Easy and Yummy Corn Chowder

I found the original recipe in Family Circle magazine. They say that it freezes well. This recipe is good and my kids love it too. It makes a lot, so plan on freezing some! -- posted by Vickiva

Hot and Sour Soup (Betty Foo's Recipe, Hunan Restaurant)

This is the recipe as taught in the Main Line School Night class on Regional Chineses Cooking by Betty Foo, chef & co-owner of the Hunan Restaurant in Ardmore PA.

Originally a Sichuan regional specialty, hot and sour soup has become a staple at every chinese restaurant, no matter what regional style they have as a specialty. This recipe is authentic to the region, both because Betty is from the region and based on review of Chinese regional cookbooks. Clearly, as with many soups, individual variations are easy and can vary the flavor considerably.

One of the ways I judge any chinese restaurant the first time I eat there is by the quality of their hot and sour soup ... this one is superb! -- posted by Gandalf The White

Irish Farmhouse Vegetable Soup

This was a demonstration recipe at Charlotte Anne Albertson's Cooking School (Wynnewood, PA), for "Awesome Soups with Brian Duffy" (Jan 24, 2006). Brian Duffy (http://chefduff.com) hosted the Food Network shows "Date Plate" and "Hot Trends 2005" and is executive chef at Shanachie, an Irish restaurant in Ambler, PA.

This will make 3/4 gallon soup, enough for 12 8 oz servings.

NOTE: "White chicken stock" is made by using unroasted chicken bones. If using store-bought chicken stock, use a low sodium variety and be careful when seasoning -- you don't want an overly salty broth. -- posted by Gandalf The White

4th of July Clam Chowder

Rhode Islander's love clam chowder. This chowder has an intermediate consistency between traditional New England clam chowder that has a heavy cream base and a Rhode Island clam chowder which is a clear broth style. This chowder captures the best of both types with a rich milky base that is not too heavy but allows the flavor of the clams and other ingredients to shine through. This is a great chowder to serve on a hot summer afternoon. -- posted by tlt295

The Best Chicken and Dumplings

This is the perfect comfort food for those chilly winter nights, and with the long simmer time it will nicely warm up your home. I adapted this recipe through a combination of many sources and a little ingenuity since I was dissatisfied with each of my individual attempts. None of them tasted quite right. The original sources were a cookbook called "the firehouse cookbook", which offered the addition of evaporated milk as a healthier (and still delicious) substitution for heavy cream. And the cookbook which added the necessary addition of vermouth is called "The Best Recipe". It's a constantly changing evolving recipe so feel free to offer your additions or suggestions. I'd love to hear them. -- posted by OwlMonkey

Easy Express Broccoli Soup

A thick hearty soup you can make in less than 30 minutes. If you can steam vegetables you can make this soup. Tasty and great for winter. Good for using up those vegetables in your crisper before the next shop. Can be frozen and reheated. Low in carbs & gluten free (if you ommit the bread), high in fibre. Very cost effective. -- posted by Chef #721261

Pampered Chef Loaded Baked Potato Chowder

This is a quick and simple recipe for potato chowder. I threw in 2 cups of fresh garden broccoli into the chowder instead of serving it as a topping. The recipe tells you how to make it using Pampered Chef products, but I boiled my potatoes on the stove and heated the cream cheese and milk mixture on the stove after combining. I didn't use the microwave. I thought it needed a little something extra for flavor, and I added regular onions, garlic, and cayenne pepper to the ingredients listed below, but you decide. I also used a handful of green onions instead of 2 or 3. If you're cooking for someone who is picky about ingredients, this is the recipe for you. Recipe is posted as if you have the Pampered Chef kitchen gadgets, but keep in mind they're not required for this recipe. -- posted by AmyZoe

Posted from a Sparkpeople challenge for healthy recipes. I've made this but not recently. About time since corn is in season again!
From: Steven Raichlen's Healthy Latin Cooking
Epazote- I haven't had this and it turned out OK. Other names for it: Pigweed, wormseed, lamb's quarters, goosefoot and Jerusalem oak. He claims there is no substitute but I'm guessing thyme or oregano would work. -- posted by Chef Tweaker

Quick and Easy Crab and Corn Chowder

This is a recipe that I got from my brother recently and not sure where he got it. It is quick and easy to make and simply delicious. If you use the frozen hash brown potatoes and corn thaw them first. I usually use the fresh shredded hash browns from the dairy case. Cooking time specified does not include the cooked bacon. -- posted by Kagemi

Smoked Gouda Corn Chowder

A friend's son created this for one of our soup luncheons- delish! Try not to boil the soup, as this will cause it to break and have an unwanted texture. Stir soup periodically to prevent scorching on the bottom of the pan. Additional option: For a non-vegetarian option, fry and crumble ½ lb. bacon. Use the bacon grease instead of the butter for the roux. Add the bacon back to the soup with the salt and pepper. (You will use less salt because of the bacon.) -- posted by gnet

I am not a fan of seafood chowders but my family is and I know there are a few of you here as well. You can also use halibut or haddock instead of cod.
Adapted from "Healthy Mexican Cooking" by Velda de La Garza.
This recipe can be made with any combination of seafood (shrimp and fish is typical of South Texas, although we’ve also seen shrimp and octopus, or just fish).

