Tip: I often make this, put into two small casserole dishes, and freeze one. 			<title>Artichoke Chicken</title>

			<description>I haven't tried this chicken dish yet, but it has changed my dinner menu for tomorrow. I found this recipe on Allrecipes.com where it has received 663 5-star reviews.  Credit goes to Amanda Bibb who submitted it.  As I was reading through some of the reviews, there were some notations that I felt should be shared here. One reviewer said that even after draining the artichokes, there was still some excess liquid in the pan, so it was recommended that the artichokes be squeezed prior to chopping to cut the liquid even more. This same reviewer made it at another time and this time used marinated artichokes and said it was fantastic.  It was also suggested by a couple of people to use 1/2 mayonnaise and 1/2 sour cream instead of all mayonnaise, now that sounds really good to me too; adding garlic,salt and pepper to taste was also suggested. -- posted by &lt;a href="http://www.recipezaar.com/member/122878"&gt;Happy Hippie&lt;/a&gt;</description>

			<description>When living in New Mexico, I learned the difference in New Mexican food from Mexican food. Here is my version of the great food that region of the country serves. The green chilies are a must and do not make the dish too spicy for those who cannot tolerate spicy foods.

Notes
You can also use corn or wheat tortillas if you prefer.
You can alter the amounts of ingredients to taste, but I found this works best.

It was quite an experience and we made some really good friends while we were there, but we were sometimes very isolated from our friends and families who lived in the States.  This recipe is from a wonderful cook who we met when we lived there.  Thanks to Bobbie True!  It was very easy to make for a party when the supply planes couldn't get in because of the weather.  If you prefer, you can poach some chicken then chop it.  But when we couldn't get anything but canned, we had to use what was available! 			<description>DH started from fluffernutter's Recipe #137552 #137552 (which came from the South Carolina Outdoor Press Association), but made so many changes that I am posting DH's version.  I'm not a fan of pot pie, nor squirrel, so I told him he had to take total responsibility for any squirrel dish he fancied.  To my surprise, his creation was delicious and had no strange taste at all; the meat tasted similar to dark meat chicken.  He had 4 squirrels, which yielded a little over 1 pound of meat.  He ended up with 2 pot pies because he wanted a lot of potato, and used full 15 ounce cans of lima beans and green peas.  Our pot pies were packed with vegetables with squirrel accents. 			<description>I first had this at a pot luck at work.  Got the recipe from a friend but decided it needed some tweaking.
You may add as much heat as you like or keep it toned down.
Add taco toppings too if you like when serving.
It does take a little work but in the end it pays off.
Note:  You won't use all the reserved broth.  There is a large amount saved just to make sure you have enough.
The chicken soup in this recipe is the creamy color one not the yellow.
In place of the chips you can use taco shells broken in halves.
Or you can use the Corn tortillas, omit softening them.
Using the chips give more corn flavor.

			<title>Deluxe Cornbread Dressing Casserole (Big Batch)</title>

			<description>An old family recipe that's been tweaked little by little over the last 100 years.  This makes 2 large pans about 1/2-3/4 filled.  To relieve holiday stress make the pre-cooked dressing the week before Thanksgiving and freeze.  Use one pan for Thanksgiving and one for Christmas.  Begin defrosting 2 days before in the refrigerator.  I split the prep process between 2 days.  On the first day make the cornbread, boil the fryer, pick the meat and save the broth.  The second day assemble and freeze.  For OAMC split dressing into even smaller portions; may need to reduce bake time.

			<description>This is a great recipe that a friend of mine has been bringing to office pot-lucks for years.  I just got the recipe from him and made it myself.  It's a unique and pretty decadent twist on traditional enchiladas.

You can adjust the amount of green chiles and jalapenos to your particular taste.  This recipe carries a little bite, but is not particularly hot (even using green chiles rated HOT).  To pep it up, use 3 cans of green chiles and 2 cans of jalapenos.
