Coffee-Chocolate Layer Cake With Mocha-Mascarpone Frosting

This four-star showstopping recipe is from Bon Appétit (April 2009). It's a little effort but it's well worth it for special occasions. For a richer, darker cake and frosting use part or all Hershey's Special Dark Cocoa.
Frosting must chill for at least 2 hours.
DO AHEAD: Cake (either assembled or not) can be made 1 day ahead. Cover with cake dome; chill. Let stand at room temperature at least 20 minutes before serving. -- posted by blucoat

Feathery Fudge Cupcakes

These feathery, moist, fudgey cupcakes are the all time chocolate lovers favorite. Relatively easy to make, healthy, and satisfying, these cupcakes are sure to be a hit with kids, at a party, or just to satisfy your own chocolate craving.

(Recipe was originally a cake recipe. To make as a cake bake for 30-35 minutes in two 9x 1.5- inch round greased baking pans.)

Note: These cupcakes are light and fluffy so piping frosting on them instead of spreading generally works easier with less possibility of crumbling.

This recipe comes from Better Homes and Gardens CHOCOLATE cookbook. It has been a family favorite for birthday cakes for years! -- posted by Jessa M

Chocolate Banana Cake from Canadian Living

The name "Chocolate Banana Cake" does not do this dessert justice. Not even remotely. Banana-chocolate chip cake is layered with white chocolate whipped cream and banana slices, while the entire thing is covered in white chocolate whipped cream and topped with chocolate ganache. Just incredible. Add nuts for extra flavor. The recipe comes from a Canadian Living cookbook and can be found on the Canadian Living website. Worth the time it takes to make, particularly for special occasions. -- posted by KimEBdos

Black Forest Cake

My daughter loves cherries. For her birthday, I've been making this cake. It is fairly simple and can be made 13x9" or with 2-8 inch rounds. I used 'light' cherries for the topping, and frozen dark for the cake itself. This choice is up to you, as long as the amount of moisture is equivalent. I also took the juice from the cherry topping and added it to the whip cream, to make it flavorful, so I wouldn't add additional sugar, and to color it ever so slightly. -- posted by Le Gout

She bakes the batter in muffin cups so the edges turn crispy and chewy like a brownie, but the inside becomes soft and fluffy like a cake. **The brownie cakes can be stored in an airtight container at room temperature up to 2 days. Easy and delicious chocolate cake for any occasion. The frosting is optional but keeps the cake moist. And on the top of the cake, some berries can be added before the frosting is put.
An important thing to remember is not to eat the cake with a glass of milk as the combination of chocolate and milk will cancel the positive effects against cancer. -- posted by Eva Fieffe

Tko Cookies - Thomas Keller Oreos

These delightful grown-up oreos are sold at Thomas Keller's famed Bouchon Bakery. They have a deep chocolate flavour, and a little salt to perfectly balance the rich filling. The recipe was printed in "The Essence of Chocolate" by John Scharffenberger. Plan ahead as the filling requires time to set up. These cookies are very versatile and you can play with the filling flavour. -- posted by blucoat

Milk-Chocolate Cremoso With Espresso Parfait

This is another recipe on my best-friend Judy's list for her summer party. Recipe by Chef Michael Schwartz from "Michael's Genuine Food & Drink" at 130 NE 40th Street, in Miami, Fl where it is a showcase for it's Chef/Owner's cuisine The dessert is listed as: "Chocolate Cremoso with sea salt, olive oil, sourdough crostini & espresso parfait for $9" . Miamians are assumed to be too bikini-conscious to indulge in this dessert - a decadent milk-chocolate cremoso (a silky pudding-like dish) drizzled with olive oil; however, it is one of the best-sellers at Michael's. "Some people are like, - olive oil & chocolate? But the olive oil reinforces the richnerss of the cremoso. Like you really need more richness.!" At least 4 hours chilling time The cremoso can be refrigerated for up to 3 days; the espresso parfait can be frozen for up to a week. From Miami's Got Good Taste in F&W Magazine, published in the December 2008 Edition - this is also a staff favorite. What is NOT to be liked? :) -- posted by Manami

Toll House Cake (Layer Cake or Bundt Cake- You Pick)

