Not for Sissies Red Hot Chili - Crock Pot Chili

I don't remember how I came about this recipe, but it beat out my dad's chili in our family chili cookoff! This is powerful chili, so tailor the spices to your liking. I like to serve my chili over corn bread or fritos, and top it with cheddar and onions. My mom in law serves it over rice. -- posted by GirlyJu

We enjoy vegetarian chilli and this looks likes a quick and easy recipe. It is low fat and full of veggies and beans that are great for you. I originally found this recipe in BBC Easy Cook magazine.
White Chili

This dish uses hot pepper sauce made from jalapeños; it's milder than the red hot pepper varieties. Stirring frequently toward the end of cooking time prevents the bean-thickened broth from sticking to the bottom and scorching. Serve with a spicy jalapeño corn bread, or corn muffins or corn sticks.
Veggie Lentil Chili Non Carne!

Not everyone wants to use minced beef or Quorn mince for a chili, so here's a version that uses Puy-style lentils. It's also a great way of using up (or disguising!) winter root vegetables. t's scrummy enough to get past some of the most devout meat-eaters I know, so why not give it a go, served with brown rice? Mix in a couple of tablespoons of natural yoghurt, if you want a less spicy version or if the chili is too hot. -- posted by English_Rose

This came from a cookbook I borrowed from the library and I am sorry I didn't write down the name of the book. We first made this in the dutch oven over the camp fire. Anything over a fire is good! But this is just as good done in the crockpot for 8 hours or on the stove for 35 minutes! I use a lot of garlic and a LOT of heat - so feel free to tone it down to your tastes!Enjoy - it's healthy! -- posted by Chef #694088

My Neighbor Renee's Perfect Chili!

There are a bajillion chili recipes on here, but this is my fave. My neighbor Renee, a Midwestern gal, made this for Halloween a few years ago and i fell in love. Didn't know I loved chili so much! Posted at the request of another great gal...ncmysteryshopper! Update 10/7: ncmysteryshopper had some difficulty finding some of these specialized pinto beans so she created a similar chili with the same flavors, but without the fancy beans. For those of you in a non-pinto friendly area, you can give her recipe #329160 a try-looks yummy too!! -- posted by Liza at Recipezaar

Sexy, Spicy Chili for the Gourmet Cowgirl - Wstrn North Carolina

I came up with this Chili after trying to match the ingredients in recipe #328352 - an OUTSTANDING recipe! It is so delicious, I figured I would share my version for those who do not have the products for Liza's FABULOUS chili recipe. The different peppers add a number of levels of heat to the chili and the different flavors are discernible. I do believe this is the best chili I have ever put in my mouth! If you do not like spicy foods, keep searching. This chili is spicy, but certainly not over the top torture! I found it paired well with Amstel Light, Corona and Negra Modello! -- posted by NcMysteryShopper

Pamela's Southern California Beef Chili

I created this years ago for my husband and his family. I entered it in a Chili cook off on IVILLAGE several years ago and it was printed on their web site. It also came in second in a Elks Lodge Chili Cook off. I've given the recipe as a gift for the holidays too. Just place the spices in a pretty jar, then put everything in a basket along with nicely printed instructions. BEWARE! This recipe is hot! -- posted by Pamela Bennett

Cheryl's White Bean Chicken Chili - Ww Points = 4

Something I just threw together today...4 points per serving if you can get 8 servings out of it! NOTE regarding the spices. I really don't measure these. I just kind of throw them in so the amounts listed can be adjusted per your tastes. By the way, the Cracker Girl All-Purpose Seasoning is something that I ordered online by way of a friend's recommendation. I imagine you can use whatever all-purpose seasoning blend that you prefer. :-) -- posted by senseicheryl

Chili Beef Cottage Pie

A really easy family mid week meal that can be on the table in about 30 minutes. You can use any ratio of potato to parsnip or all potato or all parsnip for the topping. If you can't find kidney beans in chili sauce, just add 2 tsp of chili powder and 50g chopped roasted peppers instead. This isn't over spicy, making it fine for the younger members of the family.
This can be made ahead of time and heated in the oven for about 30-40 minutes. -- posted by Noo

