Stuffed Chicken & Roasted Fennel

I found this recipe on a site selling various herb and spice blends and thought about giving it a try one time having picked up a fennel and then getting home and wondering what on earth to do with it! LOL.Anyway, if you are into cooking Morrocan/North African Cuisine then no doubt this will be a treat; And if you are not a regular in this type of cuisine, I'm sure you will be after cooking this. It's very simple to make but creates a lovely dish at the end for any occasion. -- posted by JinxTheCat

Three-Ingredient Sticky Baked Chicken

From the Canadian Family Website: Sticky, sweet with a little savory soy sauce, this chicken is pure yummy. Destined to become a family favorite because kids love it and parents love the simplicity of this oven-to-table meal. I had a great result making this with bone in chicken leg thigh quarters. I had one piece that was skinless, and we discovered that using skinless does allow the flavor of the glaze to permeate the chicken better. This was a hit with my whole family - including my hard to please 3 year old.
I used ketchup, reduced sodium soy, and lite maple syrup. Ingredients I happened to have on hand. This could NOT be easier. Adjust cooking times as needed for bone in cuts. Great with white rice and steamed broccoli.
This recipe is so simple that you will probably have this assembled before your oven is preheated. -- posted by Linda Sue

Weight Watchers Crock Pot Chicken Stroganoff Remake

This is a remake of 4 point recipe #322468. The Dollar General within walking distance of me does not carry non-fat sour cream or the 98% fat free soup. Plus its a larger can. I est that my version comes in at 5 or 6 points, plus noodles.
The other recipe did not have noodles listed but I will so we can get the correct points. -- posted by Chef JDecember28

Shredded Chicken Sandwiches

I've tried numerous shredded chicken sandwich recipes and this one is far and away the best one. It was given to me by a friend who served it at her parent's 50th wedding anniversary reception. Simple and tasty! It can be easily doubled for large crowds. Be sure to use a Reynold's Crock Pot Liner for easy clean up. Serving number is an estimate. It depends on how much shredded chicken you pile onto the bun :) -- posted by Marianne5

Perfect Chicken Cordon Bleu

This chicken was my most requested dinner when I was living at home. Now I make it quite often. It's perfect for a worknight because it's super simple. I'm not usually a fan of swiss cheese but it definitely gives this recipe it's unique taste. The bundles will stay together quite well if you place them crease side down but toothpicks may be used if needed. I love serving this with rice and mixed veggies. I usually just buy the hard shell taco kit because the seasoning is already included. It's so juicy and full of flavor, you'll love it!!!
Classic Chicken Tenderloin

A simple, tender and delicious family favorite. I found a similar recipe online which prompted me to post my own take. You can braise these or grill to a lightly golden color. Great over salads or served with other classics like mashed potatoes and green beans. -- posted by Lauren H

Chicken Pepper Pot Soup

I got this fabulous recipe when I vacationed at Disney's Animal Kingdom Lodge. The soup was on the Boma - Flavors of Africa Buffet. When I inquired about a cookbook with the recipe, the waitress went & got the recipe from the kitchen. This is posted in the same manner I got it, but I'll tell you that finding 1 gallon containers of broth is difficult. So I use 10 14oz cans, it's a little more, but just as good. I also usually use 2 poblanos. Using ready to go chicken tenders is a big time saver. I just sautee them in a little sesame oil & garlic before I dice them. This soup is very tasty and borderline addicitive. I've made several times since I got back. It is absolutley delicious the next day and freezes well. Hope you enjoy it as much as I do. -- posted by Tina & Angie

Key Lime-Blue Cheese Chicken

Like all fun discoveries, this dish was created by accident: I made it on a whim while vacationing in Key Largo, Florida, out of "whatever was in the refrigerator." But who would have guessed that blue cheese and key lime are divine together?! This dish can be made with any limes, but Key Limes are sweeter and more fragrant.
Crock Pot Shredded Chicken in Beer

My friend Abby came up with this one.
Easy Oven Barbequed (Barbecued) Chicken

Is this the very best barbequed chicken you ever tasted? Nope.... but it's pretty darn good! It's also about as easy as any scratch entree recipe you'll ever make. I prepared it a few nights back when I couldn't come up with anything for supper until late in the day -- that's when I remembered the frozen chicken (cut up) in my freezer.
Old Fashioned Chicken and Dumplings (Made Easy)

When I was growing up, one of my favorite comfort foods was my maternal grandmother's chicken and dumplings. "Nana" would stew her chicken and debone it, strain the broth (seasoned with fresh rosemary from her garden), roll her own biscuit dough, then drop hand-cut, flour-rolled dumplings into her broth. It was a lot of work, but she always seemed to have it on the table in minutes! She usually made it when I was sick or not having a great day (my mom too). It's one of those ''little things" my mom and I remember fondly. This recipe is my adaptation of Colonel Harland Sanders' personal gravy and dumpling recipe, which I've brought a little closer to Nana's... made a lot easier! PLEASE NOTE: THIS RECIPE HAS BEEN REVISED SINCE THE ORIGINAL POSTING, AFTER CHEF #1523855'S REVIEW. DOUBLING THE BROTH WAS MY SOLUTION (AS I'VE DONE HERE). IT GIVES MORE BROTH TO COOK THE DUMPLINGS IN (Thank you, Chef # 1523855). YIELDS ABOUT 5 SERVINGS. -- posted by Bazaar®

Chicken Taco Soup

This recipe is so easy and so good. It's become one of my favorite soups. In the prep time I didn't count the time it takes to cook and dice the chicken because you can either use cooked chicken that's already been diced for you or you can cook it and dice it yourself. I usually use about three chicken breasts. -- posted by Chef # 8654321

Buffalo Chicken Wing Dip

a great way to enjoy chicken wings without the mess. great served with celery or tortilla chips for dipping. I like to use a crock pot to keep this dip warm during parties, just mix everything up on the stove than transfer to the crock pot or you can use a electric fondue pot on warm too. If you don't want to use those then separate into small batches in oven safe dishes so you can keep the dip warm. Not sure where the recipe came from, everyone I know has their own spin for it. -- posted by Chef ChristinaMac

The Easiest and Best Crock Pot Chicken Tortilla Soup

A friend of mine made this soup for a baby shower that I recently attended and everyone loved it! Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which make it HEALTHY which is alway a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!! I like it the best with one jar of medium and one jar of mild tostitos salsa. -- posted by S.H.E.
