Black Bean Chipotle Soup

Chili-like soup, spicy and wonderfully filling on a cold winter's night! You can let it simmer longer than 30 minutes if you'd like. I fix it before church and let it simmer while we're gone. Serve it with corn muffins, crumble them in your bowl as you eat it! Yum!! -- posted by Chef #738454

Chili With Fresh Salsa

A delicious chili with fresh salsa as the main ingredient. This is an adaptation from Chuck and Dave's Salsa website. I love the freshness the salsa brings to the chili. If you prefer a spicier chili, consider using 2 tubs of hot salsa. If you prefer a more mild flavor, try 2 tubs of mild salsa. Enjoy, my family sure did! -- posted by Mere de Claire

Fourth of July Chili

A recipe I began "modifying" years ago when I got it from a relative. I believe it has been tweaked until absolutely perfect. there are 2 distinct seperate groups of chili fanatics in the world that differ greatly in their opinions of the perfect chili. some like it sweet, some like it spicy. This recipe will have both coming back for more! The initial mild sweetness slowly gives way to a smoky spicy flavor that really only comes on slowly after you swallow. Not to worry, the chipotle psice is easily doused with a beverage of your choice. Enjoy. -- posted by peach1705

72 Market Street Kick-Ass Chili

If you like your chili with a kick, this meaty, spicy one has it. The recipe calls for "chili-grind" meat, a cut you can ask your butcher to grind. The restaurant uses Bass ale but feel free to use any ale you like. This is the
chili that I make for pot-lucks, in part because it is requested, but also I can be pretty sure it will be consumed before the party is over. The recipe was developed by chef Leonard Schwartz at the 72 Market Street Restaurant in the Venice community of Los Angeles, California. The restaurant is no longer there but many of their recipes live on in print. For example, you can find the restaurant's meat loaf recipe in the New Basics Cookbook by Rosso and Lukins. This chili recipe was published in the Los Angeles Times. -- posted by lynnski / LA

Potentially Vegetarian Chili

Texas Chili

From "The Everything College Cookbook." It works substituting ground meat for the beef cubes to save money, and I tend to use ground turkey or chicken because it is leaner without really detracting from taste. Just season the met well first. I have also found that substituting Anaheim peppers for the bell peppers gives it even more zing. -- posted by Vicki in Houston, TX

Wendy Richard's Chili Recipe - the Best Chili Ever!!!!!!!!!!!!!!

Are you ready for the BEST CHILI you've ever had? Only made this because I am a HUGE fan of Wendy Richard (MBE) who played "Miss Brahms" on "Are You Being Served" and she also played Pauline Fowler on "EastEnders". She recently passed away and printed her famous chili recipe on the back of her funeral program. (You can see a photo of that in here! Check out the photos for this recipe) I've had chili all over Texas and the South - I even made both recipes from "Throwdown with Bobby Flay" (both were VERY good) but I will tell you - hands down - THIS WOMAN'S RECIPE IS THE BEST CHILI I HAVE EVER HAD IN MY WHOLE LIFE! And when I say "THE BEST" I mean: "I am SO STUFFED I might explode - but I can't STOP eating this chili because it tastes so AMAZING". Ok? I tried to put it in the freezer - and ended up taking it out 10 minutes later and eating it again. Today I had it for breakfast on eggs, and lunch and dinner! Can't wait to have more tomorrow! I'm NOT sharing this batch with ANYONE! But I will share the recipe!

VERY URGENT/IMPORTANT: THE WHOLE SECRET OF THE RECIPE IS IN THE SCHWARTZ BRAND CHILI MIX!!!!!!!!!!!!!!! Use any other brand and it will only be a 2-3 star recipe! If you are in the USA the "Schwartz" brand chili mix in this recipe can be ordered online from www.Distantbrits.co.uk or any other British food sites. PLEASE ONLY use "Schwartz" brand if you want this to come out a 5 STAR recipe- if you use any other brand, like "El Paso", "Chichi's" "Ortega" or "McCormicks" it will be disappointing because those 4 brands I just named are nothing but salt and chemicals with very little spices. I HAVE MADE THIS RECIPE WITH THOSE 4 OTHER BRANDS, JUST TO COMPARE -WHICH IS HOW I KNOW, IF YOU USE ANYTHING BUT SCHWARTZ - IT'S GOING TO BE A DISAPPOINTMENT. PLEASE TRUST ME - IT'S SOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO WORTH IT TO SEND AWAY FOR THE SCHWARTZ BRAND, YOU CAN GET THE SCHWARTZ CHILI MIX IN 2 DIFFERENT HEATS: MEDIUM/MILD AND HOT. I PROMISE YOU - IF YOU ORDER THE SCHWARTZ AND DON'T THINK THIS WAS A 5 STAR CHILI - SEND ME AN EMAIL AND I'LL PAY YOU BACK FOR THE COST OF BUYING THE SCHWARTZ. OK?