Punjabi Rajma (Kidney Beans)

This is my version of a recipe from the Hare Krishna website(www.harekrsna.com). This site is a goldmine for Indian vegetarian recipes. I also love the fact that Hare Krishna cooking doesn't use garlic and onions (which I do love), but substitute Hing or asafoetida powder. It's great when you're too lazy to chop/cry while chopping, and hing has its own healthy properties. I believe it is supposed to be an anti-flatulent for one thing.
This dish is sort of like an Indian bean chili (an oxymoron for some). I ate it mixed with some basmati rice I cooked in my rice cooker with a small piece of cinnamon stick and a couple of green cardamom pods. My husband ate it with tortilla chips the next day.
Some of the elements of the recipe were vague in the original recipe, so use your judgement! The cooking time is just a guess, and depends on your taste. -- posted by Shalabhanjika

* Some of the ingredients may be as unavailable to you, as they are to me; since I currently reside in Peru. You can easily find them over the internet. I use mexicoetal.com or any of the other mexican food sites around.

Usually eaten with onions soaked in lemon juice as ganish, over flour or corn tortillas.

*some like is sweeter and will add more sugar or chocolate. It's really a fun dish to play with because you can add more of, or remove whatever you think your in the mood for that day.

Nick’s Pressure Cooker “bowl of Red” - Traditional Texas Chili

This is DYN-O-MITE Chili.

Chili has a colorful history and is not a Mexican dish at all. It has roots in Spain and Portugal where a meat stew with peppers was made. Variations on this eventually made it to San Antonio, TX which many boast as having the best chili and is the home to the beginning of the Chili cookoff craze. Tradition has it that true Texas chili does not have beans. So this recipe does not include beans. You can vary the recipe by adding chopped tomato for a chunky rather than smooth stew. Serve with chopped jalapeno, cheddar cheese, and sliced green onion for garnish.
This recipe originated from a discussion with a friend and customer about chili. -- posted by Chef Nick #2

Easy Chilli Con Carne

This is a really simple and versatile chilli con carne recipe that I've perfected over an admittedly short period of time, but it seems to work pretty well.

It's really easy to adapt to vegetarian tastes - use whatever kind of tinned beans you like, mixed bean salads are easy to find at supermarkets. I really recommend that variation with tortilla chips and sour cream. It can be spiced up by varying the chillis to your preference. I usually chop them finely and put them in at the start with the garlic as it smells good.

My starting point for this was a recipe in a book called Just 1 Pot by Love Food, with no author specified.

This recipe is very much a work in progress so feedback would be very appreciated =) -- posted by cydon

Cajun Chili (Roux Based)

Delicious with or without beans. If made without beans, the chili can be served over elbow noodles for a delicious version of chili-mac. Don't forget to top with shredded cheese. What makes this chili different is the first step. The roux base gives the chili body and a saucy texture. I like that--body and sauciness! -- posted by gailanng

Kevs Chili

My husbands chili recipe, created after several tries and various iterations of other recipes, we found this one to have a nice flavor and just the right amount of heat. We recommend using the Paul P. chili powders but of course you can use your own combinations of what you have on hand. A blend of various chili flavors in not overwhelming amounts seems to be the key to a spicy yet palatable chili. -- posted by Heather in Utsunomiya,Japan

Texas Senator Sam Pendergrast "greasy Spoon" Chili

As a kid, there was a "greasy spoon" across from my school. I remember running full tilt to get my favorite Winter lunch, a steaming paper cup of their chili with crispy saltines to crunch up on top. You could tell a good batch because the bright red "grease" would begin to soak through the cup before it was time to go back to class. I searched for years to find this recipe and finally caught up with it in a cookbook called "Texas Home Cooking" by Cheryl and Bill Jameson. It's typical of what was popular in the 1940's and is comforting and delicious to fans of chili. Follow it to the letter the first time and "adjust if you must" the next time. It's not terribly hot, just very, very spicy. Your favorite "Chili-Head" will love you for making this recipe. Also, the amount of cumin is not a mistake in case, you're wondering. It's not health food, but anything in moderation is ok. Enjoy! -- posted by Max Thames

