Something Special Fruit Cobbler

A simple fruit cobbler that features the best of organic peaches, cherries, and blackberries with a little something special. Almond extract in the cobbler crust is (er, was) my secret ingredient. Recipe calls for frozen peaches and blackberries but you can use fresh if you like. The frozen fruit usually has better texture though in the end. I kind of made this up when I had a ton of cherries, baking mix, and a potluck all at the same time. -- posted by taradelyce85

Berry Cobbler

Basic cobbler with some healthy alternatives! Very moist and tastes great! Try any berries and or flavored yogurt! One can use all-purpose flour instead of adding the whole wheat flour. Some suggest to serve it with vanilla ice cream. -- posted by Michigan-fan

Peach Pineapple Cobbler

This is a quick, easy dessert that is great any time of year. It's even better when served with vanilla ice cream! I keep the ingredients on hand in case I need to make something at the last minute.

Preparation note: You MUST use self-rising flour in this recipe! If you don't, the cobbler will not turn out right--trust me. -- posted by Mimiloves2cook

Apricot Snack Cake

Originally this cake had a layer of gooey apricots between the cake and crumbs but I wasn't paying attention one day and added them to the cake. My daughter decided she liked better with the apricots in the batter. I am partial to the gooey layer. Either way is good with some whipped cream or ice cream. It is also good made with blueberies, peaches, or a combo of fresh fruits in place of the apricots. -- posted by JPsBarbie

Rhubarb Crisp: a Celebration of Summer!

My rhubarb flourishes at the end of my clothesline, right next to a patch of hollyhocks that sway in the summer breezes. Right now there are some little birds (I can't make them out with my spotting scope) snatching up pine needles and flitting about busily. Anyway, this recipe comes from the June '09 issue of *Country Living*. I do live in the country, and have an abundance of rhubarb. It's easy to freeze the cut-up pieces, and if you toss the pieces with sugar (right in the zipper bag), you can pop it in the freezer and use them later. The extra sugar will be fine in the recipe! -- posted by Debber

The Original Bisquick® Strawberry Shortcakes

The original Old Fashioned Shortcake recipe appeared on the first Bisquick® box in 1931. It's said that an advertising slogan promised – “Here’s the Kind of Strawberry Shortcake Your Husband Will Rave About.” Shortcakes are the sweet cousin of the dinner bisquit, and these easy-to-prepare treats have stood the test of time in my family. It started with my mom who made her Bisquick® strawberry shortcakes with her garden grown strawberries and REAL homemade whipping cream. Some thirty years later my sistes and I are still baking up these sweet treats. -- posted by Feast Your Eyes!

Caramel Apple Pudding

I made this the other night for a pot luck dinner and it went down well. Personally I found it a bit too sweet so you may want to reduce the sugar in the pudding batter (but I don't really have a sweet tooth). This also works well for a crowd, you just need a very large baking dish.
Berry Cobbler Cakes

Is it a cobbler or a cupcake or a muffin? You decide! Use any fresh berry that you love. If anything sticks to the pan just scrap it off an put it back on the cobbler.
Delicious Peach Cobbler

Because I couldn't find a peach cobbler that excited us, I created this recipe . It's easy and oh...so good! It's a favorite with our family. If you like a burst of pleasant flavors, this is the recipe for you! I hope it becomes a favorite with yours too. If you don't have cardamon in your cupboard just use nutmeg or all spice. Note: Disregard the word "Celius" in step 5 of the directions. I wrote c. and that is what showed up. I couldn't edit it out. It is supposed to read cup. -- posted by Debaylady

Amazing Apple Cobbler

A friend of mine gave me this recipe several years ago after she brought this
wonderful dish for a potluck. When I made it at home, my mother was so
impressed, she called my aunt to tell her about the recipe. Well, we were surprised to learn that my aunt already had the
recipe and has used it for years- she got it off of a bag of Martha White flour!
The original recipe calls for 2 cups of sugar, but we like it best with 1 1/2
cups. This isn't as hard to make as it sounds....promise :-) -- posted by Jesse and Eliza's Mom

Holiday Apple Crisp

From the South Beach Diet "Daily Dish." Warm and fruity, this seemingly familiar apple crisp is spiked with sweet and tangy dried cherries. Fresh or dried, cherries contain impressive amounts of antioxidants, as well as soluble fiber and potassium. Ounce for ounce, dried cherries are higher in nutrients than their fresh counterparts, but they also have more calories. So it's best to enjoy them in moderation, as you will here. I don't use them at all. -- posted by WendyMaq

Oh-My-Goodness Blueberry Goodness!

I had some blueberries (which I don't really care for) starting to go mushy. Feeling guilty for not eating them (they're so healthy after all), I decided to try making some sort of cobbler-like thing with them. OH MY GOODNESS was it ever delicious! The ingredients might be a little odd, but I was working with what I had on hand :) -- posted by JeannaLW

Sweet N Tart Cherry Cobbler

this is a very easy/quick cobbler that can be used with many other fruits such as berries or peaches. I especailly love the mixture of the tart canned cherries with the frozen sweet back cherries. I use bisquick or jiffy prepared baking mix. the sweet crust is good by itself or with ice cream or whipped topping. -- posted by pondfrogs

Colorado Mel's Apple Cranberry Crisp

This recipe is delicious. Our family really enjoys tart fruit desserts, so the recipe below reflects that. If you prefer yours a bit sweeter then you should use a sweeter apple or add another half cup sugar to the fruit. One thing I love about this recipe is how versatile it is! I'll switch out what fruit I'm using just based on what I have on hand. Yummm! This is also a healthier "Crisp" recipe than the average. There is more fruit and less crisp... I enjoy the taste of the ratio as well as the lower fat content of the ratio. ;) Try it- I bet you'll enjoy it! -- posted by Colorado Mel

Sheila's Best Apple Crisp (No Oats)

This is the apple crisp from my childhood (there is no oatmeal in the topping). If I could only pick one dessert to make the rest of my life, this would probably be it. Mom always made this in her beautiful copper au gratin pan. I bought the same pan when I got married, just so I could make this dessert. Originally from the 1966 version of the "Woman's Day Encyclopedia of Cookery", Mom adapted it slightly over the years (with a little help from Cooks Illustrated I think). Cutting the apples into "cubes" (instead of slices) helps the apples keep the apples firm throughout. I have made this with pecans or walnuts. I have also made it without nuts. I like it best with pecans, but all versions are yummy!! I love it warm or cold. You can serve it with ice cream, but I usually only do that for dinner parties. -- posted by Mrs Goodall

Inside-Out Apple Crisp

This is based on a recipe for baked apples in Mark Bittman's cookbook (How to Cook Everything) but adapted to include something akin to the topping for an apple crisp. Because it's mostly apple and only a little bit of the "crisp" (which isn't really crisp, by the way), it's a a lower-calorie version that's easy to throw together for a satisfying dessert. -- posted by dirtgirl

Candied Cumquat Bread and Butter Pudding

This recipe is taken from "The Sydney Morning Herald" Oct 20 2009 but slightly modified. A twist on traditional bread and butter pudding.
You can make the cumquats ahead of time but store in fridge. Also by adding 1 cinnamon stick, 1 tsp of yellow mustard seeds and 3 cloves when cooking the cumquats you can then serve as a condiment to ham, cold meats or roast duck. -- posted by Coasty
