Plantain Soup

I love hispanic food and plantains are one of my favorite things to eat. Here is a unique soup for all you adventurous chefs:) Please do not let your plantains turn yellow-black because they will turn sweet. Must use green plantains. -- posted by Ang11002

Patacones (fried Plantain)

I learned how to make this from my Colombian mother-in-law. They are very simple to make, and taste great. They taste best when they are hot out of the skillet. We eat them a lot for breakfast, along with either fried eggs or scrambled eggs with tomatos and onion. They also make a great side dish. -- posted by SlipC

Yet another traditional Colombian dish that I learned to make from my mother-in-law. To eat, put a little bit of the picante on each bite. It's one of my favorite meals.**Just a note, until the elves edit this for me, it should be 1/2 lb hamburger meat, not 1 lb.
Don Emilio's Salsa - Muy Bien!

People used to travel miles and miles just to get salsa and chips to go from Don Emilio's Restaurant in Larchmont, NY. No matter how hard anyone tried, there was no getting the recipe. Then one day at a party in work, a Columbian girl brought in salsa that her husband had made...and it was identical to Don Emilio's. Aaaahhhhh....amazing salsa whenever you want it. And you'll want it often. And you thought chocolate was addictive????
Colombian Frijoles

Every Sunday, my Colombian friends get together and have a big cook-out for lunch, and they share in fellowship. I like observing the merriment. They make group cooking a lot of fun. Today, they made a kidney bean stew which tastes absolutely wonderful. I think the flavour was in the lard. This is one of those dishes that tastes better if kept for the next day. -- posted by rainna

They are very addictive, and believe me when I say that you can't just eat one. I actually had about 7 while I was at her house, and my stomach was just about ready to explode by the time I left.
Electric Chimichurri Sauce

Inspired by a sauce recipe taken from Cuisine at Home Magazine, this robust and pungent chimichurri is great with anything cooked on the grill. The electric green color radiates and is an appropriate foreshadowing of the flavors packed into this tangy, flavorful sauce. Use as a marinade, baste, or sauce on the side. -- posted by jpknight22

Colombian Tamales

This is one of my husband's favorite "Comfort Foods" (he's Colombian). He even said I made it right the first time I tried! The process is relatively involved - overnight marinating is recommended and it steams for three hours. It is nothing like Mexican Tamales or "Hot Tamales". These are wrapped in banana leaves rather than corn husks, are much larger, and not as spicy hot. -- posted by Ice Cool Kitty

Colombian Style Empanada

My husband finally had a great idea for using leftover rotisserie chicken. I used the traditional seasonings with non-traditional methods, still great. These can be frozen before cooking since they are best served fresh. You need frozen empanada dough which is found with the Goya products (there are other brands) and is yellow in color. Or you can make your own using masa harina which would be more authentic. -- posted by Ice Cool Kitty

Easy Empanada Recipe

Cream Cake With Chocolate

A cake has the appearance of a tart, only that the dough is special. This dough usually contains a component for making light, such as yeast and beaten egg whites to peaks. These elements have the property to puff the dough to enter it tiny air bubbles that expand with heat. For this reason, if you’re going to make a cake, you should never fill the baking mold more than half.

Last week I was visiting a very good friend of mine gourmet restaurant and I had the opportunity to enjoy a wonderful chocolate dessert in its matchless feeling on the palate and its presentation.
Its base is the ganache, which is considered the essence of truffle. It is a French term, although its origin is discussed. It is believed that the ganache came about 1850, some say it comes from Switzerland and others who invented the pastry Siravdin in Paris.
Combinations that can give the ganache are endless, but here I present you the original recipe of the chocolate dessert that I could enjoy and now you. Although it is a gourmet recipe, their preparation is quite simple. As decoration, your imagination is the limit. -- posted by Victoria #2

This is a hot, spicy salsa typically served with empanadas and other foods as a condiment. It has more liquid than, say, a Mexican salsa. Prep time does not include 1 hour "marinating" time. -- posted by Ice Cool Kitty

Ajiaco Bogotano (Chicken and Potato Soup, Bogota Style)

Ajiaco is a typical dish in Colombia. It has a lot of potatoes since Bogota is in the mountains and potatoes are plentiful. This recipe calls for yucca which can be found in the produce section or frozen (Goya). If you cannot find it, just use Yukon gold potatoes, both will all but disintegrate and thicken the broth. Corn on the cob is cut into 1 inch rounds and thrown into the soup. They are easier to cut if you rotate the corn, eventually the cob will break. Once you remove the cover, you'll get a burst of sweet corn aroma. An avocado half is served either on the side, so you can take a spoonful of avocado and dip it in the soup. -- posted by Ice Cool Kitty
