Baked Stuffed French Toast

Moist & Delicious Pumpkin Bread

The name says it all, this is a very moist & delicious pumpkin bread... Great for Fall baking, bake sales, Holiday's, gift giving, and just savoring.
This bread needs nothing, but a dollup of whipped cream makes it look pretty :-)
I happen to have a very large loaf pan & that's what I use, not sure if you need 2 loaf pans or not for this, but I have also made this in a rectangular aluminum pan. -- posted by BlondieItaliana

Lefse- Norwegian Flat Bread

This is the best Lefse you will ever taste! I have such wonderful memories of learning how to make lefse at my Aunt Gwen's. She makes this with authentic, hand made Norwegian rolling pins and lefse sticks made by her father and handed down to her by her mother. Do not fear though! Lefse can be made with regular kitchen equipment like a rolling pin and thin spatula. Traditionally this is served warm with butter or for a treat with cinnamon, sugar or jam. My family always enjoys their lefse with Lutefisk on Christmas Eve. I hate Lutefisk but LOVE
lefse!

Here is a great site with step by step pictures and instructions

http://www.britta.com/smorgabritta/lefse/index.html.

OR BETTER YET here is a video I found on the web that will explain the process much better.

http://www.youtube.com/watch?v=VTmUuSoZShY

*NOTE:* If making more than one batch make sure to keep them separate. ONLY MIX ONE BATCH AT A TIME as mixture will become too sticky to work with. Time does not include cooling and resting time. -- posted by mama's kitchen

Sourdough Scones

Need to use up some starter? This recipe is perfect! Recently, I was looking for some way to use up excess sourdough starter rather than my usual go-tos for pizza crust and pancakes. I came up with this cinnamon-y recipe. My kids went nuts over it. I like it because it is not too sweet.

You don't taste the sourdough. I think the next time I make these I'm going to use them for Strawberry Shortcakes - yum! -- posted by Wendy H

Traditional Buttery French Croissants for Lazy Bistro Breakfasts

I do not profess to make these all the time; living in France gives me access to wonderful croissants and other French breakfast pastries, However, these are even BETTER than MOST I can buy at the boulangerie, really! It is a time consuming process to make them, but the results are well worth the effort. The butter-enriched dough can be made the night before and stored in the fridge, and it can also be frozen. Once you have the hang of adding the butter to the dough and turning and rolling it to trap the air in between the layers, you are nearly there with the technique. This is my own recipe for croissants, and the quantity yields between 8 and 12 croissants, depending on how accurate you are with the measurements of the triangles before they are rolled. I usually start my dough off in my bread machine for the mixing, kneading and proving - it just gives me more time in the kitchen to get on with other things. I have also given the traditional method by hand, and the dough can also be mixed with a dough hook in a food mixer - choose whatever method is best for you! These croissants can also be frozen - before being baked; defrost overnight in the fridge before baking as normal. Eat these with freshly ground coffee, freshly squeezed orange juice, fresh butter and a selection of confitures, jams and conserves. -- posted by French Tart

Wisconsin Dutch Stollen

Many cultures have holiday breads. German Christmas bread goes by many different names in German: Stollen, Dresden Stollen, Strutzel, Striezel, Stutenbrot, or Christstollen. The traditional German Christmas cake, is a colorful collection of nuts, raisins, currants, candied orange and lemon peel, traditional spices of Christmas such as cinnamon, nutmeg, cardamom, mace or cloves, brandy or rum and lots of butter. This recipe is courtesy of the Prussian, Pomeranian and Westphalian immigrants who settled in the great Midwest of North America.
If your biscuit-challenged then try this I think you will be pleased with the results! for garlic-lovers add in 1/2 to 1 teaspoon garlic powder you can also add in dried herbs --- make sure that the buttermilk is very cold when adding in the melted butter this will form small clumps of semi hardened butter that is needed for the success of these biscuits I have suggested in the instructions to put the buttermilk in the freezer--- in place of buttermilk mix 1-1/2 tablespoons white vinegar with milk to equal 1 cup then allow to sit for 10 minutes mixing often --- these are best served still warm :) -- posted by KITTENCAL

This recipe is "tried & true" on many a Christmas' & since my book has seen better days, I wanted it here for safe keeping! ** I always make this with an added tablespoon or so of dried herb mix (savory) to the batter & bake in muffin pans that I've brushed liberally with the beef drippings. This make a great presentation & easy serving. *This recipe is easy to double -or- quadruple, in my family's case* ...Have a joyous Holiday... -- posted by Binxi

I have included 3 variations I came up with. We love this bread toasted. Yes...toasted. What can possibly be wrong about toasted cake? Try it...you just might like it.
Dresdner Stollen /Christstollen

Stollen has been sold at the Dresden Christmas market since the 15th century. Each year the city puts on a Stollen Festival to celebrate the food that takes its name from the Saxon city. In imitation of the gigantic Stollen baked in the city in 1730 on the occasion of Augustus the Strong's grand festival of baroque proportions, each year the bakers of Dresden produce a 3000 to 4000 kg stollen. It is cut into half-pound sections and served to the festival visitors. The following recipe won't supply an entire city but the two 12-inch loaves it produces will feed a good-sized family.

