Chinese Twin Mushroom Soup

This recipe calls for dried black mushroom, but you can substitute another kind of mushroom. It also uses "button" mushrooms, or the white kind. In my area I can find an assortment of fresh and dried mushrooms in my produce section. Using two different kinds is appealing to the eye. -- posted by Ice Cool Kitty

Super Simple Chicken Soup for the Sickly

A low-effort way to make chicken soup for those times when you need it, but don't feel like putting in the effort. You can of course substitute the herbs for whatever you have lying around or like, but I like the lemongrass because it helps open up the sinuses. -- posted by Starrah

Asian Chicken and Snow Pea Noodle Bowl

A noodle bowl is basically a soup. This recipe can easily be changed to a beef noodle bowl, buy substituting beef for the chicken and beef broth for the chicken broth. The original recipe calls for tofu, but I don't eat this. Hard-headed, I guess. If you want it vegetarian use the tofu and vegetable broth. Additional bouillon powder can be added if you like the broth more flavorful. -- posted by Ice Cool Kitty

Bahamian Boiled Fish

Boiled make it sound awful (& is really a misnomer as the fish is simmered gently until just done) but it is unbelievably delicious & soul satisfying. Located in the Miami Herald who adapted it from Culinaria The Caribbean by Rosemary Parkinson, (Konemann, 1999).
The Miami herald article said: "Bahamian people know there is nothing like a good fish broth or soup to give you strength for the day ahead. Any white fish can be used but grouper is preferred (see source). Serve with grits and cornbread." If you can locate fish peppers to use in this dish, they are wonderful. -- posted by Buster's friend

Mexican Chili Soup

This soup is so quick to whip up. It's very light, I often make it when the kids have ballgames and we have to rush. It is also a favorite when one of us is under the weather.
Sweet and Sour Cabbage Soup With Raisins

This soup is simple and cheap to make, and a favorite comfort food in my family. My mother got the recipe from a former employer and friend, and passed it along to me. It is not a highly flavored soup, so feel free to add extra seasoning if you are eating it as a main dish. The cracked black pepper and fresh lemon juice are important to the flavor of the dish. I usually add extra raisins because I like them so well. -- posted by galponetta

Easy Crock Pot Ham & Lima Bean Soup

Growing up, I loved my mom's ham and lima bean soup. It's just good old comfort food for me. I've never made mom's recipe but was meaning to ask for it after one day picking up a couple cans of lima beans for no reason. It'd been months since buying them and I purchased a new bowl that I wanted to use for soup photos so I scrounged around in the pantry and fridge. This was the result. It's a light soup, not heavy with tomatoes or cream, which was perfect for a family of 4 all feeling under the weather. My family really enjoyed it. I hope you do too! -- posted by **Tinkerbell**

Welcome Spring! With Some Chicken Soup from the Farm!

The coming of Spring is a pleasurable thing to behold. The clouds have parted, the wind has warmed up, and there are robins on the farm. We have a a special contest here on Longmeadow Farm. Whoever sees the first robin of the year, and tells any of us on a Saturday Lunch gets a dollar bill. This special contest has been going on since I was knee-high-to-a-grass-hopper. Now I know you can't get rich off of a dollar, but you can however, at least share in the soup. To give the cold Winter months a bid-a-dew, we celebrate with the simple, but tasty chicken soup. I found this originally in "Vitality" magazine, a special insert that my Dad gets in the mail. I started using it, because it just was so darn simple and so darn tasty I think this should certainly celebrate the end of a long winter, and a "Hello!" to that nifty red-robin-redbreast. -- posted by Andi of Longmeadow Farm

Nickey's Chicken N Asparagus Soup

A very light, simple chicken soup. Time does not include time to bring stock to boil ... might add another 5 minutes?

Hehehe, I know I shouldn't write this here because you might not want to try it! Here's my friend's reaction even though I warned him that it was mildly flavored and easy on the stomach...and that he might want to add the very ingredients that he did!

"About the soup...hehehe...I boiled the chicken in water for the broth, then added the chicken stock, shredded chx and asparagus. Well, the flavor just wasn't there and so I added a little salt then shoyu...something is missing...Aha, a little bit of dashi, the one with no MSG. Suddenly it changed the whole flavor! Auwe! Jam-up! And SO I decided to add sesame oil. Now this soup has gone through a metamorphosis...I call this soup: Oriental flavored Chicken Asparagus Soup. Guess I'll be bringing the soup to work for lunch." -- posted by marisk

Smoked Ham Hock and Cabbage Soup

Got this recipe from an Amish neighbor years ago, but she doesn't remember where she got it. I have had this at the Hoss's steakhouse chain as an appetizer or with a big salad. This is more about the broth than the ham or cabbage. Be careful of the salt as some ham hocks can be very salty, but on the plus side they are available at any grocery store. -- posted by Chef #1149837

