Three Onion Soup Gratinee

DH was out of town on a business trip and came home raving about this soup. This soup is a wonderful combination of sweet onions (Vidalia work well when in season.), red onions and yellow onions. I was able to find this recipe posted on another web page. Hope you enjoy! -- posted by PaulaG

From Scratch, Chicken and Dumplings

I had this about a week ago for my Fiance before he left on a Motorcycle trip with 2 of his friends. (Note, that I would have gone with them had it not been for work) asked him the day before he left what he wanted for supper before he left, and all he said he wanted was chicken and dumplings. So, I started up my famous chicken stock recipe, and started looking for dumpling recipes up here. I had know idea though, that I would find the best dumpling recipe I had ever tried. I would like to give recogition to Christine Bettiga for her dumpling recipe. I wrote to her and told her that I just had to use her recipe because the soup just wouldn't be the same without it. Thanks Christine! -- posted by MizEmerilLagasse

Basic Miso Soup

This recipe was my introduction to making miso soup. I love recipes like this that encourage you to be creative and make it your own - something many of us will do anyway! The instructions include many add-in ideas. I put spinach, shiitake mushrooms, and extra green onions in mine, using the water I soaked the mushrooms in for some of the water called for in the recipe.
An Andreas Viestad recipe, one of my favorite chefs! This one is from his television cooking show, and has a deliciously different flavor. If you can't find fresh porcini mushrooms, the recipe does allow for a pound of white (button) mushrooms plus 2 ounces of dried porcinis.

I think this originally came from either Mens Health or Mens Fitness magazine.
Curried Lentil and Lime Soup

Somebody was requesting a lentil soup recipe without tomatoes. Here is the one I know. I made it last winter and I really liked it. The recipe says it's low-fat and the soup is definitely quick to throw together. I'm not sure if I used lime as stated or lemon, since I don't usually have lime at home, but do the rest of the ingredients. That's another good thing about this recipe; it uses storecupboard ingredients. I am already looking forward to prepare this soup again when it gets colder... You can use whatever curry paste you fancy. I used a korma paste. This soup freezes well, yet another advantage. I didn't use the yogurt, I tried it with the yogurt, but I preferred it without. However, I thought you might like it with that's why I didn't leave it out. -- posted by tigerduck

Cold Wine Soup (Kalte Weinsuppe)

Posted for Zaar World Tour 2005. From a cookbook of countries along the Danube, this came from Austria, right next door to Germany, so I've classified as Germanic. I have not tried this recipe yet, but it sounds wonderful. Please note that it calls for 1 cup of already whipped cream (not 1 cup of whipping cream). Hopefully the calorie and fat content will reflect this! (Looks like it did.)
Hearty Beef and Barley Soup With Vegetables

I make this soup with my beef stock recipe#80434, but the canned beef broth will work great for this, this is a hearty soup, perfect for a cold winters night. You can omit the chicken broth and make the soup using 8 cups beef broth with the consomme, but the beef flavor will be quite strong. Sprinkle with grated Parmesan cheese in the bowls and serve with crusty bread. You can really use any cut of beef for this soup -- posted by KITTENCAL

Soupe Au Pistou (Soupe Française) (French Soup)

This recipe came from a Pennsylvania Slovak (Carpatho-Rusyn) cookbook, so it's probably not authentic French (it was listed in the Modern & Unusual section of the book which kind of indicates to me it's more of a modern faux French recipe, though there is a legacy of French influence in Slavic cooking dating back to Catherine the Great), but it is a simple and hearty, meatless soup. It was called Soupe Française in the book, but I believe it's better known as the provencal Soupe au Pistou, a vegetable soup seasoned with basil, garlic, and olive oil as this one is. Serve with crusty French bread. -- posted by littleturtle

Quick, Easy, Awesome Green Bean Soup

I think this is the only recipe I actually made out of some low-cal cookbook I bought. This is NOT a recipe for frozen or canned beans, use fresh and using enough garlic is the key. I usually use about 12 - 15 cloves. Like the title says, it's really quick, easy and awesome...I think it's also healthy!! Healthy is not one of my favorite cooking terms, so if it's healthy and I like it, you know it's good!! -- posted by Mrs Goodall

Slovak Christmas Eve Mushroom Soup

This was passed down from generation to generation. I don't have a recipe for this soup, but I will try to esitmate the portions. It is a sour soup but it is delicious. People either love it or not. My neice never liked it and now she loves it, can't wait till Christmas Eve. My grandmother used to use mushrooms my grandfather and dad would pick up in the woods. I believe they called them sheephead. My grandmother would then clean them and hang them to dry. We can't find the mushrooms for sale and are afraid to go and look for them in the woods. We don't know the good from the bad. -- posted by Jane from Ohio

