Creamy Mango Lime Smoothie

With the yogurt this is a delicious and refreshing summer drink. Choose lime flavored yogurt or other tropical-flavored yogurts are also tasty! It also makes an excellent summer cocktail without the yogurt and with the addition of rum. Serve in margarita glasses for a festive touch. -- posted by CaliforniaJan

Cooking Light's Citrus Chicken Cutlets

This is a fast, easy, and healthy recipe that makes a very moist and flavourful chicken. If you double the marinade you can pour it over some rice and have a complete (and delicious) dinner. Also, if you have the time, let the chicken marinate for longer- it will be even juicier. The marinade would also work well with a mild fish. Recipe is from Cooking Light Magazine (October 2006). -- posted by blucoat

Meyer Lemon Marmalade

I only had a few meyer lemons from my first crop, and I wanted to make the best marmalade. I found this recipe on Simple Recipes and I certainly got the best tasting marmalade I ever tasted. The mixture of the lemon/orange taste really makes this different than the straight orange. Here is the site to review for the pictures, the complete recipe is here without the pictures. http://simplyrecipes.com/recipes/meyer_lemon_marmalade
This recipe calls for Meyer lemons, a hybrid of a regular lemon and an orange, that is thinner skinned and sweeter than a regular lemon. You cannot substitute regular lemons for Meyer lemons in this recipe. I followed the recipe, and it came out perfect. -- posted by 2Jacks

Angel Food and Grapefruit Cake

May and June are two months when the heat turns up on social functions from bridal showers, anniversaries and graduations - the list goes on - Here for any special occasion is a lush creamy angel food cake with fresh strawberries and grapefruit. Because My hubby and I both cannot eat grapefruit, because of meds that we are taking, I have tried this with oranges, and found it to be just beautiful.
Delicious Organic Green Smoothy

When my breastfed daughter was around 10 months I started noticing something wasnt quite right, so I went to my Midwife & it turns out I had extremely low iron. Normal is 12 & I was at 7. She told me to be sure to eat my leafy greens, we'll in the hot humidity of South Western Florida the cooler your food is the better! This is so good, my daughter & I drink one every other day now & my iron level is up to a 13 after just one month!!! I can just imagine what its done for her!

I have tried many variations to switch it up a little, adding yogurt makes for a smoother texture (and the active cultures never hurt) Apple Juice can be substituted if you dont have OJ in the house. Mango (i used frozen to avoid the prep) Use your imagination -- posted by mrs.cubana

Cardamom-Flavored Fruit Salad (Salatat Al-Fawaakih)

From: "Classic Vegetarian Cooking from the Middle East & North Africa"-Arabian Gulf. This is the BEST fruit salad my husband or I have ever tried! It's easy, healthy, refreshing and WONDERFUL. You have to like cardamom to really appreciate it though. You may find yourself doubling the sauce in the future because you want to drink it up. I don't repeat very many recipes because there are too many new ones to try but this one is repeated over and over during cantaloupe season. I'm sure it would work with other fruits as well but I like this combo so much I haven't experimented. -- posted by Engrossed

Cold Avocado and Cucumber Soup With Dill

No-cook soup good for hot days of summer. Real easy to make because the blender or food processor does most of the chopping, but it takes time to chill which is not included in cooking time. I omitted the optional shrimp (8-16 boiled & chilled) since I'm a vegetarian, but you might want to add some to yours. It also very light and low-fat. From the August 2009 food section of the New York Times, adopted from "Once Upon a Tart..." by Frank Mentesana and Jerome Audureau. Once Upon a Tart is a charming cafe in Soho neighborhood of NYC. -- posted by Kumquat the Cat's friend

Spanish Green Salad With Roasted Red Peppers and Preserved Lemon

Rust stains from metal outdoor furniture can be removed from concrete by using fresh lemon juice.
Frozen Festive Vodka or Tequila Bottles With Herbs and Berries

Another GREAT Jamie Oliver recipe, and one that I am preparing for New Year's Eve! Jamie says you can use any spirits or liquor, but he suggestes vodka and tequila in his recipe. These bottles look SO festive and pretty, I plan to use holly, berries, bay leaves, fruit slices, ivy and woody herbs for my bottles this year. DO check that the liquor bottle fits INSIDE the plastic water bottle first! This recipe idea for serving liquor originates from Scandinavia.
