Lemon Layer Cake (Gluten Free)

Published in Gourmet magazine, November 2005. Use Recipe #208712 for the brown-rice flour mix. "If any cake could be called refreshing, this would be the one. Rich but light, it loses absolutely nothing from the absence of white flour." -- posted by swissms

Lime Parfait

This is pure flavor sensations.. i got it from the LCBO 2007 summer issue, they suggest serving it in tall champagne glasses topped with the blueberry and lime zest garnish, it is also fine in one big bowl..fit for a wedding but so simple, no puddings or crackers to gussy it up. Time does not include 4 hour chilling. -- posted by MarraMamba

No-Bake Lemon Slice

This no-bake slice can be made in a just a few minutes, although it does need time to set before it is ready to be eaten. NOT for those who don't like lemons but for the rest of the world, great for lunch boxes, picnics or potlucks! Another recipe I've adapted from one I found on the Simply Great Meals website. The conversions you may need: 125g = 4oz; 400g = just under 13oz; 250g = 8oz. Marie biscuits are a plain sweet biscuit. You could also use Granita biscuits or shortbreads.
Chocolate-Orange Cake

I love this cake for several reasons. I love chocolate and orange together, I love cake in general, and sometimes I like to cook without eggs or other high-allergen foods just to keep my game up, although this cake does require yogurt so probably can't be made vegan . I found the original recipe on a blog by Shyamala Ramanathan-Edwards http://srefoodblog.blogspot.com/, who based her recipe on one from the eggless baking book by Cintia Stammers, published by the Bhaktivedanta Trust. Then I put chocolate in it.
I have never made the orange-sultana (raisin) filling, instead using (eggless) orange curd such as http://www.recipezaar.com/fresh-orange-curd-357753 and/or chocolate ganache. -- posted by Shoga-chan

Lemon Mousse Squares (Diabetic)

I found this in a Diabetic cookbook and were so good! They were like a light cheesecake, but even better!! The only change from the listed ingredients and what I used was they had Sugar Free Lemon Yogurt listed and I couldn't find that anywhere, but I did find Dannon Light and Fit Carb and Sugar Control Vanilla Cream Yogurt. I used that it may have made them even better!! Also you can substitute Splenda for the Sugar. I tried to write the recipe that way, but it wouldn't let me.
I'm not going to include the chilling times, just the time it takes for you to actually be doing something! -- posted by LDSMom128

Lemon Fudge

A lovely sweet & tart recipe for lemon fudge I found online, posted by Elizabeth LaBau. For me, boiling the sugar & milk mixture for 6 minutes did not result in as firm a fudge as I'd like, but still, it was great, delicious fudge that also had the perfect consistency - as long as I kept it in the fridge. ;-) I'll try a candy thermometer the next time to see if boiling the mixture to soft ball stage doesn't do the trick. -- posted by stormylee

Easy Lemon Self Saucing Pudding

Been looking for the lemon delicious recipe I cooked many years ago but somewhere along lost the clipping (before ZAAR time) and this seems to come close to it though called a pudding (maybe searching in the wrong area) but it was good though sweeter than I remember (would need to work on the sugar content), certainly don't remember having the sprinkle sugar on top as per this recipe but I believe that what gives it its crispy top in this recipe. Serving suggestion was 4 but I think could be easily stretched to 6 served with cream and or icecream. i found that 1 lemon gave me the rind and juiced that but needed to juice a second lemon to get the full 1/2 cup (got a little more than that and added the lot). -- posted by I'mPat

Once in a while, we still have to have a rich, tasty, dessert
even when we're diabetic or dieting. This one has about 1/3 less carbs than a regular lemon velvet cake. It's still a little high if you're watching your carbs so mind your serving sizes.
Candied Cumquat Bread and Butter Pudding

This recipe is taken from "The Sydney Morning Herald" Oct 20 2009 but slightly modified. A twist on traditional bread and butter pudding.
You can make the cumquats ahead of time but store in fridge. Also by adding 1 cinnamon stick, 1 tsp of yellow mustard seeds and 3 cloves when cooking the cumquats you can then serve as a condiment to ham, cold meats or roast duck. -- posted by Coasty

Adding this to my holiday cookie trays. Adapted from a recipe in The Seattle Times provided by Lynne Rossetto Kasper. Something wonderful about orange at Christmas. Coconut is always so festive too. The article noted this dough really benefits from resting overnight in the refrigerator so start the day before.
Gelatin Heavenly Hash (Jell-O Brand)

I bought a bunch of jello on sale and didn't know what to do with it. I discovered Favorite Recipes Jello Brand Fun and Fabulous Recipes, and oila! I used orange gelatin, but you can use whatever flavor you want. I also substituted blueberries for the crushed pineapple (I didn't have any). Next time I'd like to try this with real whipped cream. I used sour cream (I didn't try it with non-dairy whipped topping). Very tasty stuff and simple to make. Cook time excludes chill time. -- posted by AmyZoe

Crepes Suzette (Weight Watchers)

Just like Julia...if you liked the movie, you'll love the recipes. Weight Watchers has updated the beloved chef's timeless classics, keeping the French flavor, but trimming the fat. The original: 19 Points values - WW remake: 4 Points values. So why not serve a few of your favorites when you host a Julia-inspired Oscar fete this year? Bon appetit! Tip: If you want to prepare this dessert but skip the alcohol, substitute 1 Tbsp lemon juice for the liqueur and omit boiling the sauce in step 4. When you swirl in the butter in step 5, add the grated zest of 1/2 lemon. -- posted by Crafty Lady 13

Rab Torte (Rapska Torta)

It is believed that Rab Torte was served for the first time in 1177. when Pope Alexander III, escorted by his ten galleys, was overtaken by a storm as he was crossing the Adriatic, and took cover under the cliffs and in the harbors of Croatian island Rab (and town), and thus by a quirk of fate arrived in Rab just after the renovation of the Cathedral of the Assumption, which he consecrated on the occasion. In order to enhance this unexpected ceremony and to express their respect, nuns of the Benedict order served him cake on the host – Rab cake. The original recipe for the first Rab cake is kept in the archives of the Benedictine abbey of St. Andrew on the southern coast of island Rab. I am posting the recipe of madam Dunja from “Vilma Patisserie” from town Rab. -- posted by nitko

Lemoniest Lemon Squares

These are the best lemon bars I've ever tried. They have a fabulously buttery crust, a not too sweet or too tart curd-like lemony filling, and a thin chewy top. The recipe is from San Francisco pastry chef Emily Luchetti's cookbook, "Classic Stars Desserts". With more than a cup of fresh lemon juice, the lemon flavour is really pronounced, the filling sets up real well and the dusted sugar makes for a beautiful presentation.

NOTE: The squares can be made a day in advance, covered and refrigerated. Bring to room temperature before serving. Dust with confectioner's sugar before serving. -- posted by blucoat
