Vegetarian Indian Soup

I created this recipe to satisfy my wife's desire for meatless meals. We eat it as the main course when I make it. You can substitute mixed frozen vegetables for this recipe. Frozen vegetables will grind better then raw vegetables creating a fine texture to the soup. Because of the fine mixture of vegetables no one vegetable will stand out. Even your fussy veggie eaters will enjoy it because all the flavors work together. -- posted by Bar-b-blues

This light soup is a great way to slip corn and tilapia(of course)into your late-summer menu. Make it a meal; enjoy with a green salad & tomatoes a nice vinaigrette and of course oyster crackers. We made this soup and it was delicious! **However, the recipe said it was low in calories 288 and when zaar figured it out it came to be 324** Now, the question is - which one is right?
Bavarian Cabbage Chowder

My daughter-in-law gave me this recipe about seven years ago. They came to visit us and she made it for a supper for the kids. Of course, we all loved it. You could use Kielbasa instead of the vegetarian hot dogs and that would be good too! I have made it that way a few times and it tastes so good that way! When we have vegetarian guests, I make it the regular way for them and we still love it that way too. Cook time does not include the time for cooking the vegetables ahead of time. -- posted by OceanLuvinGranny

Poblano Corn Chowder

This soup was created as a way to use up some surplus corn, and it was a HUGE hit with every diverse set of tastebuds in both my family and my husband's family. The spiciness can be adjusted by adding more or less chipotle and adobo sauce. If you are serving kids, try using only 1 poblano and one chipotle, with no adobe sauce. You can add a little extra red bell pepper (sweet) for color, too. My 2 1/2 year old lapped it up this way. But even my pregnant SIL, who has acid reflux and isn't eating spicy food, made a special exception for this soup when it was spicy, because it was so good. It's flexible. I hope you like it :) The secret is really making the broth with the cobs and scraping off some of the extra corn bits :) But I think it might be okay with frozen corn too, in the winter or if you are short on time.

By the way, when I say chopped, I mean pretty big bite size pieces...You want some big chunks to bite into. Except the poblanos. Probably want to distribute those a bit. -- posted by Mudflower

Cheddar & Corn Chowder With Bacon Soup

I got this recipe from the Lifestyle Cooking Channel in Australia - and made it on a regular basis throughout winter. You can tweak a bit to suit your tastes. I add some vegetable stock to it when it needs thinning out a bit and I also add some basil and mixed herbs, but that is my personal taste. It is a rich soup, very filling and moreish. -- posted by ozzygirl

Three Sisters Corn Chowder

I cook a lot of different soups, but this is one of my favorite.
Creamy Vegetable Corn Chowder

This recipe, a family staple in the winter, comes from Rachel Ray. It is quick, easy, & very tasty. The original calls for "small potatoes"; I use buttery Yukon Golds for optimum flavor.
Note: I just made this again for supper. The potatoes took longer to cook than the recipe said. Next time I will start them cooking first and give them a little longer to soften up before I add the other veggies. -- posted by UGA Fan

Corn and Potato Chowder for Masako

We had our friends Masako and her husband from my hometown in Japan as guests for about 6 weeks last year. We toured the US - mostly the East Coast and the Southwest showing them all the fabulous sights. During our touring, Masako was introduced to potato and corn chowder and from that point on, every place we stopped she would ask me if the restaurant had corn and potato chowder. Knowing how much she loved this chowder, I knew exactly what I was going to make for her upon our return home. My favorite corn and potato chowder from one of the best places to eat bbq - Dinosaur BBQ in Syracuse and Rochester, NY. We try to eat there anytime we are nearby visiting my nephew - the food is great, but I just love their cookbook. Every recipe I've tried from the book is sooo good! This recipe is not the exact copy from the book, but very close to it. This chowder will thicken if you refrigerate and may need to be thinned out by adding some water to your taste. Alternatively, if you prefer for dietary reason, you can substitute milk for half-and-half. -- posted by Rinshinomori

This is the best corn chowder I've had. My aunt made it for Thanksgiving several years ago, and still remembering it I looked up the recipe. It calls for fresh corn on the cob, but canned or frozen will do the trick, just ignore the reserved cob part.
The original recipe for this chowder called for white fish & shrimp. My family is not a fan of seafood so I replaced the protein with chicken. You could also use left-over turkey. This recipe can also be prepared stove top. Just sweat the onions in a few tbsp of olive oil before adding broth, etc. Bring to simmer until potatoes are tender, blend & add the rest of ingredients until heated thru and slightly thickened. Serve with a nice loaf of bread & butter. -- posted by Tired Mom

