White Bean and Vegetable Soup

Adapted from Sunset- January 2009. An instant hit with the entire family. Easy to make, very flavorful, and easy on the budget. A rough-textured bread is best for soaking up flavor! The original recipe called for fresh herbs which I will try when my garden is producing. In the meantime, dried seem to be fine. -- posted by Chef #750419

Diet Chicken Cabbage Soup

Just posting this recipe to figure out the calorie content...It is a very healthy, low cal, diet soup - fills me up when I'm starving, which seems to be mid afternoon for me. Also makes a great lunch. And it's super easy to make a huge batch and freeze for later. -- posted by TerriB

Garden Vegetable Soup

I was talking to a lady where I was working about enhancing recipes. She threw down the gauntlet about a recipe in the Weight Watcher's guide. It had 0 points and, as she put it, 0 taste. The challenge was to make it have TASTE. I read the recipe and agreed that the result of the original recipe would have no taste. The challenge was to add flavor without adding points. See what you think. -- posted by franzcooks

Chicken Noodle Soup With Parsnips and Dill

Lots of carrots and parsnips give old-favorite chicken noodle soup a sweet savor. To balance this effect, use the optional parsley, which is just slightly bitter - or maybe cilantro -- posted by Lorane Abari

Nickey's Chicken N Asparagus Soup

A very light, simple chicken soup. Time does not include time to bring stock to boil ... might add another 5 minutes?

Hehehe, I know I shouldn't write this here because you might not want to try it! Here's my friend's reaction even though I warned him that it was mildly flavored and easy on the stomach...and that he might want to add the very ingredients that he did!

"About the soup...hehehe...I boiled the chicken in water for the broth, then added the chicken stock, shredded chx and asparagus. Well, the flavor just wasn't there and so I added a little salt then shoyu...something is missing...Aha, a little bit of dashi, the one with no MSG. Suddenly it changed the whole flavor! Auwe! Jam-up! And SO I decided to add sesame oil. Now this soup has gone through a metamorphosis...I call this soup: Oriental flavored Chicken Asparagus Soup. Guess I'll be bringing the soup to work for lunch." -- posted by marisk

Spring Chicken & Barley Soup

A light, barley soup. . .perfect for Spring and Summer. This is a high fiber, low fat and heart healthy soup. Recipe originally from Eating Well Magazine, but switched up a bit after making! Feel free to add some salt free all purpose seasoning or Italian Seasoning in the last 5 minutes of cooking; I used Recipe #334780 with great results. The orange peel is the secret ingredient in this recipe. . .brightens it right up! -- posted by JanuaryBride

Got this recipe from an Amish neighbor years ago, but she doesn't remember where she got it. I have had this at the Hoss's steakhouse chain as an appetizer or with a big salad. This is more about the broth than the ham or cabbage. Be careful of the salt as some ham hocks can be very salty, but on the plus side they are available at any grocery store. -- posted by Chef #1149837

Mushroom Barley Garlic Soup

Here will be a lovely home for some big golden beefsteak & little yellow pear or cherry/currant tomatoes. Will play with this recipe using the green when ripe tomatoes as well.... & bigger shrimp - our local ones don't come that small (LOL).
Indian-Spiced Tomato Soup

Summer soups using garden bounty are just the best - especially when they are full of interesting flavors but not heavy with fats & starches that leave one feeling hot & heavy after consuming. This recipe strikes me as a delightful alternative to gazpacho & I plan to use robust & assertive DelMars & Chesapeakes & Old Brooks to make it. Zing, pop, wow - for a light but satisfying summer lunch or supper.
From Sunset magazine. Allow at least an hour (up to a day) for the soup to chill & the flavors to marry. -- posted by Buster's friend

Roasted Tomato Soup

Will be making this using the grill outside rather than heat up the house when I am awash in tomatoes. Will try both on the gas grill as well as the smoker (when cooking something else LOL). Found this in Sunset's recipe gallery. It is versatile - serve hot or cold - it is simple but I bet has wonderful flavor without being heavy (too miserably hot & humid here for rich food in the summer). Another alternative to our beloved gazpacho routine.
Will experiment with fresh marjoram, basils, mint, thyme & peppers in this mix as well. -- posted by Buster's friend

I received a newsletter from cooking.com with the subject line "Dinner on a Dime." This is one of the interesting recipes included - can't wait to try it! From the recipe description: This chicken stew has a bold ginger-flavored broth and provides a whole serving of dark leafy greens in each bowl. We tried it with frozen chopped mustard greens (available in large supermarkets) and it was even quicker to prepare and just as delicious. Serve with brown rice. -- posted by SweetJezebel

