Weight Watchers 6 Point Chili

This recipe came from a magazine. I have tweaked it a little to make it healthier. It's 6 points for 2 cups in the weight watchers points system. Great for those winter nights and football game Sunday! I use the crock pot and it makes 4 quarts (2 cups per serving, 8 servings). -- posted by Chef #1004941

No-Brainer Chili Verde

I'd forgotten this dish, but saw it on a menu in a new restaurant. Thought I'd give it a try one day. After the easy tamales came out so well that just translated to this perfectly. So simple! I served it over white rice. I used the copycat version of Lipton Soup Mix elsewhere on this site, it's perfect. -- posted by Carol in Cabo

Cincinnati Chili

A homemade variation on Skyline or Goldstar, the two most predominant brands of Cincinnati-style chili. There are multiple ways to enjoy this meaty, sweet/spicy chili and all of them are delicious. This recipe makes a lot of chili, but it is easy to freeze the leftovers for future meals. -- posted by ChefJulieS

Healthy White Bean Turkey Chili

I decided to get back on Weight Watchers and was googling recipes. I found one for white bean turkey chili, but decided to put my own spin on it. It is so good, hearty, and has a nice creamy and smoky taste. I only used one teaspoon of red pepper flakes because I was going to be serving it to my 2.5 year old. I was shocked she actually had like 4 hearty bites and was dipping her spoon in the liquid and slurping it up. This is a huge feat for my very picky eater. My hubby said it was a keeper. Also, I used two pounds regular ground turkey and one pound extra lean ground turkey. This recipe can also be OAMC and you could probably get 2 or 3 dinners out of it, depending on your family size. You could also use your slow cooker, just brown the turkey and your spices in a skillet, then transfer the rest of the ingredients into the slowcooker for the exception of the half and half. I would add that 30 minutes before serving. Enjoy! If you are counting points, there is 12 servings. We had hearty helpings, so I would say 6 to 8 servings if you are not restricting your portions. -- posted by Midwest Foodie

Swiss Chard Curry

A very hardy curry dish the whole family loved even though i'm usually the only one who likes swiss chard or curry. The recipe came from the Saskatoon Sun. I used canned chick peas rather than dried and added yams. I never had fresh ginger so I used ginger powder. Havn't tried it with the yogurt either. -- posted by Tilden

Hearty Meatless Chili

A thick rich chili, where you won't miss the meat at all. I make double batches and freeze it for quick meals during the winter. The combination of veggies makes this taste so good. I usually puree all the veggies together to make a rich broth and and sneak the veggies in for unsuspecting kids. Try it. You'll like it.
Prize Winning 3 Bean Chili

Well, this is the result of being "volunteered" to represent my husband's motorcycle club in an annual chili cookoff. I truely think the quality of your spices will determine the quality of the finished product so buy the best spices you can afford. I've found that the local health food stores often sell really good spices in bulk. This is not a terribly spicy chili but does pack a bit of a kick - adjust the spices to your taste. I did end up winning 1st place - over 42 other teams - not bad for less than a week's notice! I like to preassemble everything I'm going to need the night before - makes it easy to throw together the day of and just let it cook. -- posted by HSingARMYmom

Leftover Pork Tenderloin Crock Pot Chili

This recipe came out of a need to serve leftover pork tenderloin in a completely different way - my kids hate to eat leftovers of the "exact" same thing they ate the night before. I kept it pretty mild for tender palates, but you could certainly add any type of chiles, hot sauce, etc. Also, for the kids I put it into tortillas with cheese for burritos while my husband and I ate it in bowls as chili. The sky's the limit to the variations -- posted by 2hot2handle

Chili for All!

A friend cooked this, then gave me the recipe absolutely wonderful. My family makes me cook this at least once a week. We eat it by itself, on chil dogs, over rice, frito pies, but the best way is with sweet yellow cornbread. This will make a nice size pot. Did not put how much of each of the spices, you take and do these to your taste. I like lots of garlic. To make this quick to make buy the frozen onions and peppers. Have not cooked this in crock pot but would be great that too. Enjoy. -- posted by Chefaliscious

Green Hell Chili Verde With White Beans and Pork

Another long prep recipe, this hearty and spicy stew is an excellent part of a harvest meal or just perfect for colder days. All of my recipes take a while and produce copious amounts of leftovers, and lend themselves to quick meals later. Green Hell Chili Verde with White Beans and Pork is no exception. Everything from scratch, whenever possible. Adjust the heat by either adding or subtracting fresh jalapeno peppers. Green tomatoes can substitute for tomatillos, or use both if you want. The beans need to be white, but Great Northern beans work really well. Corn flour or wheat flour are important - using cornstarch makes it slimy. Better Than Bouillon makes an excellent Ham Stock concentrate (FYI). -- posted by E. J. Hilden

Three Bean Award Winning Chili

I like chili and when I make it I like to make a big pot of it. This recipe makes about 2 gallons and has won 1st and 2nd place in chili cook-off contests. This chili will have just a touch of heat, so If you like spicy chili, double up the jalapeno and cayenne pepper. This recipe works well with venison too. -- posted by Uncle Eddie

3-Bean Vegetarian Chili (Goya Beans)