Laura Moon's Chili

This one appeared in Neil Gaiman's novel, "American Gods." When Shadow Moon gets out of prison he eats his first meal as a free man at a bar that claims to have the best chili in the state. After a couple mouthfuls he decides that the chili is good, but definitely not the best in the state. He then begins to reminisce about his wife's far superior chili. No recipe was given directly by Gaiman, but many of the the ingredients were mentioned. I took what Neil wrote and expanded upon it to create this recipe. To freeze: Put in a freezerproof container, cool and freeze for up to three months. Thaw overnight at cool room temperature. Preheat the oven to 350F. Bring the chili to the boil on the hob, then cover and reheat in the oven for 20min or until piping hot. This is great served in warm tortillas, with some grated mature Cheddar, guacamole, green chilis and soured cream. Put it all on the table and let everyone help themselves. Freeze a packet of tortillas alongside the chili, so you'll have them to hand, too. -- posted by English_Rose

72 Market Street Kick-Ass Chili

If you like your chili with a kick, this meaty, spicy one has it. The recipe calls for "chili-grind" meat, a cut you can ask your butcher to grind. The restaurant uses Bass ale but feel free to use any ale you like. This is the
chili that I make for pot-lucks, in part because it is requested, but also I can be pretty sure it will be consumed before the party is over. The recipe was developed by chef Leonard Schwartz at the 72 Market Street Restaurant in the Venice community of Los Angeles, California. The restaurant is no longer there but many of their recipes live on in print. For example, you can find the restaurant's meat loaf recipe in the New Basics Cookbook by Rosso and Lukins. This chili recipe was published in the Los Angeles Times. -- posted by lynnski / LA

Veggie Chili

This is a recipe in development.
I've made it for years without a recipe, but now I'd like to start perfecting it. This last time was the first I've used dried beans, but because we know that it takes more energy and fossil fuels to ship canned beans, my husband and I are learning how. In order to capture what we ACTUALLY did in order to perfect the recipe, I'm including the days between initially boiling them and cooking the chili... this was necessity, and I'll edit the recipe when I make it next.

This is a spicy, vegetarian chili that freezes VERY well. I like to serve it with cornbread or spoonbread and some cheese. -- posted by Kendra PeloJoaquin

This great tasting & super easy recipe is an adaptation of Mandi Foresters White Chicken Chili from the Rachel Ray show. The turkey gives the chili a great flavor and I also made the addition of corn niblets and extra chopped tomato to give the chili more interest.
From "The Everything College Cookbook." It works substituting ground meat for the beef cubes to save money, and I tend to use ground turkey or chicken because it is leaner without really detracting from taste. Just season the met well first. I have also found that substituting Anaheim peppers for the bell peppers gives it even more zing. -- posted by Vicki in Houston, TX

Wendy Richard's Chili Recipe - the Best Chili Ever!!!!!!!!!!!!!!

Are you ready for the BEST CHILI you've ever had? Only made this because I am a HUGE fan of Wendy Richard (MBE) who played "Miss Brahms" on "Are You Being Served" and she also played Pauline Fowler on "EastEnders". She recently passed away and printed her famous chili recipe on the back of her funeral program. (You can see a photo of that in here! Check out the photos for this recipe) I've had chili all over Texas and the South - I even made both recipes from "Throwdown with Bobby Flay" (both were VERY good) but I will tell you - hands down - THIS WOMAN'S RECIPE IS THE BEST CHILI I HAVE EVER HAD IN MY WHOLE LIFE! And when I say "THE BEST" I mean: "I am SO STUFFED I might explode - but I can't STOP eating this chili because it tastes so AMAZING". Ok? I tried to put it in the freezer - and ended up taking it out 10 minutes later and eating it again. Today I had it for breakfast on eggs, and lunch and dinner! Can't wait to have more tomorrow! I'm NOT sharing this batch with ANYONE! But I will share the recipe!

