Cooking Light's Easy & Crispy Baked Fish Fillets

From Cooking Light Magazine. This is a healthy and delicoius recipe that bakes a moist and tenderv fish with a crispy outside. You won't even miss the fat!
Haddock, cod, or tilapia would make good substitutes for the grouper but you can try it with any fish you like or have on hand. Adjust the baking time depending on the thickness of the fish. -- posted by blucoat

These can be served as an entree or a main course and also make for a lovely light lunch. They are great as a one of the dishes you prepare when doing a BBQ, they cook well on an oiled BBQ plate. I have listed two different dipping sauce below you can make both or try the one that you think you will like best or even make your own. I have listed serving size as 4-6 depending on whether you are making this as a main course or a starter or for lunch -- posted by The Flying Chef

Cod Patties With Two Dipping Sauces

I made these as I had some sweet potato to use up and some left over prawns that I needed to use in something, they turned out very good for so few ingredients. The sauces were both good we prefered the pickle relish sauce but the creamy boursin sauce was lovely too, I think that it was just becuase of the tang of the other one, that paired it that bit better with the cod patties. Anyway considering both were experimental I was pleased with both. I served this for 3 as I knew my men would eat 3 patties each and I only two and accompanied it with a green salad. I think this would easily serve 4, 2 patties perperson with a nice salad and some crusty bread perfect. If you want to make these for a BBQ I would make the patties much smaller to yield more, as if having accompanied with other meats you don't want them as main meal size portrions, I think you would probaly get 15-20 patties then. -- posted by The Flying Chef

Gloucester Codfish Balls

Dried salt codfish is a traditional ingredient not only in Northern European cuisine, but also in Mediterranean, West African, Caribbean, and Brazilian cuisines. The ingredient and the dishes made from it are known by many names, for example baccalà, bacalhau, bacalao, bacallà, morue, klippfisk/clipfish, and saltfiskur. Serve these tasty morsels with tomato sauce. Small balls make a very nice appetizer, too. From the New England chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.
Pesto Fish Kebabas

I made these as part of a seafood platter I did, I will be listing some of the other recipes I served with these over the next few days. I am going to have to guess on the amounts, as I only made 2 skewers to go with our other dishes. I think the amount listed should be about right for 4 people you can adjust pesto for your personal taste, we love pesto and I probably used a tablespoon per skewer that I made. Serve these with your favourite vegetable or a nice green salad. I have included a photo of our platter tray, I had to serve these on a separate plate as they just would not fit. -- posted by The Flying Chef

As I said in previous posts because I was making this as part of a large platter I cut back on everything because of all the dishes I made. I am also listing 2 of the sauces I made below; The lemon mayonnaise I served with the fish and the twist on the more traditional cocktail sauce I served with the prawns and crab meat. The lobster tails I made from French Tarts Recipe#288456 I wanted a quick easy recipe that would taste great and not take too long as I was going to be busy preparing other dishes this was perfect. -- posted by The Flying Chef

Seafood and Spinach Mornay

This is a wonderful seafood dish, I guess you could call it a casserole recipe. It tastes wonderful and everyone I have made this for just loves it . It is not the quickest recipe I have posted lately as it has a few different stages and then the final oven cooking time, but it is by no means time intensive and the end result is yummo. I used prawns, white fish fillets and scallops but I am sure you could play around with the ingredients on this one. I mixed up the prawns in that I used some salad prawns and some medium sized prawns, this was just to save a little on cost, instead of buying all medium (more expensive), so feel free to do what you want. -- posted by The Flying Chef

Fish N Chips

This is an alteration to Alton Brown's Chips N Fish recipe. I think the addition of the whole wheat flour adds a lot of extra flavor . I know that Alton Brown insists that a cast iron dutch oven is the best way to go for deep frying. But in my opinion, get an electric deep fryer with a basket and a digital temperature control. Watch the Good Eats "Man Food" episode for tips on selecting a good deep fryer. I posted the cooking time as 1 hour, because if you are using the dutch oven set up on an electric stove top, it takes awhile to heat up that much oil and for the heat to rebound between batches. Try this with Recipe #331490 -- posted by ROV Chef

Fried Cod With Green Peppers

Translated from Karlos Arguiñano's "Atrévete a cocinar". I've never found green peppers like the fine ones in Spain. They look much like poblanos but they're not spicy in the least, and they don't taste as strong. Red bell peppers might make a good substitute. Spring onions in Spain are about the size of a small regular onion in the US. I would use maybe 4-6 green onions if I'm in the US. The author doesn't recommend measuring equipment, so a tbsp means a soup-spoonful. -- posted by Valeria

My wife and girls like it a little dryer than I so you'll have to adjust the time to your liking. The 15 to 20 minutes will be a little moist. -- posted by Chumleyathome

Posting for the ZWT 5
Times are approximate
For the Spanish area.

Catalan cooks from the rugged seacoast areas near Barcelona, Spain make this very soupy fish-and-potato stew with the catch of the day, usually some kind of white fish. Roughly translated, suquet means "juice" or "juicy."

I'm posting this recipe for ZWT5. it comes from a lovely cookbook "Dine Around The World", a gift from a friend many years ago.
From the book :" One hundred years ago, a Hungarian lady brought recipes to Sydney, but nobody could understand their Hungarian names. So this roll was called Kangaroo Pie, because filling it reminded people of a kangaroo filling its pouch."
It doesn't specify the fish to use, but I would use hake, cod, tilapia, or similar. -- posted by Karen Elizabeth

I had a little salmon and cod to use up, not enough to make a meal out of either, so I came up with this recipe the other night, to use them both together. It certainly has all the right stuff. "This striking dish is perfect for summer entertaining, and half of the recipe can be made in advance. The rich fish broth is delicately flavored with leek and fennel, complemented with bright notes from lemon and Pernod, and rounded out with just a hint of chile and tomato for added depth. Serve each bowl with a generous helping of steamed and sautéed fish and shellfish, crostini and creamy anchovy aioli or rouille." Substitute any firm fleshed white ocean fish & vary the shellfish according to your locale & season. -- posted by Buster's friend

Black Cod Sake Kasu

Ray's Boathouse, Seattle, Washington. This exquisite sake kasu black cod is almost synonymous with Seattle's famed Ray's Boathouse. Sake kasu is a thick paste made from the lees, or leftovers, from the sake-fermenting process. It is available by the pound at Japanese specialty stores. This preparation requires 48 hours to achieve its characteristic complex flavor, so plan ahead. To match the flavors of this complex dish, serve an equally complex wine, such as Ponzi Vineyards' Reserve Oregon Pinot Noir.
