The chocolate variation has been the universal birthday 'cake' in my family for almost as long as I can remember.  I've adapted it to be more microwave friendly and even less time-consuming than the original. 			<description>I call this &amp;quot;impossible-style&amp;quot; because although it makes its own crust as it bakes as all the traditional &amp;quot;impossible&amp;quot; pies do, it does not use commercial biscuit baking mix.  Instead it uses fresh, scratch ingredients, and that, along with the fact that you are not adding all those chemicals the mixes contain,is what I think gives this pie such a good flavor.  It is one of my favorite desserts, and I always get really nice compliments every time I serve it.

This recipe fits perfectly into my 10-inch quiche pan, but I often halve the ingredients (except for the baking powder which I keep at 1/2 tsp.) and bake it in a 8 or 9 inch pie pan instead. 			<description>To DIE for! Now don't count your chickens before they are hatched. You may think, Buttermilk Pie? Trust me, it is AWESOME! The base recipe for this Buttermilk pie is from the Royers Cafe Cookbook. Their pies are now trademarked and they are NOT giving away any secrets that I am aware of! They now have another Buttermilk pie that has chocolate chips and pecans in it and has been known to send people over the edge! I am not sure how much they add to theirs BUT this is how much I have found works nicely. People come from all over just to visit this cafe and eat some pie. Royer's is a very well known little restaurant in Round Top which is just down the road from my hometown of Carmine. Both towns are VERY tiny towns that together MIGHT have a pop. of 200. If you are ever around this neck of the woods make sure you stop in and have some pie. Bud is almost always at the door ready to pick on you and make you feel right at home! Royers has even been seen on Food Network's, Road Tasted! Don't fret though, if you can't come to Texas, Texas can come to you! Royers ships their pies all over! Almond meal is finely ground. You can make your own by pulsing in a food processor but be careful not to make almond butter out of it, which can happen if it is processed for too long. Same with the coconut, although I buy mine ready made. Just make sure it is unsweetened coconut or the recipe will be off. Pulse it in the food processor until it is like tiny crumbs. For unsweetened coconut you can also try making that from a fresh coconut if you can't find unsweetened coconut at the market. 			<description>We're in love with Tom Douglas' Coconut Cream Pie from Dahlia Bakery here in Seattle, but at $35 a pie plus a $5 deposit for the plate--I knew I had to come up with my own.  I watched a demo of his on the local public television website, but still felt I needed to add my own touch.  I'm proud to say it's a winner!  Take that, Mr. Douglas. . . . 

One note:  I would highly recommend you follow the instructions for a great pie crust below, for optimal crispiness and flavor.  Otherwise, you can roll out a store-bought dough, and just before rolling it out, sprinkle the coconut on top and roll it in.  Will be more susceptible to burning, but should be okay if you watch it close.  I always make a big batch of my All Butter Pie Pastry, recipe #239831, and keep it in the freezer for easy prep. I serve it cold with thick yoghurt and passionfruit pulp, however others like it warm with ice-cream. It's totally up to you. If you like a very moist cake with a tang, then you'll love this - it's to die for!!
