My Mama's Cheap-Cheap Chicken

A wonderfully delicious, flavorful and inexpensive method to cooking chicken. My Mom used to make this once a week while I was growing up and the whole kitchen would fill with the fragrance of the spices, making my mouth water! Since then, I've gotten the recipe and now I make it very often. ENJOY! -- posted by JJRsGirl

Low Fat Chicken Kiev and Chips

When I was little, I loved Chicken Kiev, and recently I wanted to come up with a low fat alternative. My mum introduced me to chicken thighs, which are relatively low in fat, and I started experimenting and this is what I came up with. It's really nice and easy to make. -- posted by Rainbow*Bubbles

Chicken Thighs With Chunky Tomato Sauce

From Southern Living, Aug. 08. This looks good to me! If you have picky little ones, chop the zucchini and onion into smaller pieces to "hide" the nutritious veggies in the sauce. They recommend serving this over mashed potatoes for a hearty one-dish meal. -- posted by Recipe Raider

Poulet Niçoise (Chicken With Black Olives)

A fresh, delicious dish using chicken thighs, yellow squash, and fresh tarragon. My Grandmother (from France) served this to us and we (including my 8 year old son) loved it. The recipe was an inspiration from a William-Sonoma recipe and Grandma Hilda.

This recipe, I serve, over rice.

Cooking Light's Pulled Chicken Sandwiches

This was absolutely fantastic. I used chicken breasts rather then thighs, and shortened the chicken cooking time to keep it a little healthier.

The whole family loved the recipe, and the leftovers were gone faster then the dish!

Serve with toast or rolls, and dill pickles!

I've made this for years and tweaked it from inspiration on the back of a Bisquick box. It is always so tasty and comforting. This method produces light and fluffy dumplings not the noodle kind. Great with the chicken and pot liquor on top. Cooking time includes time to take the chicken off the bone.

This is one of my husband's favorite "Comfort Foods" (he's Colombian). He even said I made it right the first time I tried! The process is relatively involved - overnight marinating is recommended and it steams for three hours. It is nothing like Mexican Tamales or "Hot Tamales". These are wrapped in banana leaves rather than corn husks, are much larger, and not as spicy hot. -- posted by Ice Cool Kitty

Succulent Chicken With Flavorful Vegetables: a 1-Dish Delight

Growing up in the 60's, those lazy Sunday afternoons after church were full of family and friends gathering together for delicious food, great company and good conversation – so full of love and tradition. Women gathered in the steamy kitchen gossiping, laughing, and cooking family favorites. Like mom's delicious chicken and vegetable dish, which was always a winner at pot-lucks, dinner parties and family gatherings. It is very easy and quick to prepare - An excellent choice on those hectic weeknights. TIP: Be sure to have plenty of crusty Italian or French bread on hand -- The flavorful chicken broth is great for dipping! -- posted by Feast Your Eyes!

King Ranch Chicken (Cotton Country Collection Cookbook)

The cookbook is the publication of the Junior Charity League of Monroe, Louisiana. This is great for OAMC--you can even OAMC it in stages...broth, chicken, vegetables. In my family it is the go-to funeral covered dish, the dish we bring when a relative of a family friend dies. I alter it a bit from the recipe, and to me (even though it may not be the "authentic" or "original" King Ranch Chicken) it is the ONLY King Ranch Chicken! There are some on here that are close to the recipe, but there always seems to be a difference in the layering/mixing of ingredients. The cookbook lists it as "A Mexican party must!" Below is the text of the recipe (with my few variations in parentheses or in notes). Preparation time includes the making of the stock, etc. -- posted by JanieTeachGal

Chicken Casserole for Dogs

This is a simple, yet nutritious meal for dogs and puppies that is easily digested and provides an excellent and natural source of antioxidants, essential vitamins and oils, fiber, proteins and carbohydrates. All the ingredients are recommended by vets as natural sources of nutrition, if prepared correctly, and can serve as one of many recipes in replacing store bought dog foods all-out.

