiladas with a red sauce. This is a great dish for friends or just family and it is really simple. 			<description>I begin to turn to soup when the weather outside turns a bit crisp, and I keep right on making and eating hearty, healthy, warming soups all winter long.  This is an adaptable soup.  Instead of the swiss chard, you could substitute any dark greens (spinach, turnip tops, radish tops, mustard greens, etc.).  You could also substitute beans and/or rice for the potato; add fall veggies like sweet potatoes or squash; etc.

It is funny how going through my old recipe boxes, I have all these old hand written recipes, I have yet to type up - ones I simply forgot about. The title says it all. But what I like about this is how quick it cooks up.  Other than chopping your chicken (I used a store bought rotisserie) and basil, and cooking the bacon, the rest is open the can or jar and add to the pot. Simmer for 15 minutes and you have a hearty soup.
