Tangy Greek Chicken Soup (Crock Pot or Not)

I created this soup with all of our favorite flavors and ingredients in mind. You may omit the vinegar, if you would like it less tart. Cook time includes 6 hours in the crock pot. -- posted by Maito

A Mean Matzo Ball

Yes, I make a mean matzo ball, thank you. And I shall share my method as the first recipe I will post. The debate over seltzer goes on but no one here at the Zaar has mentioned separating the eggs! I believe this gives these dumplings both fluff and bounce. -- posted by Chef #404181

Momma's Chicken Noodle Soup

There really is no better chicken noodle soup. Its pure comfort, I swear it'll cure anything you have. You could use chicken breasts to cut back on some fat, but make sure it doesn't dry out. In general, chicken thighs don't dry out and give a wonderful flavor. -- posted by ladywisconsin

Croatian Chicken Soup

This is very simple soup, traditional Sunday lunch starter in Croatian families. It must be cooked on very low fire for 3 to 4 hours. My recommendation is to use old chicken – the one which is too hard to grill or fry. You can also do it with turkey. -- posted by nitko

25 Minute Chicken Noodle Soup

This is something that I just came up with one day when I didn't have the time to make my usual chicken noodle soup. I was desperately craving it however, so I decided to do some improvising. -- posted by MizEmerilLagasse

Chicken and Bok Choy Soup

I make this with Shanghai Bok Choy, a smaller Bok Choy than the regular one with light green ribs rather than the white ribs. If you have Bok Choy in a Chinese restaurant, they tend to slice it lengthways and cook the whole thing at once. I decided to cook the ribs and leaves separately and accidentally came up with this recipe because I was distracted after adding the ribs. I found that by overcooking the ribs slightly, they take on an almost buttery flavour, a nice contrast to the freshness of the leaves.
I make this with Easy Prep Vegetable Stock (Recipe #247153).
One serving of this soup contains quite a lot of protein and is suitable for South Beach or Sure Slim weight loss programmes. -- posted by RonaNZ

Cheryl's Turkey and Tomato Soup

This is a recipe I made up in desperation, with some stock given to me by my aunt along with left over turkey. This recipe makes about 4 cups of soup. You may substitute whatever green vegetable you like in place of the green beans, but I think it gives a nice mild taste to the soup. Also, the brown rice in the recipe means uncooked brown rice. If you have leftover cooked rice, you may substitute, but only need to add it in the last 5 minutes of cooking along with the turkey. -- posted by cherber

Delicious Chicken Tortilla Soup (Low-Fat)

Once Fall turns to Winter, I love curling up with a hot bowl of soup and a good book with the snow falling outside. This soup is a twist on the traditional chicken noodle but simple & easy. If you plan on stretching this beyond one meal, add the lime juice to your bowl rather than in the entire pot. Edited to add: I made this over the holidays and for spice, used a can of diced tomatoes with Southwest seasoning and a can of Rotel with cilantro and lime. Very spicy! -- posted by Canadian in Minnesota

Black Chicken Ginseng Soup

Summer weddings often lead a year later to… summer babies! I’ve made this recipe for five friends, all of whom had recently given birth. To help restore balance in the form of “heat” to these new moms, black chicken (chicken with black skin) is traditionally cooked for them.
I’ve adapted the Black Chicken Ginseng Soup from Betty Saw’s original recipe. It is a good soup for people who need to be “toned” and have their qi replaced, i.e. people who are recovering from a long illness, new mothers or people who are weak and ill. People who have hot qi should avoid overindulging, as the black chicken is very warming. -- posted by Spicy Little Sister

Chicken Soup

This is my first attempt at old fashioned chicken soup from scratch, and I'm quite proud of the finished product. I seasoned and reseasoned with salt and pepper several times throughout the cooking process until I achieved the taste I was looking for. The broth was a last minute addition, and though purists may disagree with its inclusion, I thought it added a great depth of flavor to the stock. I served with thin egg noodles that I cooked with each serving of the soup. -- posted by BxChick

Chicken Enchilada Soup (Crock Pot)

I had intended to come here and post a reply to a recipe I'd based my own off of, but I can't find it now. So I'll enter my own version as a separate recipe. I melded this from a recipe here that said it was a copycat of a restaurant's recipe, and one from another site that was for crock pot tortilla soup.
I use a whole onion because I like onion, but it IS a lot. And frankly I guesstimate the spices. But it's delicious. And, I think, fairly healthy.
This is also very easy, and I make it a lot. It doesn't have many ingredients, it just cooks in a crock pot, and it's great for lunches all week (which is why I make it). -- posted by Hellion

