Choc Chip "kool-Cookies"

I got this recipe this morn from my friend Sharon Kool...hence, Kool Cookies ;-) Here in the tropics, cookies go soft quickly so the texture of this dense, chocolatey crunchy biscuit is just perfect for us, and taste is good too. Cook time can be extended by five mins if you prefer a super dense bikky. Very filling. I am storing this recipe for safekeeping, but do not yet know how many it makes. Recipe calls for unsalted butter yet adds salt later? Personally I'll use salted butter but no extra salt. It's the sort of cookie that will survive two days in a school bag with minimal damage, unless eaten first! -- posted by RubberDucky AU

Italian Chocolate and Nut Cake (Panforte)

Just saw this on five's Cooking the Books and wanted to hang onto it. It comes from Fantastico! recipe book by Gino D'Acampo. I love the idea of a quick chocolate fix that looks elegant and doesn't require cooking! Cooking time = cooling time, 2 hours for 'cake' to set, then another hour for the topping to set.
Chocolate Cupcakes With Chocolate Ganache by Roland Mesnier (Ex-

The 65-year-old Mesnier survived 25 years and five presidencies as White House executive pastry chef before retiring in 2004. His annual White House gingerbread houses are legendary, and he's considered an international expert on spun sugar.
Rosalynn Carter hired Mesnier in 1979, snagging him from the Homestead Resort in Hot Springs, Va.
For the next 25 years, he delighted the first families and visiting dignitaries with his elaborate desserts and sugar creations. Mesnier says he enjoyed his time with all of the families and appreciated their differences.
This is his recipe.

Spooktacular Halloween Pudding Cups

Super fun Halloween treats that the kids are sure to enjoy. Easy to make and look great to!! I got the idea off of another website that used chocolate pudding but I thought using vanilla and dying it orange would be really cool since the pudding and oreos together would be traditional Halloween colors. This recipe can be easily divided in half and so on. For the pudding I used the kind that you cook verses the instant. I think the cooked pudding has a much nicer and thicker consistancy. The amount below for the oreos is a guesstimate because it wouldn't let me put down 1 large package of oreos but either way just one regular package of oreos crushed is what you need. Enjoy! -- posted by mamawheezy

Hannah Obee's Salted Caramel Chocolate Cake

This cake is unreal! It is so scrumptious and I only allowed myself a tiny taste! Delizzzzous! Thi cake is one of the final three in the 20th birthday cake competition at BBC Good Food. This dark, rich, moist delectable cake is one of the desserts we are serving for our Thanksgiving Dinner. All family members are invited and we fill up the DR, the patio off the DR, the two lobbies and the hallways! Good Food magazine, November 2009 issue.:) The recipe calls for golden syrup and since the recipe is English, I think it called for Lyle's Golden Syrup. I know it can be found in NYC & other large cities - we found it in a specialty store here in South Miami. A good substitute - Steen's Cane Syrup - good luck. That is what came up when I googled it ;) -- posted by Manami

Fat-Free Banana Fudge Brownies

A fat-free alternative to a classic dessert. I used cake meal to weigh down the texture of the brownies, which sometimes fluff up too much when oil or butter isn't used. It also gives the brownies a rich, deep, sweetness and retains moisture better. Also, the course kosher sea salt (preferably Mediterranean sea salt) is a must. The flavor of the chocolate is really dependent on the salt in this recipe, so using good quality course sea salt makes a huge difference. -- posted by seattle gourmet

Sweet Peat

This sounds strange - in German it's even stranger, it's just "peat" (Torf). But I thought nobody would like the sound of that, so I added the "sweet". In fact this is a recipe which I got from a Thuringian lady who told me this was a traditional christmas treat in her family. Whether it's originally Thuringian I don't know; I only found a swiss variety of it called "chocolate peat" (Schoggi Torf). It reminds me of brownies but differs from them in that it's only made with chocolate, not with cocoa powder. It's very dense and rich and tastes fantastic, and I'm really curious what the calculation will tell us about the energy... So, the patient information leaflet says that you have to cut it into SMALL cubes, much smaller than brownies, in order not to overdose it. For risks and side effects DON'T ask your doctor!
Servings are a guess - I actually never counted how many cubes I got. -- posted by Mia in Germany

Vegan Double Chocolate Kahlua Cookies

I love to bake with liqueurs and came up with this easy to make, versatile vegan cookie. These are chocolaty and delicious. I use soy creamer (SILK) hazelnut but any flavor of soy milk or creamer will do. You can switch up the flavor profile, for example, maybe use Hazelnut Liqueur with hazelnuts, Amaretto with almonds, etc... Please let me know what interesting combos you all come up with. Will be doing the same :) -- posted by Ashly1021

Garth Brook's German Chocolate Cake With Coconut Frosting

Trisha Yearwood says every February, when it's Garth Brooks birthday, she makes this beautiful and delicious cake for him. She says last fall, Garth made a sad statement like only three more months until you make me that awesome German chocolate cake again! She made the cake the next day. She doubles the frosting recipe to frost the entire cake, because Garth likes extra frosting, but one recipe will frost the tops of the layers and do the trick just fine- unless you are Garth! If you have some frosting left over, it's good spread on graham cracker or on brownies. Okay, it's also good right off the spoon! Enjoy! -- posted by Sharon123