NOTE: For puppies, you should take extra care to steam the vegetables longer to make them as soft as possible and easier to digest. If you can see pieces of vegetables in your puppies stool then you should consider steaming your vegetables longer. I would recommend taking this precaution regardless of the dog's size or age. -- posted by Chef #1331983

Kfc Chicken

Colonel Sanders prepared the chicken recipe about half a century ago and it is really quite hard to duplicate this recipe as it uses secret combination of herbs.
To protect their top secret recipe, KFC has portions of the secret blend of herbs premixed at two confidential spice companies. After that, the blend is distributed to the KFC's offices located at different, where they are finally combined for use. There is one more point to note, KFC uses pressure cookers to fry their chicken pieces so unless you have a way of pressure frying at home, it will be quite difficult for you to duplicate KFC chicken recipe.

If you want to fry super crusty and crispy chicken like KFC, you need to dip your chicken pieces in egg, then flour, then egg then flour coating. After that, you need to fry it in a pressure cooker so that you will get the exact same crusty and crispy taste to your fried chicken which KFC is so eager to protect at all cost. Before you proceed further it is advisable to go through the article KFC Secret Recipe to know about the secret mix of the herbs used by KFC to derive that special taste.
Method
You have to put all the ingredients mentioned above in a blender and blend it for 3 to 4 minutes barring flour, eggs and milk.
Next, combine the eggs and milk and beat it to a smooth consistency after that add the previously blended herbs and work out a homogeneous mixture. and take the flour on a baking paper sheet.

Now, dip the chicken pieces in the mixture and roll them on the flour until they are perfectly coated. Fry the pieces in a pressure cooker if you have one or you can just fry them at 365 degrees F (185° C) ascertained by dropping a 2 inch square of bread, it should turn golden brown in about 60 seconds. in the hot oil fry the chicken pieces for 20 to 30 minutes, occasionally turning them so that they are cooked evenly after the chicken pieces are fried golden brown.

Drain the fried chicken for a while on the tissue paper so that it won't be so oily and greasy. Serve them hot. -- posted by Stefano Nata

A1 Ultimate Jambalaya

I could live on this! Everybody loves this one, and agrees that its better than any Jambalaya they've ever ordered in a restaurant. Give it a try, you won't be disappointed I promise. The secret is the roasted red peppers and the butter. Don't be put off that the dish is finished in the microwave, it just ensures that there are no burnt pans to deal with later! The only other veg that work in this I find are sweetcorn or butternut squash/pumpkin cut into chunks and added just before it all goes in the microwave. Even my friends from Louisiana find it hard to accept that its perhaps even better (If not a little different) than they make.
As a southern girl, I love good Brunswick Stew. This is a quick cooking version that can be thrown together in a relatively short time and can be used as a "base" if there are other things you like to add to your stew.
Perfect Chicken Corn Chowder

I've never had a better one. Been making this for years.
Chicken Sukiyaki

Here I am using several authentic ingredients which may be hard to find outside of metro areas. Burdock root looks like a long parsnip but darker. It is known as gobo in Japan. The taste is distinctive and can be found in many Japanese cooking. When using burdock roots or gobo, it is best to soak in water after slicing or cutting with a bit of vinegar to keep from turning dark. For substitution, I would use parsnip or carrot. Konnyaku is made from konjac potato and is found in the refrigerated section of a Japanese or Asian market in a similar package as tofu. It is normally whitish or brownish color and almost zero calorie and full of fiber. Its texture is jelly like but more firm and needs to be quickly blanched in hot water for about 2 minutes before using. If you cannot find it, just skip it since there is no substitution. Although konnyaku does have flavor its own, it is most often used for texture more than flavor. Mitsuba is an herb often used in soup dishes in Japan. It is sometimes translated as trefoil and looks similar to parsley but the taste is totally different. If you cannot find this, skip it or use some baby spinach. Keep all ingredients separate when cooking without mixing them all up like stir fry. Although traditional sukiyaki using the very best thinly sliced beef is wonderful, I really enjoy this method as well and it is more economical. The use of gobo and ramen comes Harris Salat, but it's not in his Hotpot cookbook. -- posted by Rinshinomori
