Not a Soup, Not a Stew Chicken

This comes from The Complete Crockpot Cookbook. My husband loves this hearty soup. It's wonderful for the winter season and for those with the sniffles. I don't put peas in, since DH doesn't like them. Serve with French bread. -- posted by SaucyCook

Crock Pot Greek Lemon Chicken

This really tastes like restaurant greek chicken we get here in the Chicago area. Moist chicken, lots of flavorful sauce. Start with frozen chicken breasts and a few ingredients you have in your pantry, end up with lots of compliments. No browning the chicken, just plop it in, set it and go. -- posted by Deb Wolf

Cranberry Orange Chicken - Crock Pot

OUT OF THIS WORLD! Tender and delicious! Flavor Galore! This is one of my favorite dishes. I have found that bone-in chicken gives more flavor. I use the following method for fall-off-the-bone chicken. After placing the lid on crock pot place a large double folded kitchen towel over top of lid letting it fall over sides of crock pot. This allows no steam to escape. The sauce in this dish makes good 'gravy' over cooked rice. Makes a pretty dish to serve guests. -- posted by Seasoned Cook

Crock Pot Chicken Chili

This is just what you need on these cold evenings! Throw a salad together, add some cornbread and your meal is ready! You can add some heat by adding some crushed red pepper flakes (yes, the ones at the pizza parlors in the shakers). I always serve sour cream and some grated cheddar and jack cheese (grated together) with this meal.
Try not to open the lid and peek; each time you open a crock pot, add another 20 minutes to the cooking time. -- posted by FLUFFSTER

Low Fat Crock-Pot Chicken Stroganoff

This is a very light, tasty and delicious chicken stroganoff made in the crockpot. If your crockpot cooks hot like mine, this only needs to cook on low for 4 hours. If you have one of the older models...follow the stated directions. My family LOVES this! This is best served over egg noodles. If adding mushrooms, whole fresh mushrooms work best. If you use sliced mushrooms...they get too mushy. So add them in the last hour if using sliced. -- posted by ChicagoRN

Chicken Cacciatore

Hunter's style. This comes from Eleanora Scarpetta who was seen on the Martha Stewart show many, many years ago. My husband absolutely loves it! The original recipe calls for white wine and a hot pepper, which I omitted, and gaeta olives, for which I substituted green olives due to my husbands tastes, as well as oyster mushrooms, for which I used regular white mushrooms due to convenience and expense. It also called for fresh basil which I did not have so I just used dried. I am sure the ingredients I omitted would make for a more authentic dish. Any combination of chicken may be used, I prefer boneless because I am spoiled. :) This could also be done in a crock pot after the browning steps. -- posted by Chef Corn

A friend gave me a variation of this recipe. I tweaked it come up with this tasty version. Being a "dump" cook, this recipe is exactly that....dump in a little of this, dump in a little of that, etc. Put it in the crockpot in the morning and viola', dinner is done when you get home. This recipe has many uses....soft tacos, cruncy tacos, or simply enjoy over rice! -- posted by TXmamacooks

NOTE: if you have a newer crockpot, i would only cook for about 4 1/2 -5 hours otherwise you will end up with dry chicken and a mushy mess. this does have a great flavor though, just try not to overcook it. :) -- posted by punkyluv

Slow Cooked Honey Curry Chicken

An adaptation of a recipe from "Dinnertime Easy: Slow Cooker Recipes." I love the combination of spicy, sweet and hot that emerges in this dish, though the flavor will vary based on the type of curry used. Part of why I love this one is that the taste is even better the next day, so it's a great option for those of us in smaller households and cook once and plan for leftovers. As presented this is 5 WW points per serving. -- posted by justcallmetoni

Quick and Easy Chicken Cordon Bleu Rolls

What makes this more special than the traditional cordon bleu rolls is the delicious combination of proscuitto and swiss. They complement one another perfectly. Serve this dish with rild rice and asparagus or a nice risotto for a quick - yet elegant - weeknight meal. I adapted this recipe from a crockpot cookbook I once had. -- posted by OwlMonkey

Salsa Chicken Slow Cooker Recipe

so good! and so easy! my boyfriend and I seriously make this 2 days in a row so that we have a big pot of it. You can make it into a sandwich, or eat it with tortilla chips for a party, or you can put it over rice and enjoy it that way! This recipe came from a friend, she got it from a recipe book at the dollar store, I would have thought it would already be on here, but nope. So I figured I'd let you all enjoy it as much as we do :) -- posted by Rebel0219

Stifado - Ish

A mixed meat stew that started out as a sweet and sour way to use some leftover cranberries and ended up tasting like a Stifado - so I was told by the eaters!.

Appreciated by the fans of the local Greek Restaurant (my family)!

A bit of an experiment (with the cranberries) but a happy accidental result.

Crock Pot Shredded Chicken in Beer

My friend Abby came up with this one. It is absurdly easy and makes a great base for chicken tacos, pulled chicken sandwiches, a change of pace topping for pierogies, or my husband's personal favorite, chimichanga filling. I buy frozen boneless, skinless chicken breasts in 10-lb. bags. No need to thaw: just toss 'em in the crock pot as is. -- posted by HopeJohnJP

The Easiest and Best Crock Pot Chicken Tortilla Soup

A friend of mine made this soup for a baby shower that I recently attended and everyone loved it! Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which make it HEALTHY which is alway a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!! I like it the best with one jar of medium and one jar of mild tostitos salsa. -- posted by S.H.E.