Simple Flourless Chocolate and Chestnut Truffle Cake With Fresh

This is absolutely DIVINE! The texture is smooth and somewhere between a chocolate cake a chocolate truffle. If you love chocolate, you'll love this as its just out of this world. A good substitute for those who don't like Christmas pudding, though I bet everyone will go off Christmas pudding once they taste this! Double or Triple the quantities for a larger party, a small slice is usually enough as its very rich. The brandy is optional and comes through more as a subtle flavour than anything else but feel free to add more to the cream if you prefer a stronger flavour (I do). If I make this during the summer I would leave out the brandy. Also this cake needs to be made at least a day in advance and it freezes well too. -- posted by robd16

Chocolate Chocolate Chip Cake

My nana used to make this cake and now it's a favorite of my family and friends. What makes this cake unique is it starts with a box of yellow cake mix. It's got just the right amount of chocolate so it's not overly sweet. Additional chocolate chips can be added for serious chocolate lovers. It's great served warm as the chocolate is gooey but I think it gets even better the next day. Super easy recipe that starts with a mix but with a few additions it tastes like it was made from scratch. -- posted by Twinsmommy in WA

I haven't tried this recipe yet but I couldn't pass up posting it because I don't want to lose it and others might enjoy a "legal" cookie recipe. I'm totally guessing at the yield. Zaar is listing the calorie and fat content (mostly fron the nuts) for a dozen cookines. Dividing 12 into that amount breaks down to each cookie having 33.5 calories. If you wish to lower it more just use less nuts. -- posted by Annacia

Mole Poblano Classico -- Classic Mexican Poblano Sauce

Mole is a rich, dark, reddish-brown and smooth sauce made spicy and robust with a depth of flavor from a creative blend of seasonings that most often includes dried chiles, onion, garlic, and ground seeds (such as sesame or pumpkin (pepitas). But its best-known ingredient is unsweetened Mexican chocolate, which is used sparingly. Mole poblano is the sauce most commonly known outside of Mexico as mole sauce, although there are many different types. Courtesy of the Whole Chile Pepper Book, this classic Mexican sauce is excellent with poultry; serve it over a turkey or chicken breast. It is also terrific as a sauce over shredded chicken or turkey enchiladas. -- posted by Molly53

This is a composite of several recipes in hopes of making a version that is less fattening, but still satisfying. There are other versions that use 2 tbsp fat free sour cream instead of the banana. There are many types of flour that have been cited, including rice flour for gluten free. Also different sweeteners available such as sucanat. Egg beaters can be substituted, and oil can be left out all together, substituted with apple sauce. -- posted by Chef #1450658

Chewy Chocolate Gingerbread Cookies

I originally found this recipe on a baking blog, Cookie Baker Lynn. I made one major change to the recipe; melting the chocolate and incorporating it into the batter instead of using them as chunks in the cookie. I searched here and found two recipes for these cookies each giving credit to Martha Stewart's website. Both used chunks of chocolate rather than incorporating in the batter. I think this is a significant enough change to warrant another recipe and to claim my own spin ;) These cookies are thin chewy chocolatey goodness in every bite. Prep time includes chill time. -- posted by invictus

“guilt-Free Ice Cream Wannabe”

This delicious low-calorie dessert is a great way to satisfy your craving for a big bowl of chocolate ice cream without blowing your diet. The thickness of the Greek yogurt provides the creamy texture of ice cream for just a fraction of the calories. Also, by using frozen berries, the yogurt freezes as they are mixed in, giving the cool, frozen texture of real ice cream. The Fiber One cereal sprinkled on top provides a nice crunch and textural contrast - enjoy! -- posted by Chef #1453068

Pecan Pie Brownies -- Version II

Here's how to please chocolate lovers and pecan pie lovers with one scrumptious bar. These are the creation of Camilla V. Saulsbury and appeared in her book: Brownie Mix Bliss. These bars have a bottom of chewy chocolate brownie topped with the familiar brown sugar pecan goodness of pecan pie. The author prefers a cakey brownie to contrast with the pecan filling which is why she calls for the three eggs in the brownie batter. But if you want a fudgy brownie, reduce the eggs to 2. Do give these a try! -- posted by Lorraine of AZ

Thanksgiving Pumpkin Blondies

From The Best 50 collection of cookbooks. This is straight out of the Brownies and Blondies edition. A little of this goes a LONG way! Not really a blondie by my standards, but it passes off as an interesting bar-type dessert. PLEASE NOTE: Because most people are not really used to tasting molasses, it may take a few bites to fall in love with this recipe. I did not like it at all when I first tried it. But, after giving it a second bite, I found I can't get enough of it. This seemed to happen with EVERYONE who tried it. So, please, before giving an unhappy review, try it again. If you find that the molasses is just too much to handle, try cutting the topping ingredients in half. It really does make a lot of topping as it is. I hope you enjoy this! -- posted by the_cookie_lady

If you try this and have any suggestions, please let me know! -- posted by The Wallaces