If you can't find the British "Schwartz" brand, send the lady at distantbrits.co.uk an email requesting it. Tell her which kind of heat you want., "McCormicks" brand in the USA is very disappointing - even the "hot", it's not spicy and the taste really is missing something important. I even tried adding more cumin, and fresh Jalepeno's but McCormicks - it's just NOT AS GOOD as Schwartz, so - if using McCormick's- please know - you've been forwarned: it's not going to be a 5 star chili. If you're in the UK - you should have no problem finding this product.

ALSO - careful when ordered because the recipe calls for 4 Schwartz chili. That means chili MIX - NOT 4 bottles of chili powder!!!! (I say be careful because Schwartz also makes chili powder, and you don't need 4 bottles of chili POWDER for this LOL!)

I used the HOT Chili Mix, but Wendy specifed "Mild". Get whatever heat you are comfortable with. Be FOREWARNED: If ordering the "Hot" - just because it's from England doesn't mean it's not as hot as you think. While it is the most delish chili mix, It is 5 ALARM Texas hot!!!!! And this is coming from a gal who drinks "Franks Red Hot" straight out of the bottle whenever I have a craving! The mild is "mild" and also extremely delish.

Menier's Chocolate is VERY hard to find if you live in the USA. I could only find 1 place online that sells it (Distantbrits.co.uk) Otherwise, use a VERY DARK (Swiss is preffered). When you open the Menier - the actual chocolate says "Nestle", so I guess you could get bittersweet or semi-sweet Nestle. Just don't use Hershey (ugh!)

When it smells ready - eat it. You don't HAVE to simmer for 3 hours, as directed by Wendy. (Personally, I couldn't wait that long, it smelled too good) It even tastes amazing room temp hours later!

I promise you - if you make this recipe EXACTLY as is - with NO SUBSTITUTIONS ON THE CHILI MIX (you CAN make substitutions on the chocolate)- Your tastebuds will think you've died and gone to heaven. I can see why Wendy would leave such a fantastic Chili recipe on the back of her funeral program - people were probably begging her for years for this recipe.

When I make this for the next Texas chili cook-off - this WILL win 1st place - and I will give Wendy Richard all the credit since it is her recipe.

Huh! Who'd have thunk the best recipe for Chili would come from ENGLAND!?????!!!!!!

R.I.P. Wendy - and I thank YOU for all the years you've made me laugh and cry and for the gift of this AMAZING Chili recipe! I will be entering it into contests in your memory! I also hope all the people here will make this and enjoy it and it becomes a family favorite! -- posted by BBCFan

I am usually not a big fan of Chili but I love this Chili. I'm always being asked to make it for parties & cookouts.
Aloha Chili

Such a great recipe. Super quick and easy!! We serve it with Kings Hawaiian Rolls. Also I usually make it the night before and let it sit in the fridge overnight and then reheat in the crock pot before serving. It just tastes better this way. Another twist our family uses for this recipe is we use 1 lb ground beef and then we buy 1 lb of steak and put it through the food processer it gives a more chunky texture to the chili but it is just as delightful using 2 lbs ground beef. -- posted by kandyse32

Chili!

This is a really beefy chili, and makes a great, hearty meal on a cool evening. It's not a terribly spicy version, but if you want to turn up the heat, add some cayenne along with the other spices. I often add more seasoning at the end of the simmering time to suit whomever I'm serving. I probably get more requests to make this than anything except my gumbo. This also freezes beautifully (if you have any left!). I hope you enjoy it as much as I do! -- posted by IngridH

The Perfect Chili

After testing out a number of chili recipes, none were quite what I was looking for. I decided to come up with a chili of my own, and here it is. My whole family (including two fairly picky toddlers) just loves it!
It's fairly quick and easy to make, and doesn't have a long long list of ingredients.
I love chili. This one is certainly not traditional but sounds very interesting. Al most like a kicked up Brunswick stew. I plan to half it when I first make it. I also will use whatever chicken parts I have on hand. Received in an email from gourmet-recipes-from-around-the-world. Thanks, D M!
Jamies Chilli Con Carne

I was given 'Happy Days With The Naked Chef' and found that I enjoy Jamies style, he can be relied on for sensible recipes that work.
I decided to try his Chilli Con Carne for my son and husband one weekend when the girls were away. Good comfort food, served over rice, DH found this spicy while I thought it could be pepped up a little more (sometimes I surprise myself!!).... adjust for your own taste! Jamie recommends chuck steak, minced, but I used ground beef that I had in the freezer. I don't think the sun-dried tomatoes are traditional, but they are a nice touch! This dish is ideal for make-ahead, and definitely tastes even better the next day! -- posted by Karen Elizabeth

Chili Cheese Dogs (Tyler Florence)

