Black Bean Chili

This is an awesome black bean chili that I modified from the "Red Hot Gourmet". By adding a little more stock you can make it into a hearty soup instead. You may also substitute canned beans or use more jalapeño peppers for a hotter chili. While it can be ready in less than 3 hours, the longer it cooks, the better it gets. -- posted by Converting to vegan

Chilli Butternut Squash (Pumpkin) With Quinoa

A quick, easy, and delicious recipe I discovered in "olive" magazine (December 2007). Listed as low glycemic index and low fat, it has become a firm favourite simply because it tastes so good! I've dramatically cut down on the onion and garlic (they don't always agree with me! :-( ) and have even left them out and still had a tasty meal. :-) If you're desperate to add salt, add it right at the very end (i.e. when it's on your plate) to keep the levels lower. ;-) And if you have some left over, so much the better - it tastes great the next day! -- posted by Seznam

Chili Cookoff Winner

this is my chili recipe. it won the "people's choice" award last year at a superbowl party. it is a little spicy - but not too hot to enjoy. add cooked ground meat if you like, but i like this without. it is also nice to top it with chopped fresh jalapeno peppers. also - i use all organic ingredients. if you live near a trader joe's market, they sell all of these ingredients in organics for less money than the regular items cost at most grocery stores. -- posted by adams.wifey

Dr. Schmittmann's Veggie Chili

As a friend of mine says, "chili is one of those things that you can add to/take away from and still have one good meal." That being said, use this as a base recipe and have fun changing up the veggies and cleaning out your fridge and pantry! My friend got this recipe from Dr. Schmittmann, the smartest woman she knows who actually has her PhD in theortical physics. This dish can stand on it's own, but you may enjoy serving with a baked potato or cornbread.

A funny story about this recipe is the first time I made it for my husband he said, "I thought you told me this was vegetarian." Even after I told him it was, he still insisted there was meat in it. My friend and I got a big kick out of that! -- posted by Emily Elizabeth

Spicy Vegetarian Chocolate Chili (Crock Pot - if Desired)

This is a slightly sweet, yet pretty spicy chili that is sure to please even the non-vegetarian chili lover! I challenge anyone who says "EWWWW! Chocolate and Chili??" to try this! It is delicious! You can make it not so spicy by using cutting back chilies. To crock pot you can make the chili a day or two in advance and refrigerate until you are ready to start the crock pot. You can make serving this more fun, by buying individual sized bread bowls or large crusty French rolls. Cut out wedge along top of the bread, hollow out the middle; put bread on a plate and spoon in the chili. Top with desired toppings and serve. -- posted by Sooz Cooks

My Favorite Vegetarian Chili

This is a combo of recipes 51140 and 32681. I have made it several times and I figured it would take less time if I put the recipe all together. DH loves, loves, loves this!!! He says it's one of the best chilis he has ever had and he is an avid chili eater! This recipe is much better if made in advance and stuck in the fridge overnight (Or for a few hours) and re-heated the next day. Its flavors come together better and it thickens up better. If not, it is thin and more like a soup.
This is Weight watchers friendly! -- posted by BethanyJoseph

Vegetarian Chili Everyone Will Love

I made this one night when I was looking in the pantry for things that I could throw together so that I didn't have to go out to the grocery store (it was sleeting). This chili is so warming and filling, plus the leftovers are even better the next day.
Vegetarian Chili (Good for Non-Spicy Lovers)

I found the base for this recipe in a cookbook for Diabetics ("Month of Meals"); I modified it a tiny bit, but it’s mostly the same. I really like meat sauce, but my roommate is vegetarian – we’ve found that the Yves brand fake-meat crumbles are perfect in this recipe & it makes us both happy. Plus, it’s a lot healthier!

If you’re really sensitive to spicy foods like me, this recipe has a great chili flavor without using a lot of chili powder; I typically use about 1 tablespoon. Of course, add as much or as little as you want.

