Coconut Birthday Cake

Last year I had a request for coconut cake from a very special person for a very special birthday. So, as I always do, I researched countless recipes, read reviews and piled up the cookbooks to come up with a special layer cake with a coconut-y cake, custard filling and, as requested, a non-cream cheese frosting. Lucky for me the cake turned out great. The cake itself was moist, but with a sturdy crumb. The custard filling is creamy with just a hint of tang from the sour cream. And, the 'cooked' vanilla butter cream is lovely without being sticky sweet or tasting like a stick of butter.
It's taken me eight months and another request from a very good friend for her birthday to write the recipe down, so here it is. I hope you try it and enjoy it as much as our family. -- posted by goaliechik

Cauliflower Salad

This recipe has been passed around most of my town; everyone who tries it LOVES it and asks for the recipe. If you don't have fresh lemons, only juice (eg in a bottle), you can leave the rind out. Delicious side dish to barbecued or grilled meat. Tastes even better the next day. Cook time is chill time. -- posted by westivan

Banana Colada (Non-Dairy Mocktail)

A luscious-looking drink for all you coconut lovers out there (like me!) who want something smooth and creamy, but don't want or can't have alcohol or dairy. I found this over at the World's Healthiest Foods site while browsing their recipe collection. This variation on the more traditional pina colada recipe is a good cure any tropical cravings you might have! You'll want to make sure to use ripe bananas for this recipe, as it will provide more flavor and sweetness that way. Also, make sure to use only enough liquid to keep the blender going. NOTE: Cook time is freezing time for the bananas. If you're like me and usually have leftover ripe bananas already in the freezer waiting to be used, this recipe is a snap to put together. -- posted by Lynne the Pirate Queen

Coconut-Ginger Pineapple Upside-Down Cake

From Cook's Illustrated, September 2004. A 9-inch cake pan with sides that are at least 2 inches high is recommended.
This is from a Cooking Light magazine (but don't let that dissuade you!). I was served this at a friend's house and thought surely it was chocolate! It tastes so decadent and rich, with a lovely caramelized coconut crunch on top. Easy to make and a big hit with company.
Carrot Spice Morning Glory Muffins

These are wonderfully satisfying breakfast muffins. They are moist, warmly spiced, and only just sweet enough. They are full of good nutrition too! For an extra health boost, you can add 1/4 cup of ground flax seeds; it doesn't affect the texture. They are great warm, and maybe even better after having cooled. This recipe is from Dorie Greenspan's fabulous cookbook, "Baking: From My Home to Yours".
Hawaiian Tea Bread

I love this bread. It's so moist and versatile. I make it for breakfast, brunch, tea parties, and even desert. I like to use a mini loaf pan and give the loaves as gifts in a gift basket along with other "Hawaiian" treats. I also use valtrompia bread tubes in different shapes and then slice. The slices look so pretty on a plate. If you use the bread tubes, be sure to fold wax paper to fit over both ends of the tubes before fitting the lids on. I learned this recipe when I used to be a consultant for Pampered Chef. -- posted by JeanieK

Okinawan Purple Sweet Potato Pie With Haupia Topping

The Okinawan sweet potato is a very special potato. It doesn't look like much from the outside (<a href="http://labofedibles.wordpress.com/2007/12/13/the-ugly-duckling-okinawan-purple-sweet-potato/">This site</a> calls it the ugly ducking of potatoes), but it is one beautiful and delicious spud!
<p>
This pie is a mixture of recipes from <a href="http://onokinegrindz.typepad.com/ono_kine_grindz/2004/10/okinawan_sweet_.html">Reid at Ono Kine Grindz </a> and my family's special shortbread recipe. <p>

I would not use any other potato for this recipe. It IS labor intensive, but the pay off is so worth it! This should be a smooth, rich, mouth-watering treat. People always ask me to make this for them.<p>

Mark's Coconut Crusted Chicken

From Mark's Daily Apple! You can use shrimp or fish too!