This is wonderful for any occasion. I even make this during the summer, when its 95 degrees out! You can purchase the Bay Scallops frozen or fresh..I prefer fresh but either is great! In case you don't know.. Bay Scallops are small and Sea Scallops are the large ones. Both can be used for thi soup but the Sea scallops are more beneficial to the soup. -- posted by Rachel<3

Creamy Potato Vegetable Chowder in Mini Bread Bowls

Now this is about the chowder ... And there are so many good recipes here on RecipeZaar for bread bowls and I sure some family recipes which are favorites, so I am not going to go into a recipe for that. Honestly, I tend to just order mine from my local grocer which are inexpensive and no work for me. But, if you like to bake ... go for it. I'm just more of a cook, not a baker, although I do, but I prefer not too if I had my choice. You can also use premade frozen dough, make your own, or any method you want. But this is about the chowder and the method of presentation. I love the bread bowls and it always seems to make a great presentation. This is one of my favorite things to serve for a football party on Sunday, or a BBQ for a small get together. Or just a nice dinner party with friends. It is fun and different. Serve with grilled sausage, BBQ chicken, pulled pork sandwiches, pork tenderloin or even kabobs. It makes this a great comfort food dinner. It takes a little work, but the soup can be made the day ahead which is the best part and I always make sure I have the bread bowls ahead too. This soup makes about 10 cups, so 5 medium size bowls of 8-10 mini bowls. -- posted by SarasotaCook

Corn and Potato Chowder--Simple, Flavorful, Versatile

Working on making meals just using what I have in my kitchen. This one is a total winner! Any good cook knows how to tweak a recipe and this one is very forgiving. Exchange--raw onion, raw potato, shredded frozen potato, different herbs--whatever. But this concoction was what I had on hand; and it turned out well enough to post. I really feel the can of cheddar cheese soup (that I've had in my cupboard waiting for a use) made the difference.
Tortilla Soup With Chicken & Veggies

Cheesy Ham and Potato Soup

This recipe was born out of a need to use some leftover ham. I found a recipe sort of similiar on allrecipes, made it and was sorely disapointed, so I decided to make up my own. Perfect for a chilly day, served with a crusty bread.

Layered Corn, Black Bean and Chorizo Chowder

Yes layered soup, well that was their name ... "Creamy Corn, Chorizo and Bean Tortilla Chowder." It was at a small little Mexican restaurant in Taos, NM, about 10 years ago and it was amazing. The table next to me ordered it and it looked so interesting I had to try it. The soup was topped with small piles of the chorizo, avocado and olives, and cheese on top this beautiful creamy pale yellow corn chowder and then they took a bite and the bottom layer of the soup was black beans. It was picture perfect served in this big wide rimmed white bowl, it was almost to pretty to eat. Well it incorporates a spicy layer of black beans, onions and roasted jalapenos, topped with a perfect creamy corn chowder and then topped with small piles of the chorizzo, diced avocados with olives and a pepper jack cheese. A squeeze of lime and cilantro. Take advantage of cooking the chorizo, black beans and chowder well ahead of time so when it comes time to serve ... just reheat and plate up. I serve this with my chicken enchiladas with a red sauce. This is a great dish for friends or just family and it is really simple. Make some margaritas and time for party. -- posted by SarasotaCook

Creamy Quinoa, Corn, and Vegetable Stew (Vegan)

This recipe is loosely based on 'R's hearty breakfast stew' at R Thomas Deluxe Grill, in Atlanta. It is highly versatile, sometimes I also put spinach and mushrooms in it, but I think there are many more possible additions. I'm not actually vegan, and I eat this for breakfast with chicken. I used to eat a lot of carbs for breakfast, albeit healthy ones, like whole grain breakfast muffins. Since I started eating this, I feel so much better in the morning, it is still filling but I have considerably more energy. -- posted by Cleatuslives

Hedda's Hearty Vegetable Soup - 0-1 Ww Points

A very hearty (and optionally spicy) tomato based vegetable soup. Originally received as a typed handout at a WW meeting - no trace of its source. The only change I made to it was to add pearl or pot barley. A big pot of this soup sits in my fridge when I feel the need to lose a few pounds. It is filling and virtually guilt free eating. Eat as much as you want! All vegetables and quantities are optional and any non-starchy veg would work. Tastes better when reheated. -- posted by Hedda Lettuce in Ontario

Perfect Chicken Corn Chowder

I've never had a better one. Been making this for years. Use a chablis, sauvignon blanc or any not-sweet similar white wine; it need not be a great wine but the wine DOES add that certain something. I've even been known to add a tiny splash of dry sherry at the finish. The soup is filling and delicious. Also freezes well. A vintage recipe, from my "olde" recipe file. I'll tell you how old it is: it calls for 17 oz. cans of creamed corn!
