I had leftover potato &amp;quot;meat&amp;quot; from making potato skins so I made home fries with them, from 8 small potatoes without skins so that probably equals about 4 regular potatoes and 6 small ones. If you plan ahead on making home fries for breakfast, then you can pre-bake potatoes for this. Please note that cooking time does not account for baking the potatoes! This assumes that you have leftover baked potatoes and are using them this way. Raw or boiled potatoes will not work. This makes 1 large serving, if you plan on making enough for your family pre-bake more potatoes. 			<description>Whenever we get close to the end of a paycheck our meals become more cheap and oft times more original because we have to use whatever we have on hand. We made this up last night and I will certainly be making it a part of our regular menu. I served it with gravy and had steamed zucchini and yellow squash on the side.
The dough I chose was a harder, crusty type of bread. The type that keeps all the filling inside. I don't know how different kinds of dough will turn out with this. You can also use different fillings. I added corn to a couple of mine and it was delicious. I really want to try replacing the onion with lipton onion soup mix.

			<description>During Christmas, we were on holiday in Scotland. I asked my mother-in-law, &amp;quot;Have you ever made a dish called &amp;quot;rumbledethump? They're talking about it on a website. (Zaar)&amp;quot;  She laughed and said, &amp;quot;That old thing! We ate it as kids and when newly married! I haven't made it in years!&amp;quot;  She explained that if you asked a 100 Scottish women to make this dish, you'd come up with 100 variations.  

Some use onions, some use chives. Some boil their cabbage, some fry it. Other's add turnips or parsnips or carrots. But however you make it, this is Comfort Food at it's highest elevation. I watched her make it from scratch, took notes and asked questions. The end result is her version, which comes from the Loch Lomond area of Scotland.

What I love about this variation is the great contrast between the tangy tomato topping and the incredible richness of the cabbage/onion/potato filling. Top it with cheese and you have some of America's favourite flavours: tomato, cheese and potato.  I should know: I ate three pieces the first time that I ate her version!

			<description>Wonderful for a weekend brunch. My whole family absolutely loves it. Lots of flavor from the onions, chives, and bell pepper. There are lots of variations of this recipe but I like that this one uses milk instead of sour cream or cream cheese which are high in fat and this one still has just as much flavor. It came from Debbie Macomber's Cedar Cove Cookbook that a friend got me for Christmas. I only switch the whole milk to 1 % and keep the skillet at medium-low instead of low when making the sauce. Can easily be doubled to serve more people. When I do, I use a 12 oz package of bacon and a 1 lb 14 oz bag of hash browns since that's what they usually come in anyways. Also, the easiest way to snip the chives is with kitchen scissors. So much faster than with a knife! 			<description>At the local Indian market, they have a small, vegetarian &amp;quot;cafeteria-style&amp;quot; lunch/dinner counter that we go to as often as we're able. One of my favorite dishes there is a yogurt curry with pakoras swimming in it.  Pakoras are a snack made with, in this case, veggies dredged in a chickpea (besan) flour batter and then deep fried. I've been on the hunt for a good kadhi pakora recipe and found this keeper.  Just don't use thick, Greek style yogurt like I did; you want more of a soupy consistency rather than what my photo shows.  You can vary the veggies you use here. 			<description>A tasty and different way to use some of the Sunday Roast leftovers on Monday! Although I have specified lamb in this recipe, beef would also work very well, it's just that I had roast lamb leftovers when I made these. These rissoles are lightly spiced and tangy - perfect for supper when served with salad, pickles, chutneys and maybe a naan bread or pitta bread to make a sandwich. They are easily made and can be prepared ahead of time and left in the fridge, as they hold their shape better when they have been chilled and are firm. These will also freeze very well; open freeze them before frying on a tray or plate until firm and then pack them into freezer bags or a plastic container.