Vegan French Onion Soup

Tweaked from a few online recipes. I always enjoyed this soup as a meat eater, haven't had it in years so I'm happy to have this vegan variation now. It's warm and comforting and fairly simple, although there is a lot of chopping involved with the onions, so pull out your processor! Skip the cheese on top if you are not a fan of vegan cheese. Enjoy! -- posted by magpie diner

Vegetarian Cabbage Vegetable Soup

I've tried other cabbage soups out there, but they are so bland! This is how I combined a few recipes and adjusted to make it more pleasant. The vegetables can be varied easily, and sometimes I'll use some frozen mixtures instead of the fresh, and it comes out just as good. This recipe makes a big pot, and it freezes great, so don't be afraid to freeze in individual portions for a later meal. Also try this chilled in the summertime! -- posted by MissChiChi

Kenchin Style Vegetable Soup

This is from "The Enlightened Kitchen: Fresh Vegetable Dishes from the Temples of Japan" by Mari Fujii. It comes from Kenchoji Temple, the first Zen buddhist temple in Japan. It is a wonderful example of shojin ryori, or "temple cuisine". The ingredients suggest this is a winter soup, although for health and nutrition, this soup can certainly be served in any season.

The author suggests that instead of the soy sauce (or in place of part of it), you can substitute miso or sake without losing authenticity.

Although this looks like a lot of directions, it's actually a very simple preparation. If you can boil water, stir fry, and use a knife to slice vegetables, you have all the skills you need. Once you make this, you won't even need to look at the directions.

Note: prep time and cooking time does not include the 2 hr soaking of the konbu to make konbu stock, but does include all other cooking and soaking times. -- posted by Gandalf The White

Indian Wedding Soup

Asian Vegetable Noodle Soup

This light, refreshing rice noodle soup is perfect for both Summer and Winter. If needed, dried herbs can be used in place of fresh ones. Add tofu, cooked chicken, seafood and mushrooms as desired. White cabbage can be added instead of bok choy and a small amount of leek or onion is also good. The soup will freeze well but noodles tend to go mushy when reheated. -- posted by the_allergic_chef

Fiery Tofu and Coconut Curry Soup

From Cooking Light, this soup is inspired by similar soups from Thailand and Malaysia and balances fiery flavor with sweet and sour back notes. The crisp-tender vegetables offer a pleasant texture contrast to the custardlike tofu. Serve with a side of rice noodles drizzled with dark sesame oil and a cooling mango salad. -- posted by Epi Curious

A recipe for lentil soup that a friend made for me after I came home with my second child - I begged her for the recipe.
No-Chicken Soup

This is my "trademark" recipe--I make it every single week! It is so rich and flavorful I like it more than "traditional" chicken soup. Although the secret ingredient--sassafras--isn't essential, it deepens the flavor. Powdered sassafras leaves can be found in supermarkets in the spice section. It's also called "fil'e" or "gumbo fil'e." If your market has a "Cajun" or "Creole" section, you might be able to find it there too. It's a classic Cajun seasoning, but it's also good in just about everything. -- posted by Theodwyn

Soup

This is a basic recipe for a clear soup--can be made with what you have already and helps use up leftovers. Doesn't it bother you when you find recipes that require you to buy cumin nostrils or some other obscure ingredient? Not this recipe. Do whatever you want to do with the ingredients beyond the basic part of the recipe.

This helps make a weeknight supper by adding a good salad and bread or a sandwich. If I add a lot optional ingredients it can make a meal on its own.

I like to make a large batch and freeze it in 2 serving batches. Remember that some veggies and dairy don't freeze well. -- posted by krolek

Mixed Bean Soup With Vegetables

I love making this dish because it is tasty, filling and healthy. My bean soup is full of veggies and makes a large amount. Also, it is incredibly cheap to make. I take it to work every day for a week and so that I know I'm being healthy and avoiding tempting snacks. I get the beans in the gorcery's bulk aisle - it is a mix of pinto, kidney and white beans, as well as barley and split peas. This recipe makes a huge pot so you can look forward to leftovers. -- posted by curiousngeorge

Greek Lemon Chicken Soup

Also called avgolemono, this is a great soup recipe I found years ago. I usually make this when I have left over roasted chicken breast. If you are a lemon lover like me, you can always add a bit more lemon juice to the soup. I usually add in 1-2 extra tablespoons lemon juice. This is great left over for work lunch during the week. -- posted by Chef #529371

Chicken Corn Noodle Soup

Chicken corn noodle soup is a very popular PA Dutch soup...it is so delicious! This is a recipe I came up with and make it a lot in the fall and winter. In the summer when corn is fresh, I freeze some and it is that fresh frozen corn and it's juice that I use for this soup. However, canned or frozen corn works well in this too. This recipe is good old fashioned comfort food! Hope you enjoy it as much as we do.
NOTE: Please don't make the mistake of adding salt to this recipe until you taste it...the boullion and seasoning packet usually add enough! -- posted by SReiff