When I made this I found out that you don't want to try this was partially frozen chicken - your meat has to be completely thawed. Also the coconut cooks very fast so it helps if your meat is already cut up into bit sized pieces so the coconut doesn't burn while the chicken is still raw on the inside. -- posted by ThatSouthernBelle

Coconut Lime Smoothie

I was just wanting to try to make something new and this is what I threw together. You can't taste the spinach AT ALL. Tastes very limey - add coconut milk if you have it to balance it out if you want. -------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------What's great about this pairing is that the ascorbic acid, the vitamin C, in the limes helps the body absorb the iron found in the spinach. Without vitamin C mixed with the spinach, the human body only takes 20% of the available iron in the spinach! Drink up! -- posted by ThatSouthernBelle

I made this smoothie, trying to copy a store-bought kind and this is so much better! The fresh pineapple gives it such a light, fresh flavour- it's just not the same with canned pineapple.
If any of this smoothie makes it to the fridge, you may like to water it down with some pineapple juice as the coconut milk thickens as it cools. -- posted by Shuzbud

Kathi's Ode to Almond Joy Haupia Pie

I hope you enjoy my version of this traditional coconut milk-based Hawaiian dessert, which is often found at luaus and other local gatherings in Hawai'i. Key differences include a dark chocolate layer of coconut-flavored gelled-pudding (in addition to the regular white layer), and almond flavored whipped topping. So easy to make and like the recipe says, BEST IF REFRIGERATED OVERNIGHT to let the layers set up and the flavors develop - in the words of Alton Brown: "Your patience will be rewarded!" (This pie also freezes well - I would say easily keeps for 6 months in the freezer. If you want to make more than one at a time, use regular 8" instead of deep dish pie shells, and then split the coconut mixture and chocolate coconut mixture each into equal halves after step 12 & proceed w/the rest of the steps for each pie shell. You will then have one to share, and a spare!) -- posted by Kathi Ann

Egg-Free Triple Layer Coconut Cake

This is a cool, refreshing refrigerated layer cake with intense coconut flavor. Using coconut milk in the cake batter gives the cake a moist texture, makes up for the lack of eggs and gives the cake a light coconut flavor. I have had success with this egg replacer mixture in other baking recipes. It is the equivalent of using two large eggs. The icing is creamy and delicious with flakes of coconut throughout and sprinkled atop the iced cake. Please note that in order for the icing to adhere properly to the cake, the cake itself MUST be completely cooled. -- posted by MarthaStewartWanabe

Coconut Macaroons

So I found this recipe on allrecipes but I had to tweek it quite a bit to perfect them, so now its mine :)
and on a side note the yield is an approximation... some folks may have more and some less; and also the prep time doesn't include the 2 hour refridgeration.
Also, the type of coconut used in this is entirely upto your preference. I like to mix half sweetened and half unsweetened because I feel like using all unsweetened isn't sweet enough, and using all sweetened is way too sweet... So again, it's entirely upto you. -- posted by chocolatelover#1

Carrot and Beet Salad With Coconut Lime Dressing

Fast, perfectly refreshing & vivid magenta (unless using golden beets). An awesome salad that is the perfect introduction to those not acquainted with the glories of raw beets. This recipe is from the New Orleans Vegetarian Society - published in The Times-Picayune. Oh & did I mention the dressing becomes magenta? BTW - this salad is really, really good for you - reduce the dressing if the calories from the coconut milk worry you - save half for the next salad.

Tropical 7 Layer Twist Bars

*After making 7 Layer Bars for a bake sale at work, I started thinking about how well white chocolate chips and macadamia nuts go together. Then I thought, "Hey!!! What would happen if I threw them together with some pineapple and coconut?", and this is what I came up with ... A refreshing tropical twist on an old favorite.
Depending on how big you cut your pieces, you can get about 12 to 16 bars.
I also plan on making these in a mini muffin pan, to get some little "tropical tarts" -- posted by "Ratalouille"

