Four Seasons Crab Cakes

Cook them up in batches and keep them warm in a 200 degree oven on an ovenproof platter filled with Rock Salt and heated beforehand. The best thing about that is that you can bake it as directed in the recipe and then take it to the table and the crabcakes will stay hot because the rock salt holds heat very well. To save money halve this recipe and or use claw crabmeat. -- posted by Steve_G

Cod Roasted with Fresh Herbs

Cod is one of my favorite fish, and we get such wonderful, fresh and inexpensive cod here in Rhode Island.
Brandade de Morue

This is basically a puree or spread made of poached salt cod. Having said it that simply, let me just say that this is one of my most favourite dishes - the ingredients combine to create flavour-perfection. The salt cod has to be soaked for atleast 24 hours with many changes of water. -- posted by evelyn/athens

Boston Baked Scrod

I don't like fish very much. That is why it is so surprising that I adore real Boston Baked Scrod. Now I do not mean a rubbery piece of fish topped by a pile of soggy bread crumbs on top - yuck! I mean a flaky, tender piece of white fish with a buttery & lemony garlic sauce topped with seasoned bread crumbs. This is what seafood should be, not that stinky stuff you have to hold your nose to eat!

Did you know that scrod is really young cod fish? Some restaurants call the "catch of the day", whatever fish it may be, scrod so you never know what you are eating. The guy at my seafood market laughs when folks ask for a "scrod" filet. Credit to: American Classics by Editors of Cook's Illustrated Magazine. This looks like the scrod I enjoyed in Boston many years ago and is on my menu to try on New Year's Day.

12/30/2006 - Couldn't wait and made this tonight. It was wonderful. I suggested to my hubby before he sat down that he might want to warm up the leftover ribs since I was *sure* he wouldn't like it. I said I would suffer and eat all the fish so that it wouldn't go to waste. But he wasn't fooled for a second - shucks! ;) -- posted by Kat's Mom

Caribbean Salt Cod Fritters

Salt cod fritters are found throughout the Caribbean, with each island having its own variation. This recipe is the Jamaican version called Stamp & Go. Be sure to use the best quality salt cod you can buy and, if possible, the kind that is already skinned and boned...the boning process is extremely tedious. Prep time does not include soaking time.
Simple Baked Cod (Or Haddock)

Just as it says....simple. Cod or haddock or just about any white fish can be used. The number of servings will depend on the size of the serving pieces and how hungry you are! -- posted by CulinaryQueen

Microwave Torsk With Lemon Butter

My Scandinavian mother always referred to cod fish as torsk and my brother and I loved it when she made her baked torsk. I like this recipe because it's easy and I can make it in the summertime without having to turn on the oven. Serve with clarified butter for dipping if you're a real butter junkie. -- posted by Lisa1

How to Prepare Salt Cod

Salt cod is used in many cultures, including Portuguese, Spanish, Scandinavian, and native American Alaskan. It’s actually quite easy to prepare, but its unfamiliarity to many people keeps them from using it. Hopefully this recipe, more of a method, actually, will help! :) It is taken adapted from the collective cookbook “Cooking Alaskan,” and the “Marine Fish Cookbook.” Prep time includes maximum soaking time. -- posted by Julesong

Simplest Steamed Fish

This really IS simple. You'll need a steamer for this dish. I don't have a steamer so I used a large roasting pan and I keep on hand 4 cans that have the top AND bottoms removed from them. A good size can would be about the size of the smaller tuna cans, or cat food cans. The ones I use happen to come from La Preferida green chili cans. Whatever can you use, just make sure all are the same size (so your platter doesn't tilt) and that they're the type that you can remove the bottom lid as well as the top (some cans have molded bottoms and can't be removed). Also, the cans can't be too tall or the lid of your roasting pan might touch your food.
I use a shallow casserole dish to hold the fish. -- posted by Hey Jude

Bacalao

This dish is rich and not salty at all. Bacalao is delicious when made into fritters, coated with bread crumbs and deep-fried, or served stuffed into a roasted sweet pepper. Angela Tamura, ZuZu’s chef, prepares it more simply, accompanying it with a crispy garlic crostini. Bacalao is served at ZuZu for $8.00. This recipe is meant to serve two as an appetizer, I think it would be great with soup and a salad! The cod has to be soaked overnight and the water must be changed an average of two times. It is served with garlic-rubbed, toasted olive "oiled" crostini! (I am sure you at least got my drift!) -- posted by Manami