By the way, this dish (like many chilis) gets even better the next day - it does wonderfully to refrigerate or freeze it. -- posted by Rei-chan

Black Bean, Butternut and Chipotle Chili

Wanted to make a black bean chili or soup and couldn't decide what recipe I wanted to follow so the result was a combination of several unique recipes found here on RecipeZaar. Red beans, butternut and corn is a classic combination in South American cooking. So why not black Beans instead? Adding chipotles just gives it a Tex-Mex twang. The combination of cinnamon, chipotles and barley malt syrup gives this vegan dish a spicy taste with a mildly sweet back note. (Each serving is a generous 1 1/2 cups and just 4 WW points as per the Recipe Builder. Exact portion amount will depend on how much liquid you add) -- posted by justcallmetoni

Warm Winter Vegetarian Chili

From FoodTV.ca, this is almost a thick vegetable soup. I served this topped with sour cream and shredded Tex Mex blend cheese and it was a big hit with my husband, who hates vegetables. This can also be made in the crock pot by cooking on high for 3 to 4 hours.
Boh Pik Dipemp (Aceh Ridged Gourd With Coconut)

Out in the village near Bireuen in Aceh, Indonesia, this is one of my favorite recipies the my neighbour taught me. It is also nice to use this 'pemp' spice paste with a medly of green eggplants and pea-eggplants.
Spices in Aceh are ground on a flat grind stone, which achieves a very finely ground paste. Using a mortar and pestle, or a blender will have a less refined paste. -- posted by Atjehfire

Vegetable Chili from Mexico

Restaurateurs Mary Sue and Susan were traveling in Mexico to find contemporary Mexican recipes for their restaurant, and this was one of their finds. They featured it on an episode of the Cooking show, "Savor the Southwest" which aired several years ago. It's easy to make, delicious and authentic Mexican. A cooking note: it's best made with either red or pink beans. As for chilies, if ancho is not available, other chilies cans be substitutes. -- posted by lynnski / LA

Italian Style Chili (Vegetarian)

This is a recipe from my best friends Italian mother. I have made it with her before so I know what's in it and approximate quantities. It is different than my mothers chili but I have grown to love it. The whole garlic cloves may seem strange at first but it really makes it special and has become my favorite part of the meal. LEAVE THEM WHOLE! There is a variation to this recipe : use 2 cans of beans OR 1 can of beans and 2 crumbled soy burgers. (I prefer the soy burger version). I added the corn option because I LOVE this chili with corn, but it was not part of the recipe (recommended though!). Served over brown (or white) rice this is a simple, healthy dinner you can serve to anyone. Freezes great and keeps awhile that way. -- posted by Suzy_Q

Veggie Lentil Chili Non Carne!

Not everyone wants to use minced beef or Quorn mince for a chili, so here's a version that uses Puy-style lentils. It's also a great way of using up (or disguising!) winter root vegetables. t's scrummy enough to get past some of the most devout meat-eaters I know, so why not give it a go, served with brown rice?
Punjabi Rajma (Kidney Beans)

This is my version of a recipe from the Hare Krishna website(www.harekrsna.com). This site is a goldmine for Indian vegetarian recipes. I also love the fact that Hare Krishna cooking doesn't use garlic and onions (which I do love), but substitute Hing or asafoetida powder. It's great when you're too lazy to chop/cry while chopping, and hing has its own healthy properties. I believe it is supposed to be an anti-flatulent for one thing.
This dish is sort of like an Indian bean chili (an oxymoron for some). I ate it mixed with some basmati rice I cooked in my rice cooker with a small piece of cinnamon stick and a couple of green cardamom pods. My husband ate it with tortilla chips the next day.
Some of the elements of the recipe were vague in the original recipe, so use your judgement! The cooking time is just a guess, and depends on your taste. -- posted by Shalabhanjika

I use Hormel vegetarian chili mix for a little extra substance. -- posted by Chef #1120064