Jocie's Crock Pot Seafood Soup

I adapted this recipe from one that I saw Rachael Ray make for Oven Roasted Cioppino. I thought that I could change the recipe to account for my family's tastes and so that it would work in my 8.5 quart slow cooker. You may need to adjust the cooking times if you use a different size crock pot. It was yummy and my family really enjoyed it. You can use whatever seafood that you enjoy but do not put it in until near the end of the cooking time as noted, so that the seafood is not overcooked. Please note that you could probably do all of the steps before adding the seafood at the end and place in your crock pot on low for 4 hours or so(depending on your crock pot size and temperature) and then put it on high and add and cook the seafood for the times stated. -- posted by Jociecee

Clear Beetroot Bouillon

A terrific starter for a formal meal, or just for lunch; it will also make a great Valentine dish (you might want to cut the omelette into heart shapes in that case). The trick with the egg whites ensures that the bouillon is totally clear -- the protein in the whites, when clotting, encapsulates all impurities. The lemon juice is mainly necessary to keep the colouring nicely red: like litmus, the pigment in beetroot turns blue when exposed to a high pH. The quality of your stock largely determines the quality of the end result. Everything up to and including step three can be done a day in advance. -- posted by Michael Keizer

Soto Ayam (Indonesian Clear Chicken Soup)

This version of the classic Indonesian chicken soup comes from the Hyatt Regency in Yogyakarta, Indonesia. Found in Sunset Magazine, January 2007. In the magazine, they talk about having a no RSVP soup party which is low pressure & high commitment. You provide the soup & your guests provide the bread or drinks or nothing at all - no stress. A great way to get to know your neighbors. Serve all the garnishes on the side so that your guests may create whatever combination they like. Up to 2 days ahead, cook, cover, and chill chicken in seasoned broth. -- posted by Manami

This recipe is AWESOME and will make you want to make it often! Tip: The pepper, chile paste, and vinegar can be varied according to your taste. If you want the broth a little thicker, add another tablespoon
of water and cornstarch, when thickening the broth.

If you like it a little hotter, use 2 T. of red chili paste, instead
of 1. If you like it a little milder, don't add as much white pepper.

It you like it a little more sour, add a little more vinegar, to taste, a little at a time. Time does not include time to soak the fungus. -- posted by Linda's Busy Kitchen

Mediterranean Kale & White Bean Soup With Sausage

Pulled from Fine Cooking Magazine (Feb/Mar. 2008)--my current FAVORITE cooking magazine. I made it last night for the family, and WHOA, is it good! Granted I am blessed with two little boys and a husband who love nearly all food, but they all liked this one A LOT! It isn't overly brothy--consider adding a couple more cups of broth if you like it more "wet."
It's garlicky, fairly simple, and very nutritious! The magazine says it's best served with crusty cheese toasts. I did just that, and served it with (Safeway brand) frozen five-cheese toast. YUM! -- posted by Battle in Seattle

Boiled Shrimp and Pork Dumplings

A couple of weeks ago I went to a market and saw some dumplings in one of the stalls. I wanted to buy some but they were so expensive, so I decided I'd just make them myself. The preparation - filling and shaping the dumplings - does take time, but I think it is worth the result. -- posted by j.sugiarto

Mighty Miso Soup (With Dashi - Fish Stock)

Miso soup is a traditional Japanese soup, prepared mainly from miso and dashi (fish stock and seaweed stock, see my recipe for simple dashi). Rich taste, easy recipe, short preparation time and very healthy. This recipe calls for Dashi - a Japanese Fish Stock. This stock really wakes the soup up and is the best way to make miso soup. -- posted by Harmel Rayat

Saw this episode of Emeril Live and just had to have some. Made it last week and it was delish! I love that little zing, although it calls for more, & we made a meal of it!.Chicken soup is chicken soup but with little changes here and there - that make it entirely their own. We served it with a crunchy home made bread, some honey butter and a spinach salad with a raspberry vinaigrette, exquisite!! Forgot to make this public - so here it is. We served it in a beautiful tureen that belonged to my mother and a fine time was had by all!!!! :) -- posted by Manami

Fried Onion and Chicken Kreplach

Here the onions are salted first to draw out the moisture and then fried. If you are pressed for time or don't want to bother, omit the soaking and fry the onions a little longer over medium heat. Using a high proportion of savory fried onions to the chicken ensures that the filling for the kreplach won't be dry - even if the chicken left its flavor in the soup pot. "Jewish Holiday Cooking" by Jayne Cohen - a beautiful book, which was given to me by a nun who ate here one year during the High HolyDays.
Chicken Hot Pot With Mushrooms and Tofu

Cooks in Asia serve hot pots communally, setting a big pot of bubbling broth on the table alongside a platter of raw ingredients (like vegetables and thinly sliced chicken) for dipping. It’s a fun way for guests to feel like they have a hand in making their own meal. In his version, Ethan Stowell gives each person at the table an individual bowl of sliced mushrooms, tofu and scallions, then adds piping hot chicken broth loaded with chunks of tender cooked chicken. Serve with a light-bodied, unoaked Chardonay: 2006 Ruffino Libaio . Appeared in October 2008 edition of F&W Magazine.
