			<description>Last year I had a request for coconut cake from a very special person for a very special birthday.  So, as I always do, I researched countless recipes, read reviews and piled up the cookbooks to come up with a special layer cake with a coconut-y cake, custard filling and, as requested, a non-cream cheese frosting.  Lucky for me the cake turned out great.  The cake itself was moist, but with a sturdy crumb.  The custard filling is creamy with just a hint of tang from the sour cream.  And, the 'cooked' vanilla butter cream is lovely without being sticky sweet or tasting like a stick of butter.

Key differences include a dark chocolate layer of coconut-flavored gelled-pudding (in addition to the regular white layer), and almond flavored whipped topping.  So easy to make and like the recipe says, BEST IF REFRIGERATED OVERNIGHT to let the layers set up and the flavors develop - in the words of Alton Brown:  &amp;quot;Your patience will be rewarded!&amp;quot;     (This pie also freezes well - I would say easily keeps for 6 months in the freezer. Also, the type of coconut used in this is entirely upto your preference.  I like to mix half sweetened and half unsweetened because I feel like using all unsweetened isn't sweet enough, and using all sweetened is way too sweet... 			<description>We're in love with Tom Douglas' Coconut Cream Pie from Dahlia Bakery here in Seattle, but at $35 a pie plus a $5 deposit for the plate--I knew I had to come up with my own.  I watched a demo of his on the local public television website, but still felt I needed to add my own touch.  I'm proud to say it's a winner!  Take that, Mr. Douglas. . . . 

One note:  I would highly recommend you follow the instructions for a great pie crust below, for optimal crispiness and flavor.  Otherwise, you can roll out a store-bought dough, and just before rolling it out, sprinkle the coconut on top and roll it in.  Will be more susceptible to burning, but should be okay if you watch it close.  I always make a big batch of my All Butter Pie Pastry, recipe #239831, and keep it in the freezer for easy prep. I serve it cold with thick yoghurt and passionfruit pulp, however others like it warm with ice-cream. It's totally up to you. If you like a very moist cake with a tang, then you'll love this - it's to die for!!

I suspect letting the mix sit for an hour would help if using 2 eggs. BTW - I recommend NEVER buying the Hiram Walker's Pumpkin Spice Brandy - undrinkable in anything but oddly enough worked well here. Go figure. I'm sure keeping 4 kids busy wasn't easy, and Mrs. Kern would make these no-bake treats for us.