Here will be a lovely home for some big golden beefsteak & little yellow pear or cherry/currant tomatoes. Will play with this recipe using the green when ripe tomatoes as well.... & bigger shrimp - our local ones don't come that small (LOL). From Sunset who note - Brian Whitmer, chef at Moose's Restaurant in San Francisco, contributed this recipe. Garnish with yellow cherry tomatoes and sliced cucumbers, if desired.
Indian-Spiced Tomato Soup

Summer soups using garden bounty are just the best - especially when they are full of interesting flavors but not heavy with fats & starches that leave one feeling hot & heavy after consuming. This recipe strikes me as a delightful alternative to gazpacho & I plan to use robust & assertive DelMars & Chesapeakes & Old Brooks to make it. Zing, pop, wow - for a light but satisfying summer lunch or supper.
From Sunset magazine. Allow at least an hour (up to a day) for the soup to chill & the flavors to marry. -- posted by Buster's friend

Roasted Tomato Soup

Will be making this using the grill outside rather than heat up the house when I am awash in tomatoes. Will try both on the gas grill as well as the smoker (when cooking something else LOL). Found this in Sunset's recipe gallery. It is versatile - serve hot or cold - it is simple but I bet has wonderful flavor without being heavy (too miserably hot & humid here for rich food in the summer). Another alternative to our beloved gazpacho routine.
Will experiment with fresh marjoram, basils, mint, thyme & peppers in this mix as well. -- posted by Buster's friend

Vegetarian Cabbage Vegetable Soup

I've tried other cabbage soups out there, but they are so bland! This is how I combined a few recipes and adjusted to make it more pleasant. The vegetables can be varied easily, and sometimes I'll use some frozen mixtures instead of the fresh, and it comes out just as good. This recipe makes a big pot, and it freezes great, so don't be afraid to freeze in individual portions for a later meal.
Kenchin Style Vegetable Soup

This is from "The Enlightened Kitchen: Fresh Vegetable Dishes from the Temples of Japan" by Mari Fujii. It comes from Kenchoji Temple, the first Zen buddhist temple in Japan. It is a wonderful example of shojin ryori, or "temple cuisine". The ingredients suggest this is a winter soup, although for health and nutrition, this soup can certainly be served in any season.

The author suggests that instead of the soy sauce (or in place of part of it), you can substitute miso or sake without losing authenticity.

Although this looks like a lot of directions, it's actually a very simple preparation. If you can boil water, stir fry, and use a knife to slice vegetables, you have all the skills you need. Once you make this, you won't even need to look at the directions.

Note: prep time and cooking time does not include the 2 hr soaking of the konbu to make konbu stock, but does include all other cooking and soaking times. -- posted by Gandalf The White

Asian Vegetable Noodle Soup

This light, refreshing rice noodle soup is perfect for both Summer and Winter. If needed, dried herbs can be used in place of fresh ones. Add tofu, cooked chicken, seafood and mushrooms as desired. White cabbage can be added instead of bok choy and a small amount of leek or onion is also good. The soup will freeze well but noodles tend to go mushy when reheated. -- posted by the_allergic_chef

Fiery Tofu and Coconut Curry Soup

From Cooking Light, this soup is inspired by similar soups from Thailand and Malaysia and balances fiery flavor with sweet and sour back notes. The crisp-tender vegetables offer a pleasant texture contrast to the custardlike tofu. Serve with a side of rice noodles drizzled with dark sesame oil and a cooling mango salad. -- posted by Epi Curious

Soup

This is a basic recipe for a clear soup--can be made with what you have already and helps use up leftovers. Doesn't it bother you when you find recipes that require you to buy cumin nostrils or some other obscure ingredient? Not this recipe. Do whatever you want to do with the ingredients beyond the basic part of the recipe.

This helps make a weeknight supper by adding a good salad and bread or a sandwich. If I add a lot optional ingredients it can make a meal on its own.

I like to make a large batch and freeze it in 2 serving batches. Remember that some veggies and dairy don't freeze well. -- posted by krolek

Chicken Broth Soup, Mushrooms With Wild Rice Dumplings

This is a great light broth soup with cremini mushrooms, scallions, chicken and topped with wild rice dumplings. This is an easy soup and is perfect when you have some of that leftover rotisserie chicken. It's light, but offers lots of flavor and very comforting. Serve with a side salad, these are my favorites; Recipe #384938, recipe #387014 and this dressing on your favorite greens recipe #401158. NOTE: This recipe really works best with 100% pure wild rice, not a blend.
The Easiest and Best Crock Pot Chicken Tortilla Soup

A friend of mine made this soup for a baby shower that I recently attended and everyone loved it! Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which make it HEALTHY which is alway a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!! I like it the best with one jar of medium and one jar of mild tostitos salsa. -- posted by S.H.E.

I make this for my family on cold nights. Everyone loves it. I do substitute 97% Ground Turkey in place of Lean Hamburger every now and then. Great both ways. This is also a great crockpot soup. -- posted by 538100