Magical Christmas Fairy Cakes - Christmas Fairy Cupcakes

Some recipe classics never go out of fashion and fairy cakes top the list
They are the stuff of childhood memories: just one nibble can transport you back in time and even today, no self-respecting children's birthday party would be without them. That said, why should the kids have all the fun? With just a little tweaking, fairy cakes can be turned into grown-up fare as well, perfect for a mid-morning coffee break, tea in the afternoon, packed lunch treats, OR for the Christmas tea table. The basic recipe is oh-so-simple so you can keep it plain or indulge yourself with extravagant toppings; for Christmas, I have used fondant icing snowflakes and edible sparkles/cake glitter. Some die-hard purists may omit the vanilla extract but I think fairy cakes are better with it added. Prep time includes the time it takes to decorate the fairy cakes. The edible cake sparkles and glitter is available from most good cake decorating or sugar craft shops. -- posted by French Tart

MOIST Panettone dotted with raisins and marzipan. The long rise creates a fermentation giving this bread flavor. This Moist sweet dough stays fresh a long time. Just wrap it snuggled in foil and then plastic wrap. Up to 1 week. Make great french toast and or bread pudding. This is a take off Jim Lahey's dough. he got me to make it! I hope you get to make it as well. So worth it! -- posted by ~Rita~

Cinnabon-Ish Cinnamon Rolls (Gluten-Free)

This is a combination of two or three recipes. Makes some absolutely delicious and decadent cinnamon rolls. The frosting is good straight out of the bowl. I have successfully substituted buckwheat flour for the millet flour in this recipe and a review has used oat flour to great success as well.
Singin' Hinnies - Northumbrian Tea-Time Griddle Cakes/Scones

Served warm and oozing with butter, these fabulous fruity griddlecakes make a great treat for breakfast or afternoon tea. I remember my grandmother making these when I was little; she lived in a very old stone cottage in Northumberland, and made these on a huge cast iron black griddle, or girdle as they were also called! We used to eat them hot from the griddle, with butter – in front of a roaring wood fire during the winter months. Singin' hinnies are a type of fried fruit scone or griddle cake, so called as they 'sing' and sizzle whilst cooking. 'Hinny' is a Northern term for endearment used especially to children - my grandmother used to call me "hinny". Similar to singin' hinnies are Northumbrian griddle cakes, also known as Gosforth gridies.
If you are making them for a children’s party or at Christmas, put coins that have been briefly boiled, then wrapped in greaseproof paper, in the middle of some of the singin’ hinnies. -- posted by French Tart

Almost No-Fat Harvest Pumpkin Cinnamon Rolls

I came up with this recipe one rainy Saturday morning when everyone wanted cinnamon rolls but I didn't want to take the time for "regular" ones. I had purchased a ball of pizza dough at the store so I used that as my dough for the rolls. Worked out GREAT!! This will probably be our Christmas breakfast.....easy and YUMMY!!! I am a "dump cook" so I approximate with measurement. :-) My kids LOVED these!!

Would be good with chopped walnuts, but my kids won't eat those very often. I have to call them "super food" to get them to eat ...but only occasionally. :-) -- posted by sconehead

Christmas Cherry Nut Bread

This is so easy to make as you just put everything, except the cherries, in a bowl and mix it, adding the cherries last. It is so pretty and so good. It is nice with a cup of tea or for giving in a pretty little basket along with some tea. You could put a pretty tea cup in the basket, too.
Cornmeal-Oatmeal Cranberry-Orange Loaf

My husband, being a true Texan, loves cornbread almost as much as he loves me. I was not a great cornbread baker, so I bought The Cornbread Gospels by Crescent Dragonwagon to learn how to make his tummy happy, and what a great book that turned out to be. Every form and fashion of cornbread you can imagine, and (almost) all good. This recipe is from that book, and has earned rave reviews everywhere I have taken it. It's beautiful, and the essences of orange and cranberry combined with the crunchiness of stone ground cornmeal sets it apart from other quick breads, and it will leaving you wanting more. I hope you like it as well as we do. -- posted by Feisty