Lafd Engine Co. No. 28's Vegetarian Black Bean Chili

Engine Co. No. 28, is a popular L.A. restaurant located in an historic building, which was constructed in 1912 as a Los Angeles Fire Department firehouse, which housed 2 engine companies. In 1912 LA's population was 400,000; and New Mexico and Arizona were being admitted into the Union. A trip to the restaurant, established in the 1980's has been called a "a big hug from America"; it serves American favorites and some history. Some cooking notes: although you can use canned beans equalling 4 cups, the restaurant uses dried beans starting with a one pound package which will yield about 4 cups of cooked beans. This chili is best when made one day in advance. The flavors develop better. When reheating, add water if necessary and heat slowly to avoid scorching. The recipe had been published in the Los Angeles Times, reader request column. -- posted by lynnski / LA

Veggie Chili

This is a recipe in development.
I've made it for years without a recipe, but now I'd like to start perfecting it. This last time was the first I've used dried beans, but because we know that it takes more energy and fossil fuels to ship canned beans, my husband and I are learning how. In order to capture what we ACTUALLY did in order to perfect the recipe, I'm including the days between initially boiling them and cooking the chili... this was necessity, and I'll edit the recipe when I make it next.

This is a spicy, vegetarian chili that freezes VERY well. I like to serve it with cornbread or spoonbread and some cheese. -- posted by Kendra PeloJoaquin

Roasted Vegetable Chili (Vegetarian)

I was in the mood for a meatless chili and food a nifty recipe on the Kraft website. One change after another and soon I had a whole new recipe. Roast the vegetables the night before making double, you can use half as a side that night and have the rest as the starter for this dish. Tip: Since the chayote cooks much slower than the other squash be sure to cut it into smaller pieces. As presented this is 5 thingies on the Momentum Plan. -- posted by justcallmetoni

2-Bean 4-Alarm Vegetarian Beer-Base Chili

The possibilities for this recipe are endless, depending on what kind of beans you like and carnivorous types checking out this recipe who want to use traditional refried beans, or vegetarian and/or fat-free refried beans. I was looking at various vegetarian chili recipes, and was always disappointed with all the non-bean "chunks" I kept picking up with the fork, or thought these chilis were too sweet. Yes, I love veggies but was always grossed out by tomato chunks (in spite of loving tomato sauces and my special tomato soup.) If you want to make this vegi-chili "con corn", a can of 15-oz La Fe corn is the BEST for this recipe, but I wanted to keep the posting simple so I left it out. 1-2 tbsp garlic powder works if you don't have chopped garlic at hand. All kinds of beer suffice for this recipe but I found that Coors Light and Corona really worked the best. All kinds of refried beans can be used-- I like using a can of vegetarian refried pinto beans with chipotles for this recipe, it's what makes it 4-alarm! -- posted by the80srule

A thick rich chili, where you won't miss the meat at all. I make double batches and freeze it for quick meals during the winter. The combination of veggies makes this taste so good. I usually puree all the veggies together to make a rich broth and and sneak the veggies in for unsuspecting kids. Try it. You'll like it. And it's easy on the budget. -- posted by Grace4Gayle

3-Bean Vegetarian Chili (Goya Beans)

This came off the side of a Goya can of beans (to give credit where it is due) and I'm thinking about subbing the crushed tomatoes with a 28-oz can of pumpkin. Putting it here for safe-keeping. The topping listed came with the recipe but I prefer just to use some cheese to make chili cheese fries or nachos. I also would like to add extra salt and pepper because tomatoes have a natural sweetness, and most vegetarian chilis are too sweet because the tomatoes and beans make up for the lack of beef. -- posted by the80srule

Three Bean Vegan Chili

A quick and simple spicy vegetarian/vegan chili with beans and pasta. I grew up loving my mom's chili with beef. When I gave up red meat, I switched to ground turkey, and adjusted the recipe slightly. I later increased the bean ratio and cut out the meat entirely. -- posted by jenms

Not your traditional chili. I often play around with it adding different kinds of beans, sometimes 2 cans sometimes 3. -- posted by Kristin D.
