This is a very special after-dinner drink, spectacular for entertaining. Can be prepared at the table with lots of fanfare to impress the guests. There are special brulot bowls made to prepare this drink, but a round, chafing dish works well. 			<description>Pisco is a clear brandy that is popular in both Peru and Chile. The white muscat grapes, from which pisco is distilled, were first grown in Peru by the Spaniards in the 16th century (at that time Peru &amp;amp; Chile were both part of Spains American empire.) When they became independent countries, both claimed the liquor as their own. Therefore the national drink of both Peru and Chile, is the rich Pisco Sour. However there is a difference in sweetness and the citrus used between the two countries piscos. I have posted both recipes so be sure to try the Recipe #243479 as well. Making it a comforting excellent aperitif.  Served chilled from the freezer in a frosted liqueur glass. Keep refrigerated with in 1 month of freezer 6 months.

			<description>These were without doubt the most popular drink that we served in the restaurant I ran in Cyprus! They are known as the National Drink of Cyprus, and are delicious as well as being very refreshing. We used to make these with the local Cypriot brandy, which is not as strong as normal French brandy or cognac and has a delectable caramel taste to it. We also used the local angostura bitters, known as &amp;quot;Cock Drops&amp;quot;, which as you can imagine, brought raised eyebrows and howls of laughter from overseas guests and tourists! A little history behind the cocktail: The Cypriot Brandy Sour style was developed following the introduction of the first blended brandy made on Cyprus, by the Haggipavlu family, in the early 1930s. The cocktail was developed at the Forest Park Hotel, in the hill-resort of Pl&amp;aacute;tres in the beautiful Troodos Mountain range, for the young King Farouk of Egypt, who often stayed at the hotel during his frequent visits to the island. The Brandy Sour was introduced as an alcoholic substitute for iced tea, as a way of disguising the Muslim monarch's preference for Western-style cocktails. The drink subsequently spread to other bars and hotels in the fasionable Platres area, before making its way to the coastal resorts of Limassol, Paphos and Kyrenia, and the capital Nicosia. With increasing numbers of tourists visiting the island in the last thirty years, and the large garrison of British servicemen stationed on the island, the Cypriot Brandy Sour is now known around the world. Licor 43 has gained increasing popularity within the last years and is more and more often used as an ingredient for a cocktail named &amp;quot;Caipirinha 43&amp;quot;, in where it replaces the commonly used cachaca. Although the liquor is popular and available all over the globe, it is only recently that this liqueur is finding itself in regular liquor stores in the USA. Previously it was found in specialty shops and liquor stores of notable size.&amp;lt;br&amp;gt;

The history of this fine liqueur supposedly dates back to the ninth century B.C.E when Phoenician traders found Carthage. The culture that emerged soon found themselves noted for their libations. The Carthaginians were repeatedly invaded and overrun throughout history, but managed to hold onto the recipes of their liqueurs. One of these ancient recipes survived and ingratiated itself into the Spanish culture and was even present on the trans-Atlantic voyages of Columbus. The recipe contained forty three different citrus fruits, aromatic plants and other ingredients. 			<description>Traditionally served in the hot summer months, this also makes an excellent sipper during the cooler months of fall and winter when you may want to reminisce with a taste of summer. This is so easy to make--just make sure to plan ahead because it does take some time. It also makes a fantastic hostess gift or stocking stuffer. If you can find Meyer lemons, use them in this recipe; they add a wonderfully fruity flavor and aroma to the finished drink. If they are not available, standard-issue lemons from the grocery will work out just fine. Make sure your lemons are washed well to remove any stamping or wax; and when removing the zest, long strips work out best and are easiest to strain out of the finished product.
EXTRA: To get the most out of your lemons, juice them after removing the zest. Strain out the seeds, freeze the juice in ice cube trays and then transfer to a freezer bag. They will keep for several months and each cube will yield about a tablespoon of juice whenever you need it.

I used a tall 'pepsi' glass per person but you could easily split into two smaller glasses.