You'll love this delicious chocolate chip cake from Toll House. It can be made as a layer cake or a Bundt cake. Both are great! I found it in an old Better Homes and Gardens recipe booklet from the late 70's. It's different from all the other recipes I've found. It's a yellow cake with chocolate chips and creamy, delicious, chocolate buttercream icing! Be sure to use the mini-morsels because the regular ones will sink down to the bottom. If you just need a rich, chocolatey buttercream frosting, I have also posted the frosting separately.
Chocolate-Orange Cake

I love this cake for several reasons. I love chocolate and orange together, I love cake in general, and sometimes I like to cook without eggs or other high-allergen foods just to keep my game up, although this cake does require yogurt so probably can't be made vegan . I found the original recipe on a blog by Shyamala Ramanathan-Edwards http://srefoodblog.blogspot.com/, who based her recipe on one from the eggless baking book by Cintia Stammers, published by the Bhaktivedanta Trust. Then I put chocolate in it.
I have never made the orange-sultana (raisin) filling, instead using (eggless) orange curd such as http://www.recipezaar.com/fresh-orange-curd-357753 and/or chocolate ganache. -- posted by Shoga-chan

Adapted from "Sky High: Irresisitible Triple-Layer Cake via Leite's Culinaria. I don't need to tell you that this cake is a little insane to make. But I can tell you it's worth it, and not nearly as complicated as it might seem from the outset. It's a one bowl (plus food processor) cake, the jam comes from a jar, ganache takes two minutes to make, and the next time - - the marzipan will come from a tube, already made, rather than making almond paste from scratch. -- posted by Manami

Chocolate No Bake Bundles

Yes ... a desert from me. I'm not too much into desserts, but this is worth mentioning. My girlfriend made these for a bridal shower we both attended last month and they are absolutely delicious. Crunchy, sweet and even though I like chocolate, I'm not a "chocoholic," so for me to really like these, it says a lot. They just firm up on the counter and take minutes to make. A perfect like snack for a party. She found the recipe in a small local cookbook from her home town in TX. She cooks very little, but loves to bake, however, she admits ... her idea of baking is never having to turn on the oven. Well, this was the perfect dish for her and it was a hit with everyone. So I had to share. -- posted by SarasotaCook

Hannah Obee's Salted Caramel Chocolate Cake

This cake is unreal! It is so scrumptious and I only allowed myself a tiny taste! Delizzzzous! Thi cake is one of the final three in the 20th birthday cake competition at BBC Good Food. This dark, rich, moist delectable cake is one of the desserts we are serving for our Thanksgiving Dinner. All family members are invited and we fill up the DR, the patio off the DR, the two lobbies and the hallways! Good Food magazine, November 2009 issue.:) The recipe calls for golden syrup and since the recipe is English, I think it called for Lyle's Golden Syrup. I know it can be found in NYC & other large cities - we found it in a specialty store here in South Miami. A good substitute - Steen's Cane Syrup - good luck.
Garth Brook's German Chocolate Cake With Coconut Frosting

Trisha Yearwood says every February, when it's Garth Brooks birthday, she makes this beautiful and delicious cake for him. She says last fall, Garth made a sad statement like only three more months until you make me that awesome German chocolate cake again! She made the cake the next day. She doubles the frosting recipe to frost the entire cake, because Garth likes extra frosting, but one recipe will frost the tops of the layers and do the trick just fine- unless you are Garth! If you have some frosting left over, it's good spread on graham cracker or on brownies. Okay, it's also good right off the spoon!
This Devil's Food Cake recipe, from Mrs. Fields, is the ultimate in chocolate cakes. The extreme moistness of this fudgey chocolate cakes makes it a real winner. It works beautifully for frosting or decorating due to the fact that it is very sturdy. A family favorite! -- posted by Jessa M

Pecan Pie Brownies -- Version II

Here's how to please chocolate lovers and pecan pie lovers with one scrumptious bar. These are the creation of Camilla V. Saulsbury and appeared in her book: Brownie Mix Bliss. These bars have a bottom of chewy chocolate brownie topped with the familiar brown sugar pecan goodness of pecan pie. The author prefers a cakey brownie to contrast with the pecan filling which is why she calls for the three eggs in the brownie batter. But if you want a fudgy brownie, reduce the eggs to 2. Do give these a try! -- posted by Lorraine of AZ
