Farfalle With Chicken, Mushrooms, Spinach and Ricotta Cheese

This is a nice light pasta - the sauce isn't heavy (or, really, very saucy at all) and the ricotta makes it just a touch creamy. It's also quite healthy. This is one of those recipes that can be made quickly with what you have in the kitchen! Instead of overdoing the pasta - we used whole wheat pasta & bulked it up with veggies and lean chicken breast. The finished dish is very eye appealing and tastes marvelous! ellysaysopa.com. :) -- posted by Manami

A yummy sounding recipe from EatBetterAmerica.com. It has many good reviews on that site and sounds like something we'd enjoy. I would suggest tweaking the seasonings to fit your taste. We typically like a bit more than what a recipe calls for :-) Also, one reviewer suggests adding black beans and corn, which could add another dimension to this dish. -- posted by MarlaM

Mushroom and Chicken Paninis With Avocado Mayo

A quick savory panini. Chicken breast with portabella mushrooms on crispy ciabatta bread with a creamy avacado mayo. You can make these with any variation of meats and veggies. We sometimes use deli meat, leftover beef or leftover veggies. Sometimes we vary the sauce by using cranberry mustard or chili sauce with mayo.
Chicken and Veggetable Pasta

Simple and quick pasta that you can make with almost anything you have in the house (only a few of the ingredients are things you may not have). Doesn't use pasta sauce, olive oil and spices instead, and tons of veggies or just a few. (can be made for anyone who loves or hates veggies!)
Many other vegetables are good options but I use these commonly (I would try artichoke hearts and other things if my boyfriend would eat them) -- posted by RealHalfTimeShow

Buffalo Chicken Jalapeno Poppers

This recipe was featured on the Rachel Ray show in October, 2009 as a quick and healthier version of the traditional popper. It's a very spicy, yet savory version of the appetizer. The original recipe calls for 18-20 jalapeno peppers, but I just used 10 and cut them in half to use both halves to fill. It also called for rotisserie chicken, but I substituted with chicken breast to cut down on cost and time. -- posted by CrunkFrack

Chicken Fajita Remix Pasta

My boyfriend went through this phase where he wanted fajitas every single night for dinner. I got fed up one night and said FINE! but I'm switchin' it up! Put all the ingredients in some pasta and this tasty dish was born. (He loves it...) Consider this like a "Semi-Homemade" type of meal.

**Please note: I eyeball most of my seasonings. Do what works for you! -- posted by sugarjerk1127

Falafel Crusted Chicken

We all know that fried chicken isn't healthy, but that doesn't stop me from salivating when I smell it frying it the grocery store's deli. As long as it isn't kosher, I don't think twice, but when it is, it takes all my self control not to buy it and eat it all in the car before I can even get home. Rather than let it destroy my health & my diet, I had to find an alternative. He loves them. Of course nothing truly compares to that awesome, authentic torta roll, but the rest of the ingredients are fairly authentic. The toasted whole wheat bread works just fine for us...as long as all of our fixins are present, we're golden. :-) Prep time does not include marinating time. -- posted by Robyn's Cookin'

This is from "Christmas Memories Cookbook". The book describes it as "piquant and festive" and suggests serving with a rice or wheat pilaf. Be sure to allow time for the sauce to reduce.
Lighter Chicken and Biscuits (Oamc)

This is a recipe I adapted from Martha Stewart's Everday Food. It is a stovetop version of a classic southern casserole. I am usually suspicious of so called "quick" versions of classics and even more so of "light" adaptations, but this one was right on the money. The texture and flavor are reminiscent of Boston Market chicken pot pie. There is no cream of chicken soup and you can have dinner on the table in about 45 minutes. The original recipe called for whole wheat biscuits, but I made Bisquick biscuits with melted butter generously brushed on top (makes a golden brown crust). This recipe would be delicious with turkey and can be made with cooked chicken or turkey as well. This recipe can easily be doubled for OAMCers as well. -- posted by UrbanDesiMommy

Seasoned Chicken in a Light Wine Sauce

This is a healthy way to add a little flavor to chicken without all the fat, and just a little salt. You can substitute or add any vegetable that sautes well if you don't like onions, but the mushrooms are a must. Pairs well with steamed veggies and/or rice. You could add a little cornstarch slurry while the liquid reduces to help thicken the sauce, but I like to keep it on the light side. Using a lid on the non-stick skillet is a key step to the recipe. It keeps the Chicken from drying out. -- posted by Cyril

Amazing Chicken Noodle Soup With Acorn Squash

Don't be deceived by the lack of added seasonings. It is full of flavor! Adding the squash makes the whole thing rich and smooth, with a color and consistency similar to Kraft Mac'N'Cheese! Delicious! Even my daughters loved it! (3 yrs & 7 mos) I just took the chicken out for my baby girl, mashed it up, and she couldn't have enough!
This recipe makes a whole stock-pot full, and it's super easy to make, so it's a great one to make and freeze the leftovers. I was going to, but it we scarfed it all up in 2 days! -- posted by Chef #1459874

A very quick and easy way to prepare dinner for 4, in a skillet. To make Curried Chicken Dinner, prepare the same recipe, omitting the paprika. Add 1/2 Tbsp. curry powder to the broth mixture and 1/2 cup raisins with vegetables. Garnish with freshly diced apples, if desired. Another great way to serve this basic is Cranberry Chicken Dinner. Add 1/2 cup dried cranberries and 1 tsp. poultry seasoning to broth mixture. Replace plain rice with long grain and wild rice blend. For vegetables, use 1 cup each, sliced celery, and chopped onions. -- posted by Chef mariajane
