The chocolate sponge cake recipe that I used was found here on Recipezaar from Derf and I added some additional guidelines and tips.  The chocolate glaze recipe is from AllRecipes.com.  Feel free to use the basic outline of the recipe to create your own petit fours.  Just use the basic components (sponge cake aka genoise, simple syrup, some sort of filling like frosting/jelly/buttercream/fruit curd, and glaze such as marzipan/fondant/ganache) and follow the assembly instructions given. 			<description>OMG!  These are to die for!!!  Got these out of our local paper for the holiday and just made them.  I used Giardelli's bittersweet choc. chips, Sucanat and whole wheat flour, but you may use whatever you have.  I doubled the recipe and got 5 custard cup sized cakes.  If you want more choc. lava, bake them for 10 minutes, less, 11-12.  This is so quick and easy and it looks like you slaved in the kitchen, yet takes a total of 20 minutes from beginning to end! 			<description>There was an o.k. recipe here on Zaar that I have worked on and changed to make these truly amazingly rich and chocolatey cupcakes. Don't be scared of the tiny bit of coffee it only deepens the flavor of the chocolate. These don't require any frosting but the kids love it with frosting and some colored sprinkles so that's what I typically do. I like to use my lazy version of Recipe #19353 (a little bit of this, a little bit of that) and they always look and taste wonderful. Found the original in The Washington Post who attributed the Ghirardelli Chocolate Cookbook. In homage, consider using Ghirardelli chocolate for this recipe. Whatever chocolate you use, use block chocolate, not morsels. ****dough needs 30 to 60 minute minimum chill in the fridge (good for making the day before)**** These turned out to be the star on the Christmas platters.  Several folks would not believe these were not purchased! They are that good with bittersweet chocolate &amp;amp; about 3+ teaspoons orange zest.
