Houses of Parliament Marinade for Chicken or Pork

While going through some old binders, I found this recipe in a booklet put out by HP. And yes, HP does stand for Houses of Parliament (the picture you see on the bottle). I don't know about its availability in the U.S., but in Canada a bottle of HP sauce is just about as common as ketchup -- all restaurants have it on hand, and it's in most homes. -- posted by Lennie

Amazing Chicken Marinade

This recipe came from Allrecipes (Ruth Crickmer). My whole family loved it even though it cooked too fast. The original recipe said 'high heat' on the grill, which my husband did. It ended up cooking 8 minutes total, charred but not burnt tasting, and very juicy and flavorful. We'll turn down the heat next time for texture, but this is a keeper in our home! -- posted by GinnyP

Bahama Mama Chicken Marinade

This chicken has the wonderful flavors of lime juice, rum, onions, garlic, and island spices - plus a little bite of hot peppers. Adjust the heat to your liking, and either grill or oven-bake the chicken - it's delicious either way. Prep time includes marinating. Cook time is approximate for marinade only, not chicken itself. -- posted by EdsGirlAngie

Honey and Soy Sauce Marinade

This is a lovely marinade for barbecued or fried chicken. I usually use it for chicken breasts cut into not too thin stripes which I cook on a table barbecue. Most raclette gadgets in Switzerland also include a barbecue facility. In the winter I like to invite people for a raclette and table barbecue evening and the marinated chicken stripes are always part of it. Everybody loves them! I found this marinade in a chicken cooking book and there they recommend it in particular for chicken thighs meat (bones removed). I'm sure it will be nice with whatever part of chicken you fancy. Just remember that the bigger the parts you want to fry/barbecue, the longer the meat should be in the marinade. You may even want to marinate your meat overnigt. -- posted by tigerduck

Delicious Grilled Chicken Marinade

This is the most delicious marinade for large amounts of chicken that you are going to grill. I originally came up with this recipe when I was looking for a better marinade at culinary school, so the original recipe called for a bottle of Lea & Perrins, and a cup of veg. oil, But I wanted more depth of flavor then that, so I added a lot of different combinations of herbs until I came up with this one. And it makes the chicken moist and delicious. -- posted by PatisserieFan

Rosemary Garlic and Ginger Chicken Breasts

I know everyone loves boneless skinless chicken breasts, and you could use these here, but I always stock up on the bone-in breasts because they are much cheaper. The longer the chicken marinates, the better, but you could marinate these for as little as half hour and still be in heaven. It can't get much easier than this, and this is requested in my house all the time. The chicken comes out extremely tender, moist and juicy! Just make sure you remove the skin from the chicken first if there is any. **Just omit the cayenne pepper if you don't prefer the heat. The high heat is the trick, it gives a slightly crispy outside, and tender inside! -- posted by Melvin'sWifey

Lemon Garlic Marinade for Chicken

I put this together when I was making some other Lebanese dishes, and I wanted chicken, but wasn't sure how I was going to make it. So this is what I came up with. One of the ingredients is Sumac- can find in middle eastern markets for sure. Its a dark red spice, that adds a lemony flavor. Its so very good. I like to make this chicken and serve it with Tabouli and Hummus.
