French Chocolate Coffee Cake

Gluten-Free Pumpkin-Applesauce Bundt Cake

On my hunt to make a lower-fat moist gluten-free cake that cooked all the way through, I experimented with the base recipe for this "Recipe #47421" and converted it to my tastes. It was so moist and tasty that I had to post it! You can probably half it to make muffins, but I haven't officially tried that yet. You can add ginger and allspice to make it a spice cake too. Definitely serve to gluten-eaters guilt free; it's delicious!
PS. for my rice flour mix I use "Recipe #214986" -- posted by allergygrl

Strawberry Almond Coffee Cake

A modified version of a coffee cake recipe I found in a TOH booklet. This uses fresh strawberries. I've never tried it with frozen strawberries so if you are using those I can't tell you how it will turn out. I love the addition of the cinnamon almond mixture to the flavors. The strawberry flavor is very subtle so please do not expect an overpowering flavor of strawberry. To glaze or not to glaze....that is your option LOL. When company is coming I glaze but for family I leave out those calories. -- posted by HokiesLady

Luscious Rhubarb Sponge Dessert

I am always on the lookout for Rhubarb recipes as it's plentiful in my garden. So one day, upon waiting in the doctor's office, I stumbled upon this one in a magazine.
Easy Chocolate Chip Coffee Cake

I found this recipe in a magazine (Southern Living I think), and I've been making it ever since. My friends always request this cake and the recipe, and my Grandmother takes it to all kinds of church functions. It's quick to put together, but no one will ever know how easy it really is. And I make it with fat free sour cream, skim milk, and egg substitute when the girls come over so we aren't guilty afterwards. Doesn't change the taste at all.
Hope you enjoy! -- posted by CharlieGal

This is the BEST coffee cake ever. It has been around as long as I can remember. My Mom says back in 1966, my father used to go have coffee with his boss in a little coffee shop that served a coffee cake much like this one - he wanted her to figure out how to make it and this is what she came up with. Christmas is not christmas without it. My daughter makes it and takes it camping, it has gone fishing, we give it as gifts ... its just a family favorite. Its moist and easy to make. -- posted by Pvt Amys Mom

Best & Easiest Banana Bread

This is an incredibly moist and simple to make banana bread that takes literally five minutes to throw together. And it's low fat! This recipe is pretty much foolproof so feel free to play around and improvise. If you really want to reduce the fat you can substitute applesauce for the butter. I adapted this recipe from one printed in "Cookie Magazine" (March 2006). The original recipe is called "Aunt Holly's Banana Bread".
Delicious Nutritious Banana Bread

This is a healthier version of our favorite banana bread recipe. It has very little fat yet still moist and light. The maple syrup also adds a nice depth of flavor. I use white whole wheat which is lighter, milder and less dense than regular whole wheat and would recommend it for this recipe.
Fabulous Sticky Buns

In my small bakery I've searched high and low for a sticky bun recipe that is made from scratch since I don't use pre-mixed ingredients. THIS, I tell you, is the absolute best. I retrieved it from Cook's Entertaining magazine (Cook's Illustrated). Use a food processor fitted with the dough blade if you have one readily available. I deviated a little by not doing the Pecan Topping. Just feel there's enough glaze. Putting the recipe in just in case you'd want to use it. Instead of the stand mixer I opted for the food processor. -- posted by SarikaKisSzentem

This is a recipe I modified from Martha Stewart's website. It's very tasty. Can be made in a round cake or 9x9" brownie pan or I use a 9 serving mini loaf pan to make little individual cakes.

On the sugar, make sure what you use is vegan. I use organic evaporated cane juice sugar. Regular sugar is often processed with animal derivatives. -- posted by CookiesCupcakes

A delicious not-too-sweet cake. Perfect for afternoon tea, or breakfast, or a summer dessert with cream or vanilla ice cream. It is loaded with fresh fruit! The amount of time it will take to cook depends on the juiciness of the fruit...from 50 to 70 minutes. It is done when the top is firm and golden brown.

Cinnamon Streusel Coffee Cake

Williams-Sonoma Essentials of Baking book recipe. This cake came out very delicious and taste great with a cup of coffee. Just a couple of words of wisdom to newbie bakers: Always sift your dry ingredients (this helps make your cake lighter instead of denser). Make sure your eggs and butter are at room temp (otherwise your cake would not be as smooth). Follow instructions/measurements PRECISELY! Grease and flour your pan very well (this will help very much when it comes time to removing the cake from the pan). Have all your ingredients on hand and read the recipe before beginning (take it from me, you don't want to end up skipping a step or missing an ingredient because you rushed thru it). Do not open the oven while it is baking. Invest in buying a pastry blender. Always let the cake cool in the pan the indicated time or your cake will fall apart to pieces if you remove it to soon from the pan. This recipe requires atleast 3 medium-large mixing bowls. The following ingredients include one recipe for streusel and one recipe for the cake batter. -- posted by Chef Sarita in Austin Texas

Cranberry Cake

Clients of the company I work for give us fresh cranberries every year at Thanksgiving. this year, I decided to actually DO something with them.

I made this cranberry cake several times in one week because we just can't get enough of it. It's sweet with a golden crumb, soft and moist, and dense without being heavy, with juicy explosions of tart cranberries.

This is also really easy; it comes together in about 10 minutes. Sometimes, I will cover it in whipped cream, but lately I have been baking it instead with a topping of pecans caramelized in butter and brown sugar.

Better Banana Walnut Bread

I love banana bread! Unfortunately, it is always loaded in fat when you buy it or follow traditional recipes. There are tons of low fat recipe options out there but the always take out the walnut. Removing them will take away from those "scary numbers" we all watch; however, walnuts are such a rich source of nutrition that they are worth keeping.
Side Note: Many people use "Splenda" as a sugar substitute, if you get an icky aftertaste try Stevia, like "Truvia". I personally prefer "Sun Crystal", a mix of natural sugar cane and stevia. Ultimately, it's your choice. -- posted by Southern Kitchen Gardener
