			<description>This beautiful layered pie combines all my favourite Christmas flavours - chestnuts, cranberries, dried apricots, chicken, pork sausagemeat and bacon - all encased in a crispy and crumbly pastry case; it is a firm favourite in our house EVERY year! Not only that, but this pie is actually better if made ahead of time - it can be eaten warm or cold and is excellent for buffets and light suppers. It also freezes very well, once cooked. The filling is very similar to an English Pork Pie, a fruity stuffing mixture layered with chicken fillets. Although it is essentially a pie for the winter festive season - I see no reason why it cannot be made all year around - I often make it to take on picnics in the spring and summer. You can adjust the filling to suit your own tastes and requirements, but I think that the chicken, bacon, apricots, cranberries and chestnuts are essential for the delicious and unique flavour this pie has! N.B. Please try to use high meat content sausages or sausagemeat - it makes all the difference to the taste, plus cheaper sausages have lots of fat and bread added! Where the name came from - an old Nursery Rhyme: &amp;quot;Little Jack Horner sat in a corner, eating his Christmas Pie - he put in his thumb and pulled out a plumb, and said what a good boy am I&amp;quot;!!! I JUST had to name it after him, even though there are NO plumbs in this pie! Perfect for all types of parties, buffets, nibbles, Hors D'oeuvres, starters and aperitif snacks! I make up my toasted bread rounds ahead of time and store them in an airtight tin; the cheese rarebit mixture can also be made ahead, you just need to spread it on top of the toasted bread rounds and then pop them in the oven for 5 to 8 minutes. Perfect, tasty and very elegant! I usually use green olives, as I prefer the flavour when mixed with the cheese and tomatoes - but you could use black olives if you wish. I also use pimento stuffed olives to great effect, I am sure that almond stuffed olives would also be wonderful. Try to use a good quality thick sliced loaf of bread for the toasted bread rounds - it makes such a difference to the finished taste. 			<description>This cookie is a Christmas tradition started by my grandmother.  She used to always mail them along with her &amp;quot;Minnesota Bars&amp;quot; (#162331).
I have a note on the recipe card that it was originally a winner in Pillsbury's 1st Grand National by Miss Laura Rott of Naperville, Illinois.  (One bite and you'll know why it won.)
The original recipe called for one package of Rockwood Chocolate Mint Wafers.  I've never been able to find them in the store so I use Andes Mint Baking Pieces.  I'm sure you could also melt regular chocolate chips and add a little mint flavoring as well.
I posted the &amp;quot;refrigerator cookie&amp;quot; method because I think it's easier.  You can also chill dough for just two hours, then enclose chocolate in 1 tbsp. of dough.  Bake according to directions.

The better the chocolate, the better the fudge so try not to use plain supermarket chocolate chips  use good quality chocolate such as Ghirardelli or Lindt. Milk, semisweet, or a mix of chocolates work well. This uses less sugar than other other recipes so it's less sweet - people who don't usually eat fudge because they find it too sweet like this. They're really pretty, grainy looking,  slightly crunchy cookies with a wonderful taste!  The flavour is very unique- almost vanilla-almondy, although neither are part of the recipe.  The Earl Grey is just smashing. If you're lucky there will be some beautifully falling snowflakes to add to the anticipation.   Double or triple the recipe for a crowd--this freezes and thaws nicely for another occasion, too. 			<description>This recipe makes a perfect chocolate chip cookie that is both chewy and crispy.  It is from Dorie Greenspan's excellent cookbook, &amp;quot;BAKING: From My Home to Yours&amp;quot;.  Including nuts is highly recommended.  
Some variations: for chocolate chocolate chip cookies, substitute 3/4 cup of flour for 3/4 cup unsweetened cocoa powder; for espresso chocolate chip cookies, add 1 1/2 tablespoons espresso powder after the vanilla extract; for a coconut version, add 1 1/2 cups sweetened (toasted or untoasted) shredded coconut when adding the chocolate chips; and for peanut butter chocolate chip cookies, substitute 1/2 cup of peanut butter for 1/2 a stick of butter and beat them together before adding sugar (and use peanuts). Enjoy!

Note:  The dough can be covered and refrigerated for up to 3 days, or frozen. If you'd like, rounded tablespoonfuls of dough, ready for baking. Freeze the mounds on a lined baking sheet, then bag them when they're solid. 			<description>An easy to throw together recipe that I made to accompany several meals over the Festive period this year. The trick for these roasted roots is to cook them en papillote (in a paper parcel) for the first 30 minutes - almost oven steaming them, before opening up the paper and allowing them to brown and go crunchy and crispy around the edges! Sprinkle them with sea salt, cayenne pepper and freshly ground black pepper before serving them in the paper on a flat plate. You can also make smaller individual parcels for full dining impact!! Use whatever root vegetables you have to hand. The vegetables listed in this recipe are the ones that I used for the last few times of cooking this dish, but I can see possibilities of many more veggies, especially when they are in season. You can reduce the fat content in this recipe by adding just a teaspoon of olive oil and putting the vegetables in a zip-lock bag with the oil, then give it all a good shake, I went FULL fat throughout Christmas and the New Year period! My version uses Tostitos Scoops (bowl shaped corn chips) and cream cheese for some of the ranch dressing.  I made these for Christmas Eve and Super Bowl Sunday, and they were a huge hit on both occasions!  You can make the filling in advance and refrigerate until you are ready to assemble and bake.  If I am taking these to a party, I fill the shells before I leave home and bake when I arrive at the party. Perfect for Thanksgiving or a holiday meal.  Another very good twist on this recipe is to replace the lime juice with balsamic vinegar and the scallions with shallots.
