			<description>While on a calorie-counting quest, I put together this chicken salad 'loaded' with celery, onion, and shredded carrots (which contain very little calories). The almonds give it a little extra crunch, and the cranberries are just sweet goodness :)

This is great to take for potlucks, new moms, or grieving familes.  I often double it.  This is more of a salad to eat on a bed of greens and not so much to put onto a sandwich although I have put it into a pita before.

			<description>I was looking for a way to use my expensive Balsamic Vinegar and Goat cheese.  Here it is!  You can substitute any greens in this salad, it really seems to be the vinegar that makes the salad.

I tried putting some raw mushrooms in this and it didnt go too well, Ive also tried adding raw tomatoes to the end product of this salad as well as the cooked ones and that seems okay.  

If your kale is too bitter or weird add a smattering of salt or lemon juice.  

If you dont have white wine add whatever (decent) wine you have.

I prefer using two jalapenos (SEEDED) but if you want only a very little spice to it, just use one.  I wouldn't skimp on any of the ingredients, they all make this salad what it is.

Bursting with flavor, this salad only has 176 calories per serving.  It is delicious and I admit, I had forgotten about it as I had lost the book in one of my many moves and recently ran across it again.  Perfect to help you slip back into that little black dress...without feeling like you're eating cardboard.
Notes:  Marinate the chicken in the seasoned lemon juice, soy sauce and garlic mixture for up to 2 hours; the longer it marinates, the more flavorful and tender the chicken. Well, regardless, I loved this because it combines all the flavors of a caesar salad without the calories. The arugula bumps up the flavor and the dressing on this is light and simple but still full flavored.
Now originally it didn't have chicken but one day I had 6 or so chicken tenders and decided to pan saute them and add it to the salad.