Ginger Vegetable Chicken Noodle Bowl

I got this from Rachel Ray's "365: No Repeats" but made some alterations. This would be really good with added mushrooms and onions or pretty much an vegetables you like! You could also omit the chicken and swap vegetable stock for the chicken stock and add some tofu for a yummy vegetarian meal! I have made this with more or less liquid depending on whether I wanted soup or something closer to chicken lo mein. -- posted by carrie680

Saw this episode of Emeril Live and just had to have some. Made it last week and it was delish! I love that little zing, although it calls for more, & we made a meal of it!.Chicken soup is chicken soup but with little changes here and there - that make it entirely their own. We served it with a crunchy home made bread, some honey butter and a spinach salad with a raspberry vinaigrette, exquisite!! Forgot to make this public - so here it is. We served it in a beautiful tureen that belonged to my mother and a fine time was had by all!!!! :) -- posted by Manami

Chinese Take out Egg Drop Soup

If you have a cold, feel a little under the weather, or need comforting in any way, this soup is for you. The success of this reviving soup depends largely upon the quality of your chicken stock. In order for this dish to sing we recommend that you enrich store-bought stock by simmering it with chicken backs and necks. This step gives your stock the deep, rich flavor that a soup of this simplicity demands.
Fried Onion and Chicken Kreplach

Here the onions are salted first to draw out the moisture and then fried. If you are pressed for time or don't want to bother, omit the soaking and fry the onions a little longer over medium heat. Using a high proportion of savory fried onions to the chicken ensures that the filling for the kreplach won't be dry - even if the chicken left its flavor in the soup pot. "Jewish Holiday Cooking" by Jayne Cohen - a beautiful book, which was given to me by a nun who ate here one year during the High HolyDays.
Basic Chicken Soup

This is a simple, but delish chicken soup recipe. I make mine very simple, but you can go ahead and add whatever veggies you want. While I cook it with Celery, carrots and turnip, after its done, I take out the turnip and celery. Feel free to leave the celery if you like it.

It's also important to leave the carrots and celery relativly whole, cut in half is ok. This keeps the carrots especially from getting mushy as they cook.

The key is to not add the noodles until you're going to eat it... that way it doesn't get mushy. -- posted by KBates_Can_Cook

Low-Fat Japanese Chicken-Scallion Rice Bowl

This recipe is out of a cookbook called eating well, healthy in a hurry. I love how simple this recipe is to make. It is great on a cold night and so healthy! I double the sauce to make it more like a soup since I love egg flower soup and this reminds me of it. I also omit the sugar, it is good without. I have only made this with white wine since i have no reason to buy mirin aside from this recipe and it turns out great. for a spicy kick, my husband likes to top this off with that hot rooster sauce. I do not know the proper name for it since it is in another language. -- posted by cali~jenn

Chicken Hot Pot With Mushrooms and Tofu

Cooks in Asia serve hot pots communally, setting a big pot of bubbling broth on the table alongside a platter of raw ingredients (like vegetables and thinly sliced chicken) for dipping. It’s a fun way for guests to feel like they have a hand in making their own meal. In his version, Ethan Stowell gives each person at the table an individual bowl of sliced mushrooms, tofu and scallions, then adds piping hot chicken broth loaded with chunks of tender cooked chicken. Serve with a light-bodied, unoaked Chardonay: 2006 Ruffino Libaio . Appeared in October 2008 edition of F&W Magazine.

Chicken Soup

The coming of Spring is a pleasurable thing to behold. The clouds have parted, the wind has warmed up, and there are robins on the farm. We have a a special contest here on Longmeadow Farm. Whoever sees the first robin of the year, and tells any of us on a Saturday Lunch gets a dollar bill. This special contest has been going on since I was knee-high-to-a-grass-hopper. Now I know you can't get rich off of a dollar, but you can however, at least share in the soup. To give the cold Winter months a bid-a-dew, we celebrate with the simple, but tasty chicken soup. I found this originally in "Vitality" magazine, a special insert that my Dad gets in the mail. I started using it, because it just was so darn simple and so darn tasty I think this should certainly celebrate the end of a long winter, and a "Hello!" to that nifty red-robin-redbreast. -- posted by Andi of Longmeadow Farm

A hearty chicken soup recipe that has been fine-tuned over many years to near perfection.