Shrimp Bites Wrapped in Greens

Isabel Cruz's Spicy "Shoestring" Party Menu for a Sultry Late-Summer Night - CBS Morning Show, 09/01/2007. The San Diego-based chef likes to marry the tastes of Latin American cooking she grew up with to the Pacific Rim tastes she's come to know as a Californian. But most of all, Cruz likes to keep her cooking clean, fresh, flavorful and healthy - she likes to go for flavors that pop and offer contrast to one another. She has 5 restaurants on the West Coast, from Portland, Ore. down to San Diego, Ca:). She has also published a cookbook "Isabel's Cantina."Growing-up, Isabel's friends were Puerto Rican, Cuban, Peruvian, and she also spent time with her Asian friends learning Japanese, Chinese and Korean cuisine. Thus, was born her fusion of different flavors. "This is a Thai appetizer of shrimp wrapped with coconut, peanuts, and chiles in a leaf. She likes to use raw collard greens as wrappers for these spicy little snacks, which she drizzles with a little guava sauce to complete the hot-sweet Thai flavors while also bringing these bites further into the Latin realm. Prepare these ingredients in advance, and then assemble these at the last minute." She was given a $60 budget to create a dinner menu for 6 people - thus: Chef on a Shoesting. -- posted by Manami

Triple Threat Coconut Cream Pie

We're in love with Tom Douglas' Coconut Cream Pie from Dahlia Bakery here in Seattle, but at $35 a pie plus a $5 deposit for the plate--I knew I had to come up with my own. I watched a demo of his on the local public television website, but still felt I needed to add my own touch. I'm proud to say it's a winner! Take that, Mr. Douglas. . . .

One note: I would highly recommend you follow the instructions for a great pie crust below, for optimal crispiness and flavor. Otherwise, you can roll out a store-bought dough, and just before rolling it out, sprinkle the coconut on top and roll it in. Will be more susceptible to burning, but should be okay if you watch it close. I always make a big batch of my All Butter Pie Pastry, recipe #239831, and keep it in the freezer for easy prep. I've rolled the coconut into the prepared, thawed dough with no problem. -- posted by Battle in Seattle

This is a Lebanese recipe, but it's enjoyed through out the middle east.
Its a nice mix between a semolina pudding and a creamy topping. Most people top with nuts, but I like it better with toasted coconut.
Mani's Bakery's High Protein Muffin

This recipe comes from the LA Times Food section's SOS column posted in response to reader pleading. It is an adapted recipe from the bakery. You need jumbo muffin tins to get the 14 muffins from this - regular tins will yield more muffins & likely need a slightly shortened cooking time. Should be getting about 11 grams of protein & 9 grams of fiber with about 32 grams of fat - but a lot of that is coming from the seeds & canola oil. Just the thing for hiking, fishing or hunting - easy to eat & needs no fridge! -- posted by Buster's friend

Garth Brook's German Chocolate Cake With Coconut Frosting

Trisha Yearwood says every February, when it's Garth Brooks birthday, she makes this beautiful and delicious cake for him. She says last fall, Garth made a sad statement like only three more months until you make me that awesome German chocolate cake again! She made the cake the next day. She doubles the frosting recipe to frost the entire cake, because Garth likes extra frosting, but one recipe will frost the tops of the layers and do the trick just fine- unless you are Garth! If you have some frosting left over, it's good spread on graham cracker or on brownies. Okay, it's also good right off the spoon! Enjoy! -- posted by Sharon123

Coconut-Orange Thumb Print Cookies

Adding this to my holiday cookie trays. Adapted from a recipe in The Seattle Times provided by Lynne Rossetto Kasper. Something wonderful about orange at Christmas. Coconut is always so festive too. The article noted this dough really benefits from resting overnight in the refrigerator so start the day before. Over working this dough seems to make tough cookies - think I'll be using cake flour. Prep time does not include overnight dough chilling. -- posted by Buster's friend

The cookies are popular all over the world, but particularly through Spain and South and Central America.

These are great, really simple, really easy and of course, really tasty! The taste of the pure partly toasted coconut comes through really well and I always make a double batch. WARNING: If you don't like coconut, make something else! -- posted by robd16