This came off the side of a Goya can of beans (to give credit where it is due) and I'm thinking about subbing the crushed tomatoes with a 28-oz can of pumpkin. Putting it here for safe-keeping. The topping listed came with the recipe but I prefer just to use some cheese to make chili cheese fries or nachos. I also would like to add extra salt and pepper because tomatoes have a natural sweetness, and most vegetarian chilis are too sweet because the tomatoes and beans make up for the lack of beef. -- posted by the80srule

Chicken Taco Soup

I found this hearty recipe online several years ago and often make it instead of chili. Made mostly of canned ingredients, this soup lets the slow cooker do the work for you so you can go about your hectic schedule. This recipe is very adaptable to your personal taste. To add more kick simply omit the one can of diced tomatoes and add a second can of diced tomatoes with green chilies. -- posted by Chef #396295

This recipe came from my Pillsbury Cookbook. This has been my favorite way to eat chili since 1995. The recipe listed here includes my modifications. When in season, I have substituted the green chilis with a habenero and another time with a habenero plus 2 tabasco peppers. Both of these, especially the latter, made it a HOT chili. -- posted by Scrivener1

Family Favorite Chili

I found this recipe several years ago at the service meat counter in our local supermarket and tweeked it a little. I also call it 'Really Good Chili That's a Whole Lotta Work' but my guys love it so what can I do? It can be 1/2 diced beef and 1/2 ground beef but we like it all diced. It's pretty mild so add more chili powder and chopped chilis if you like it hot. I also use trimmed stew beef instead of a roast, costs a bit more but its quicker to cut up. Prep time includes browning the beef and onions. It's good left over also. -- posted by greksgirl

Johnny Jalapeno's Thieving Bandit Chili

Many years ago, Johnny had stolen this recipe from 2Bleu. Well, the law finally caught him but to save Johnny from a hangin for stealin, 2Bleu told the judge that while it was indeed their recipe, they had given it to Johnny as a gift and planned on putting his name on the cans. 2Bleu just didn't have the heart to see Johnny hangin from a noose (especially since he was secretly their cousin, twice removed). ;) NOTE: This chili is best made the day before but if you can't wait, you could start it in the morning, and it will be ready by the evening. Adjust the jalapeno, cayenne, and chili powder to your desired heat level. For an all-out exlusive dish, try spooning this chili over Recipe #378927! -- posted by 2Bleu (Bird&Buddha)

Chili for 2 ( or 4 )

I found this in the 2003 Taste of Home Annual Recipes cookbook. It was sent to them by Norma Grogg of St. Louis, Missouri. Since I like a meatier chili, an extra 1/4 pound of ground beef was added. But even if the extra beef hadn't been added, I still think it would be enough for 4. After simmering, I did a " taste test " and added some crushed red pepper flakes for more heat. If you don't add the crushed red pepper, it's very mild. If desired add some cheese to each serving.
Chili Even My Mom Likes!

When my mom says something I've cooked is good and not just "OK" or "it needs more salt" (and that is not often), then I've got a winner. The seasonings for this chili recipe are borrowed from Rachel Ray's Indian Summer Turkey Chili which I think are a great and very tasty combination. You can spice it up even more according to your taste, and play around with the type of ground meat--beef, turkey, venison or chicken even!
Gebhardts Chili Powder (Copycat)

This is a copycat version of the famous Gebhardts Chili Powder. Your chili powder may taste a little bit different than Gebhardts (if you have bought it and know how it tastes) it depends on the potency of the ingrediates you buy. I have found around here that the Freds Dollar store spices are very potent. And better than the high namebrand stuff you pay 4x the money for.
Tequila Chicken Chili

DH and I made this chili from Normal Kolpas' "The Chili Cookbook" and really enjoyed it. We served it over basmati rice. While the recipe calls for masa harina, I really didnt think the chili needed thickening (it was plenty thick) and in the last chili recipe I included it in, I thought it detracted from the flavor a little bit. Therefore, I omitted it in this one. -- posted by Dr. Jenny

Hearty Ground Turkey Chili

DH and I enjoyed this hearty chili from Norman Kolpas' "The Chili Cookbook." While the recipe calls for masa harina, I think I would omit it next time as the chili really did not need extra thickening and I think it detracted from the flavor just a bit. Also, DH and I ate this chili in a bowl, we did not serve it over rice. It lent itself well to this method. I used baby bellas for the mushrooms. Finally, we sprinked colby jack (I think that was what I had in the fridge) shredded cheese over the top, which I think is a must. Cheddar or a mexican blend of cheeses would also be good. -- posted by Dr. Jenny

Microwave Chili

This is the chili I remember eating as a child before microwaves were invented. This can be made in the microwave in about 30 min. but I prefer making it on the stove and then simmering it for an hour or so. The oregano is optional, I myself do not use it.
Serve what you need then freeze the rest. For quick defrosting and heating, divide into single servings and package in shallow freezer boxes or heat seal-able bags. -- posted by Catnip46

Venison Skyline Style Chili

The greatest way to make chili with deer meat.

You can adjust this recipe to suit your preferences, but the key is using the pork sausage to give you the fatty flavor that you miss with the lean deer meat. I don't add beans, but some people (like my dad) add red kidney beans as well. -- posted by TCSmoooth

White Bean Chicken Chili

I looked for a long time for a good chili recipe, and never found one that quite did it...so I ended up with this, which is fairly simple, and lends itself pretty well to scaling up or down, and also lasts a good long time in a crockpot for parties and such. -- posted by pr0digal jenius
