Easy Grilled Chicken Teriyaki

From All Recipes enewsletter. This is simple to prepare for even the beginning grill chef. I like the blend of flavors with the teriyaki sauce and lemon juice. They said to leave 24 hours to marinade but I have heard that marinades with lemon juice can possibly start the cooking if left to marinade longer than 4 hours. So I do not marinade any longer than 4 hours with this recipe. One time I used olive oil by mistake instead of the sesame oil - it worked fine. Hope you enjoy. -- posted by HokiesLady

Barbecued Island Chicken

Moist, easy and full of summer flavors! A great recipe that will remind you a breezy night on a tropical island. This recipe is loved by all ages as it is savory yet sweet from the pineapple juice and has an almost caramel flavor from the brown sugar. Preparation time includes allowing chicken to marinate. Stevia can replace brown sugar but I do not have the correct amount needed for this. Also please note that the fat and calorie count is incorrect as you discard most of the marinade. Enjoy! -- posted by sassafrasnanc

Grilled Spicy Sesame Chicken With Sauteed Onions

I say this a lot, but this recipe started from somewhere, but transformed into this. It's my husbands FAVORITE chicken. I thought I lost the card I wrote this on today, but found it and went straight to post it so it can never be lost again. It's not one of those marinades that you want to marinate chicken in for several hours or over night...it would be too much and too salty. Only marinate 1-2 hours at most even half an hour is plenty. And...do use the light soy sauce. If you like less spicy only use one pepper and if you like it a bit more spicy seed only one pepper. Prep time includes time shortest time to marinate. Cook time includes extra time for onions. -- posted by HeidiSue

Grilled Chicken Breasts With Grilled Corn and Tomato Salad

From America's Test Kitchen. A fast corn and tomato salad pairs well with quick-cooking chicken breasts, but a few tricks—like jumpstarting the corn in the microwave first—streamline this recipe even further. For this dish, buy chicken breasts that are about 1/2-inch thick. -- posted by SweetSueAl

Grilled Garlic Chicken

Adapted from a recipe in Quick Cooking, July/August 2002, I used fresh lime juice and added lime slices to my marinade and utilized fresh herbs as much as possible (dried will work). I also chose to grill the chicken to complete the "no muss - no fuss" feeling as it marinates the night before and grills up quickly! Everyone loved it!
Apricot-Balsamic Glazed and Grilled Chicken

From Rachael Ray's Sept. '08 "Everyday" magazine, so you know it's savory and simple--all at once. Her recipe called for apricot preserves, but I'm using up MIL's Peach Jam, and we loved it just fine. Also, I used only 2 chicken breast halves (paillard-cut) for four of us and we had leftovers (our chickens are very large!), so adjust the recipe up or down accordingly. -- posted by Debber

Yakitori Kebabs With Chicken and Vegetables

Tasty and low fat kebabs. If you are short of time, marinate the chicken for just 20 minutes - it will still absorb a lot of the flavours. Try using a different selection of vegetables, such as yellow peppers and zucchini. Time does not include marinating. It’s the next best thing to tandoori chicken and a fun way of cooking chicken. This can also be done on a barbecue but make sure the chicken is cooked thoroughly and do not use the left over marinade to brush the cooked chicken with.
This is a family favorite and in frequent rotation during the summertime in our household (Gotta love it anytime DH grills up dinner). Although normally we use sprouts ( Broccosprouts whenever we can find them), the kiddos are more inclined to sub lettuce and omit the tomatoes. Kids, go figure! Sometimes an avocado can garnish, normally that is on the side as guacamole with chips. Garnish varies depending on what looks good and fresh at the market. **Rudy's BBQ Sauce from Texas is KEY to the flavor of this sandwich! We use all sorts of other sauces, but Rudy's is just the best for these - by the case I tell ya!!** -- posted by Mommy Diva

Lindsey's Quick and Easy Grilled Jerk Chicken

This recipe started as an experiment in my kitchen when I got tired of the same old chicken and had to utilize what spices I had at the time. I improvised a bit, and It turned out great! The scent and flavor is excellent. The spices will smoke a bit and the chicken will have a blackened look, but when it is done it is succulent and moist. I hope you enjoy! -- posted by Chef #1041846

Bento -- Teriyaki Chicken in a Hurry

This is a quick work night dinner we throw together when we are busy. Tasty and healthy, but best of all, my family will eat it! :) I usually grab a mixed fresh bag of broccoli, cauliflower and carrots when time is short and steam it 3/4 of the way through the rice ( times depend on your individual steamer - mine takes 50 minutes for long grain brown rice so I time the rest of mel accordingly). Brown rice is definitely a heathy choice, a little nutty or firmer in texture, but give them this flavorful dish and they will gulp down the rice and those dreaded veggies! **Kikkoman Teriyaki Baste and Glaze with Honey and Pineapple** is what gives this recipe the ease and flavor. -- posted by Mommy Diva

There's no oil in this dry spice rub so it's a healthy choice when used with lean meat - lamb or pork leg steaks, chicken breast or rump or fillet steaks. It's pretty spicy, so use it sparingly and keep the rest for your next barbecue - it will last all summer.
Tamborine Chicken

Middle Eastern Chicken Skewers

Saved from the Miami Herald for summer grilling -

"A wet rub of olive oil and Middle Eastern spices turns bland chicken tenders into something spectacular. If you prefer a bit of heat with your meat, add a dash of cayenne. Small vegetables, such as cherry tomatoes or baby onions, could be added to the skewers. This recipe also can be adapted for whole chicken breasts, which will require longer cooking at a lower temperature... Source: J.M.
I got this recipe from a friend of mine from Texas 20 years ago and it has become one of my family's favorites.
Easy, Fast and Tasty Chicken

For those nights where you forget to marinde your chicken (or-like me- too lazy to do it) you can use this recipe to make some great flavorful chicken. In addition, it goes great with any simple lemon chicken marinade to add more "umpf" (I hate when you take a bite of the thicker part of the chicken and you can't taste the marinade like in the thinner parts- this way you get flavor throughout the meat!). Me, I like a little kick to my seasonings so I add a light dusting of cayenne pepper (a little goes a long way!) but it's optional and is still great without it! -- posted by codeblusqrl

I have not tried it yet, but it sounds different and delicious. -- posted by MarthaStewartWanabe

Nif's Grilled Hawaiian Chicken Skewers

This is a dish that I made up as I went along! It's easy and uses ingredients that most of us have on hand. There is probably enough marinade for twice the amount of chicken. I wasn't going to have a chance to stir the chicken so I wanted to make sure that it covered all of the chicken. I served this over brown basmati rice. The marinating time is not included. ****NOTE: I do not recommend marinating this for more than 2 hours. I find it gets a grainy texture if marinated too long. Enjoy! -- posted by Nif

Nif's Light Grilled Marinated Chicken

A nice light, yet flavourful dish that is easy and the breasts can be served whole or on skewers. If you are using wooden skewers, be sure to soak them in cool water for 30 minutes. I also place a strip of tinfoil under the exposed skewers when on the grill. I recently purchased metal skewers and I really like them. I did not include marinating time.