VERY URGENT/IMPORTANT: THE WHOLE SECRET OF THE RECIPE IS IN THE SCHWARTZ BRAND CHILI MIX!!!!!!!!!!!!!!! Use any other brand and it will only be a 2-3 star recipe! If you are in the USA the "Schwartz" brand chili mix in this recipe can be ordered online from www.Distantbrits.co.uk or any other British food sites. PLEASE ONLY use "Schwartz" brand if you want this to come out a 5 STAR recipe- if you use any other brand, like "El Paso", "Chichi's" "Ortega" or "McCormicks" it will be disappointing because those 4 brands I just named are nothing but salt and chemicals with very little spices. I HAVE MADE THIS RECIPE WITH THOSE 4 OTHER BRANDS, JUST TO COMPARE -WHICH IS HOW I KNOW, IF YOU USE ANYTHING BUT SCHWARTZ - IT'S GOING TO BE A DISAPPOINTMENT. PLEASE TRUST ME - IT'S SOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO WORTH IT TO SEND AWAY FOR THE SCHWARTZ BRAND, YOU CAN GET THE SCHWARTZ CHILI MIX IN 2 DIFFERENT HEATS: MEDIUM/MILD AND HOT. I PROMISE YOU - IF YOU ORDER THE SCHWARTZ AND DON'T THINK THIS WAS A 5 STAR CHILI - SEND ME AN EMAIL AND I'LL PAY YOU BACK FOR THE COST OF BUYING THE SCHWARTZ. OK?

If you can't find the British "Schwartz" brand, send the lady at distantbrits.co.uk an email requesting it. Tell her which kind of heat you want., "McCormicks" brand in the USA is very disappointing - even the "hot", it's not spicy and the taste really is missing something important. I even tried adding more cumin, and fresh Jalepeno's but McCormicks - it's just NOT AS GOOD as Schwartz, so - if using McCormick's- please know - you've been forwarned: it's not going to be a 5 star chili. If you're in the UK - you should have no problem finding this product.

ALSO - careful when ordered because the recipe calls for 4 Schwartz chili. That means chili MIX - NOT 4 bottles of chili powder!!!! (I say be careful because Schwartz also makes chili powder, and you don't need 4 bottles of chili POWDER for this LOL!)

I used the HOT Chili Mix, but Wendy specifed "Mild". Get whatever heat you are comfortable with. Be FOREWARNED: If ordering the "Hot" - just because it's from England doesn't mean it's not as hot as you think. While it is the most delish chili mix, It is 5 ALARM Texas hot!!!!! And this is coming from a gal who drinks "Franks Red Hot" straight out of the bottle whenever I have a craving! The mild is "mild" and also extremely delish.

Menier's Chocolate is VERY hard to find if you live in the USA. I could only find 1 place online that sells it (Distantbrits.co.uk) Otherwise, use a VERY DARK (Swiss is preffered). When you open the Menier - the actual chocolate says "Nestle", so I guess you could get bittersweet or semi-sweet Nestle. Just don't use Hershey (ugh!)

When it smells ready - eat it. You don't HAVE to simmer for 3 hours, as directed by Wendy. (Personally, I couldn't wait that long, it smelled too good) It even tastes amazing room temp hours later!

I promise you - if you make this recipe EXACTLY as is - with NO SUBSTITUTIONS ON THE CHILI MIX (you CAN make substitutions on the chocolate)- Your tastebuds will think you've died and gone to heaven. I can see why Wendy would leave such a fantastic Chili recipe on the back of her funeral program - people were probably begging her for years for this recipe.

When I make this for the next Texas chili cook-off - this WILL win 1st place - and I will give Wendy Richard all the credit since it is her recipe.

Huh! Who'd have thunk the best recipe for Chili would come from ENGLAND!?????!!!!!!

R.I.P. Wendy - and I thank YOU for all the years you've made me laugh and cry and for the gift of this AMAZING Chili recipe! I will be entering it into contests in your memory! I also hope all the people here will make this and enjoy it and it becomes a family favorite! -- posted by BBCFan

Chili Synergy

I had some leftover chuck meat and wanted to make chili. It seemed a natural match. I didn't want a Texas chili because I like beans, so I melded the two types. It takes a bit longer than making it with ground beef, but the flavor is superb. This is a traditional tomato-based chili with beans and a moderate amount of meat. If you want a meat lover's chili, use 2 pounds of chuck pieces and 1 1/2 pounds ground meat. The spice-heat level in this is light to moderate to my taste buds. If you know you are sensitive to spicy foods, reduce the pepper ingredients slightly. If you know you like things spicy, double them at the least and use a particularly spicy chili powder. -- posted by GFJane