This recipe was found on foodnetwork.ca. This is the first chili dog sauce that I have tried. I found it a little sweet (as a lot of the reviewers stated) and had to tweak it. I think it is due to using ketchup as it has a lot of sugar. I added an additional teaspoon of chili powder, three dashes of Worcestershire sauce, a 1/4 teaspoon of red chili flakes and approximately 1 teaspoon of hot sauce. The weird thing was that I couldn't taste it much once on a bun with a BBQ wiener. Is it my taste buds? In the pan, it was tasty :D -- posted by SuzieQutie

Mexican Beef Chili

From "The Essential Rice Cookbook." This is a hearty meal that could also be used as a side. I have tried substituting pork instead of beef, but it really needs the deep flavor of red meat. Also, it isn't very spicy, so you may want to add more spice. Serve with sour cream and warm flour tortillas, or just eat it from a bowl. -- posted by Da Huz

Ten Year Chili

This Texas-style chili recipe gets its name from the fact that I spent 10+ years creating and tweaking it in an effort to create a "heat-free" chili. In the last 10 years, however, I've really acquired a taste for the spice, so I've started adding chipotle for heat because I really like the flavor it adds. If you want a chili that even kids can eat, leave out the chipotle.

This recipe is much easier than it looks, and is extremely forgiving. I hope you enjoy this recipe as much as we have - and as with all my recipes, experiment to perfection! -- posted by TadGhostal

Well, this is the result of being "volunteered" to represent my husband's motorcycle club in an annual chili cookoff. I truely think the quality of your spices will determine the quality of the finished product so buy the best spices you can afford. I've found that the local health food stores often sell really good spices in bulk. This is not a terribly spicy chili but does pack a bit of a kick - adjust the spices to your taste. I did end up winning 1st place - over 42 other teams - not bad for less than a week's notice! I like to preassemble everything I'm going to need the night before - makes it easy to throw together the day of and just let it cook. -- posted by HSingARMYmom

Family Favorite Chili

I found this recipe several years ago at the service meat counter in our local supermarket and tweeked it a little. I also call it 'Really Good Chili That's a Whole Lotta Work' but my guys love it so what can I do? It can be 1/2 diced beef and 1/2 ground beef but we like it all diced. It's pretty mild so add more chili powder and chopped chilis if you like it hot. I also use trimmed stew beef instead of a roast, costs a bit more but its quicker to cut up. Prep time includes browning the beef and onions. It's good left over also. -- posted by greksgirl

Johnny Jalapeno's Thieving Bandit Chili

Many years ago, Johnny had stolen this recipe from 2Bleu. Well, the law finally caught him but to save Johnny from a hangin for stealin, 2Bleu told the judge that while it was indeed their recipe, they had given it to Johnny as a gift and planned on putting his name on the cans. 2Bleu just didn't have the heart to see Johnny hangin from a noose (especially since he was secretly their cousin, twice removed). ;) NOTE: This chili is best made the day before but if you can't wait, you could start it in the morning, and it will be ready by the evening. Adjust the jalapeno, cayenne, and chili powder to your desired heat level. For an all-out exlusive dish, try spooning this chili over Recipe #378927! -- posted by 2Bleu (Bird&Buddha)

Chili for 2 ( or 4 )

I found this in the 2003 Taste of Home Annual Recipes cookbook. It was sent to them by Norma Grogg of St. Louis, Missouri. Since I like a meatier chili, an extra 1/4 pound of ground beef was added. But even if the extra beef hadn't been added, I still think it would be enough for 4. After simmering, I did a " taste test " and added some crushed red pepper flakes for more heat. If you don't add the crushed red pepper, it's very mild. If desired add some cheese to each serving.
Chili Even My Mom Likes!

When my mom says something I've cooked is good and not just "OK" or "it needs more salt" (and that is not often), then I've got a winner. The seasonings for this chili recipe are borrowed from Rachel Ray's Indian Summer Turkey Chili which I think are a great and very tasty combination.
Microwave Chili

This is the chili I remember eating as a child before microwaves were invented. This can be made in the microwave in about 30 min. but I prefer making it on the stove and then simmering it for an hour or so. The oregano is optional, I myself do not use it.
Serve what you need then freeze the rest. For quick defrosting and heating, divide into single servings and package in shallow freezer boxes or heat seal-able bags. -- posted by Catnip46

Nacho Cheesy Chili

This recipe is SO good on a cold winter's day. I fix it all of the time -- as my big hips can attest. It contains cheese and finely crushed Doritos (to thicken the chili). It's a must-try recipe. -- posted by Cooking Ventures

Easy Crock-Pot Chili

I was on here earlier today and noticed that all of the crock-pot chili recipes were great... But since I didn't have the majority of the ingredients that it called for, I was forced to come up with my own. You have got to try it!! -- posted by Stefanie828
