			<description>This results in exceptionally moist and tender chicken, with the bonus of being a complete meal. The veggies get bathed in the chicken juices, resulting in an easy, delicious one-pan dinner. It's low-maintenance once it's in the oven too; no basting, no fussing. You may want to add extra garlic cloves in the pan; after roasting they're sweet and delicious and taste great when squeezed out onto the chicken meat or potatoes. Do try the parsnip in this dish, rather than the more traditional carrot; the parsnip gets very sweet when roasting and goes so well with the chicken. Garlic, shallots and white wine accent this chicken; nice because there's not a lot to detract from the pure lemony taste. I find that there's not a ton of the sauce; if you wish to have extra to drizzle on veggies or whatever, I'd probably double the sauce ingredients. Instead, the parmesan is complemented by the freshness of lemon zest and juice. I strongly recommend using PANKO breadcrumbs if you can, they will stay crunchy after the baking. If your chicken breasts are on the large side, or you simply want more of the parmesan flavor, you can double the topping mixture portion of the recipe. The original calls for conventional (out of the jar) ground corriander. I like to toast my seeds and coarsely grind them as it adds a nice toasty flavor and rustic look to the dish. 			<description>Chicken Tajine with preserved lemon is known to be Moroccos second most popular dish after couscous and considered to be the national dish. Tajine is a pot which is made from heavy clay that has been glazed.  The shape of the pot is designed to promote the return of all condensate to the bottom.  The base of the pot is flat and circular with low sides, and  the lid is a shape of a large dome.  This recipe was shown on SBS's Food Safari by chef's Hassan M'Souli.  I served it with Recipe #221217.