Amaranth was also new to us - we found it at Good Foods in a bin where you only take as much as you'd like. I'm so glad I made this! Leftovers are yummy too.
Corn Chowder

Based on a recipe from Paula Boyer Roughny's book, Happiness Is A Kitchen In Maine. She says, "Immensely delicious towards the end of the time of year when local farmers sell fresh corn. At the beginning of the harvest your sensuality is more richly rewarded by eating corn on the cob and getting butter on your fingers." I confess that I use a can of corn instead of corn on the cob and still find this delightful! -- posted by mersaydees

Sopa De Elote (Mexican Corn Soup)

Posted from a Sparkpeople challenge for healthy recipes. I've made this but not recently. About time since corn is in season again!
From: Steven Raichlen's Healthy Latin Cooking
Epazote- I haven't had this and it turned out OK. Other names for it: Pigweed, wormseed, lamb's quarters, goosefoot and Jerusalem oak. He claims there is no substitute but I'm guessing thyme or oregano would work. -- posted by Chef Tweaker

Easy & Hearty Vegan Tomato Soup Chock Full O Veggies

Just because it's vegan doesn't mean it's tasteless! This soup is pretty rich and hearty, and it's a healthy meatless and animal-product-free version of the classic comfort food. It's a fun soup for the whole family, and your kids will LOVE it with grilled cheese sandwiches! I love my grilled cheese dipped in this soup. :) This is my very own recipe: my uncle is a professional chef and taught me how to cook in his massive kitchen but I can't do the insanely complex stuff he does. Thus while trying to find vegetarian and vegan recipes, I discovered this mixture by accident-- and have now perfected it instead of eating some overly salty Progresso crap.
Other Notes: 1) This is the UPDATED recipe, the first one was kinda rough, I've perfected it now. 2) You can also use 1-2 bay leaves for extra kick but I usually don't keep them around. 3) Try it with some extra orzo or ditalini if you want to make a meal out of it! -- posted by the80srule

Quick and Easy Crab and Corn Chowder

This is a recipe that I got from my brother recently and not sure where he got it. It is quick and easy to make and simply delicious. If you use the frozen hash brown potatoes and corn thaw them first. I usually use the fresh shredded hash browns from the dairy case.
Smoked Gouda Corn Chowder

A friend's son created this for one of our soup luncheons- delish! Try not to boil the soup, as this will cause it to break and have an unwanted texture. Stir soup periodically to prevent scorching on the bottom of the pan. Additional option: For a non-vegetarian option, fry and crumble ½ lb. bacon. Use the bacon grease instead of the butter for the roux. Add the bacon back to the soup with the salt and pepper. (You will use less salt because of the bacon.) -- posted by gnet

This is wonderful for any occasion. I even make this during the summer, when its 95 degrees out! You can purchase the Bay Scallops frozen or fresh..I prefer fresh but either is great! In case you don't know.. Bay Scallops are small and Sea Scallops are the large ones. Both can be used for thi soup but the Sea scallops are more beneficial to the soup. -- posted by Rachel<3

Creamy Quinoa, Corn, and Vegetable Stew (Vegan)

This recipe is loosely based on 'R's hearty breakfast stew' at R Thomas Deluxe Grill, in Atlanta. It is highly versatile, sometimes I also put spinach and mushrooms in it, but I think there are many more possible additions. I'm not actually vegan, and I eat this for breakfast with chicken. I used to eat a lot of carbs for breakfast, albeit healthy ones, like whole grain breakfast muffins. Since I started eating this, I feel so much better in the morning, it is still filling but I have considerably more energy. -- posted by Cleatuslives

Vegan Creamy Corn Chowder

This is a very simple recipe. I use unsweetened 'MimicCreme' for all my cream based soups. It is made from a blend of almonds and cashews and is dairy free, cholesterol free, gluten free, 100% natural, kosher and of course, vegan. It can be ordered from mimiccreme.com or Amazon.com. The mimicreme.com web site also lists retail locations where it can be purchased. Of course, feel free to use any non-dairy substitute, such as soy, almond or hemp milk, but it may not be as creamy (you can always thicken with 1 tablespoon flour + 1 tablespoon water or broth). -- posted by CinLin

I don't like vegetarian dishes and I don't like complicating recipes with too many fresh ingredients, so I simplified this and made it meaty.

Consider adding 1-2 tablespoons chopped fresh cilantro or some diced jalapenos to change up the flavor. You can serve this with warm tortillas, cheese crisp, cheesy jalapeno bread, corn bread, whatever. I suggest garnishing with a tortilla strips, a shredded Mexican cheese blend, or even sour cream -- posted by Chef #1534395