Jamies Chilli Con Carne

I was given 'Happy Days With The Naked Chef' and found that I enjoy Jamies style, he can be relied on for sensible recipes that work.
I decided to try his Chilli Con Carne for my son and husband one weekend when the girls were away. Good comfort food, served over rice, DH found this spicy while I thought it could be pepped up a little more (sometimes I surprise myself!!).... adjust for your own taste! Jamie recommends chuck steak, minced, but I used ground beef that I had in the freezer. I don't think the sun-dried tomatoes are traditional, but they are a nice touch!
Afterburner Chili

I developed this recipe while I was in the U.S. Navy stationed at NAS Whidbey Island, attached to the World Famous VA-165 Boomers as an AQ. Although the A6-E Intruder did not have afterburners, I am sure you will think the name is appropriate after you have a bowlful.

Afterburner Chili was created in response to my best friend's (Deli) challenge that an Iowa boy can't out chili a Texan. He stood corrected! After he went screaming to the sink. Ha! Ha! Ha!

This, at least for me, is definitely a Winter dish. I now live in Florida and do not make it as often as it does not get cold enough for this chili. When my Canadian wife {Loon Lake, Sask.} and I were in college in Iowa she used it as study food. -- posted by Chef Mad Doc

Ben's Best Vegetarian Chili

My fiance made up this recipe while trying to use up leftovers and it turned out great! He meant to use oregano, not mint, but since mint ended up in the chili, it stays on the recipe list! This chili is on the spicy side, but can be adjusted if you want a more mild version. Enjoy! -- posted by Stacy and Ben's Place

A delicious, hearty, soul-warming chili, perfect for cold weather! It's my mother's recipe.
3 Alarm Chili

I was in the mood for Chili but I couldn't find a good recipe that I liked. So I took some ideas and created this. =) OF course you can use half a jalepeno, or a chili, or use no pepper for a mild chili- but the jalepeno gives it a nice kick! Add more or less seasonings depending on taste 9 I can't really remember the exact measurements) -- posted by Chef #1149117

Swiss Chard Curry

A very hardy curry dish the whole family loved even though i'm usually the only one who likes swiss chard or curry. The recipe came from the Saskatoon Sun. I used canned chick peas rather than dried and added yams. I never had fresh ginger so I used ginger powder. Havn't tried it with the yogurt either. -- posted by Tilden

Green Hell Chili Verde With White Beans and Pork

Another long prep recipe, this hearty and spicy stew is an excellent part of a harvest meal or just perfect for colder days. All of my recipes take a while and produce copious amounts of leftovers, and lend themselves to quick meals later. Green Hell Chili Verde with White Beans and Pork is no exception. Everything from scratch, whenever possible. Adjust the heat by either adding or subtracting fresh jalapeno peppers. Green tomatoes can substitute for tomatillos, or use both if you want. The beans need to be white, but Great Northern beans work really well. Corn flour or wheat flour are important - using cornstarch makes it slimy. Better Than Bouillon makes an excellent Ham Stock concentrate (FYI). -- posted by E. J. Hilden

Three Bean Award Winning Chili

I like chili and when I make it I like to make a big pot of it. This recipe makes about 2 gallons and has won 1st and 2nd place in chili cook-off contests. This chili will have just a touch of heat, so If you like spicy chili, double up the jalapeno and cayenne pepper. This recipe works well with venison too. -- posted by Uncle Eddie

3-Bean Vegetarian Chili (Goya Beans)

This came off the side of a Goya can of beans (to give credit where it is due) and I'm thinking about subbing the crushed tomatoes with a 28-oz can of pumpkin. Putting it here for safe-keeping. The topping listed came with the recipe but I prefer just to use some cheese to make chili cheese fries or nachos. I also would like to add extra salt and pepper because tomatoes have a natural sweetness, and most vegetarian chilis are too sweet because the tomatoes and beans make up for the lack of beef. -- posted by the80srule
