Amazingly Easy Microwave Breakfast Ring!

I got this super-easy, cheap sweetroll recipe from a church cookbook over 20 years ago, and I've been making them, ever since. The original recipe calls for baking them in a round dish with a glass in the middle, but they're even easier, if you can locate a small, microwave Bundt pan at a thrift store, like I did. I vary the recipe by adding different types of nuts, and adding an extract, as well. These do not come out doughy, as you might think, but perfect! -- posted by Belinda in Austin, TX

I never seem to have butter softened to the right temperature when I want to make coffee cake, so I finally asked my mom for her recipe, and it doesn't require any softened butter, just oil, so it is a breeze to make.
Mimi's Cafe Carrot Raisin Bread - Copycat Recipe

It's dark, moist and delicious. And it comes in a bread basket to your table at this French themed west coast casual restaurant. Now the tastiest carrot bread ever can be yours to create at home with a couple of grated carrots, molasses, raisins and chopped walnuts. You'll be baking this one in the oven for at least an hour. That should be enough time to warm up the house and send amazing smells wafting through every room. Line the carpet with newspaper to catch the family drool. -- posted by Chemaine

Cinnamon Apple Flip

Totally versatile! I've made it with blueberries, apples, orange zest, plain. It's just good stuff. Normally I halve it and make it in a nine-inch cake pan. I actually found the recipe in an ancient southern cookbook called "Charleston Receipts" while I was down in SC. The only real change I make is to sub yogurt for milk as I find it gives it a moister, more coffeecake-like consistency. -- posted by SJay93

Fresh Peach Melba Coffee Cake (Buckle)

This recipe came out in this month's Family Circle. I just made it, and I thought it was delicious. I used fresh peaches, and everyone thought it was very tasty. I don't know if I would call it a coffee cake or a cobbler. We ate it similar to a cake for dessert (in slices). According to Family Circle, "this fruit-filled dessert buckles as it bakes, hence the name". I used black raspberry preserves. I also used a bit more than the recipe called for- but this is just a personal preference. It was easier to just use the rest of an already opened jar. I ended up covering the edges with foil about 3/4 the way though its baking time because they browned a bit faster than the middle (like a pie). It thought it was almost better the second day when the cake had soaked up more of the fruit. It is SO GOOD! Try it!! -- posted by History Teacher

Strawberry Almond Coffee Cake

A modified version of a coffee cake recipe I found in a TOH booklet. This uses fresh strawberries. I've never tried it with frozen strawberries so if you are using those I can't tell you how it will turn out. I love the addition of the cinnamon almond mixture to the flavors. The strawberry flavor is very subtle so please do not expect an overpowering flavor of strawberry. To glaze or not to glaze....that is your option LOL. When company is coming I glaze but for family I leave out those calories. -- posted by HokiesLady

Delicious Nutritious Banana Bread

This is a healthier version of our favorite banana bread recipe. It has very little fat yet still moist and light. The maple syrup also adds a nice depth of flavor. I use white whole wheat which is lighter, milder and less dense than regular whole wheat and would recommend it for this recipe. King Arthur Flour carries it. -- posted by Leah's Kitchen

Fabulous Sticky Buns

In my small bakery I've searched high and low for a sticky bun recipe that is made from scratch since I don't use pre-mixed ingredients. THIS, I tell you, is the absolute best. I retrieved it from Cook's Entertaining magazine (Cook's Illustrated). Use a food processor fitted with the dough blade if you have one readily available. I deviated a little by not doing the Pecan Topping. Just feel there's enough glaze. Putting the recipe in just in case you'd want to use it. Instead of the stand mixer I opted for the food processor. -- posted by SarikaKisSzentem

Cinnamon Streusel Coffee Cake

Williams-Sonoma Essentials of Baking book recipe. This cake came out very delicious and taste great with a cup of coffee. Just a couple of words of wisdom to newbie bakers: Always sift your dry ingredients (this helps make your cake lighter instead of denser). Make sure your eggs and butter are at room temp (otherwise your cake would not be as smooth). Follow instructions/measurements PRECISELY! Grease and flour your pan very well (this will help very much when it comes time to removing the cake from the pan). Have all your ingredients on hand and read the recipe before beginning (take it from me, you don't want to end up skipping a step or missing an ingredient because you rushed thru it). Do not open the oven while it is baking. Invest in buying a pastry blender. Always let the cake cool in the pan the indicated time or your cake will fall apart to pieces if you remove it to soon from the pan. This recipe requires atleast 3 medium-large mixing bowls. The following ingredients include one recipe for streusel and one recipe for the cake batter. -- posted by Chef Sarita in Austin Texas

Better Banana Walnut Bread

I love banana bread! Unfortunately, it is always loaded in fat when you buy it or follow traditional recipes. There are tons of low fat recipe options out there but the always take out the walnut. Removing them will take away from those "scary numbers" we all watch; however, walnuts are such a rich source of nutrition that they are worth keeping.
Side Note: Many people use "Splenda" as a sugar substitute, if you get an icky aftertaste try Stevia, like "Truvia". I personally prefer "Sun Crystal", a mix of natural sugar cane and stevia. Ultimately, it's your choice. -- posted by Southern Kitchen Gardener
