Dukkah (Spicy Nut Mix for Dipping With Flatbread)

This is a snack served in middle eastern markets. It is known as the dukkah, the poor man's dinner, and perfect travel food. You can serve this as described or instead of the pitas you can serve with balls of soft cheese, sliced tomatoes, or cucumbers. Keeps well also unrefridgerated. -- posted by tinala

Roasted Red Pepper and Rosemary Hummus

This recipe has its roots from the Moosewood cookbook (1st generation) but it has been revised and added to so much it barely resembles the original. This recipe receives rants and raves from everyone who tries it, hummus lovers and new initiates alike. Full of flavor, rich in taste and a carefully crafted roller coaster of spices, this is probably one of the best versions of the popular hummus recipe you will ever try! -- posted by Chris Hoekstra

Two Bean Chipotle Hummus

I created this recipe in an attempt to make a hummus that my husband would like. He doesn't like the texture of chickpeas. The Great Northern beans really make this creamy without the addition of things like additional fat, yogurt, or tofu - all things I've tried and didn't care for. Since the white beans are mild in flavor, the garbanzo bean flavor still comes through just fine. Feel free to adjust the seasonings to get it the way you like it best. I do not add salt when using canned beans, but I probably would add a little bit of sea salt if I were using beans cooked from dry. -- posted by Vino Girl

Roasted Vegetable Hummus

If you love hummus, you will enjoy this version very much. If you don't love hummus, you will still enjoy this sweet, savory dip/spread because the flavor of the roasted onions, peppers and eggplant shines through.
You can make this dip ahead of time as it keeps well for several days in the refrigerator, but please bring it to room temperature or warm slightly before serving with pita chips or as a wonderful sandwich spread. -- posted by Geema

Garbanzos in Coconut Milk

This recipe is from Zanzibar, Tanzania, where coconut and clove are major revenue and Indian ingredients influence local cuisine. Turmeric gives the dish a yellow color that darkens with cooking. This is better the second day, when the flavors have blended.
Hummus... Smooth & Creamy

Forget those tubs in the supermarket, they never taste like the real thing. I always use Ziyad brand products for a more authentic middle eastern taste. The addition of the "tetbeleh" is how it is mainly made in the Jordan. In the mid east people enjoy this as a breakfast side, typically someone makes a run to the nearby falafel restaurant and brings back falafel, hommus and foul(fave beans) and serve with a side of green olives, white cheese and tea using our pita bread as our spoons, and there you have a middle eastern breakfast. In the U.S. it is served as a side dish for the most part, but in the middle east it is more a breakfast dish. -- posted by chef FIFI

No Fat Turkey Chili - a La Dave

This is a very versatile chili recipe that also tastes great! They key is the ground turkey breast, which has almost no fat (1 gm per serving vs. 12 gm for most store-bought regular ground turkey). You can easily lower the heat by removing the seeds and pith (white stuff) from some or all of the peppers. If you want to make it Vegetarian, you can remove the turkey and substitute cubed Tofu (or not) and use vegetable broth instead of chicken broth. You can also use the dry ingredients by themselves as a nice chili powder for other recipes. -- posted by David Bishop

I had this at a potluck and it was drop-dead delicious! A great balance of sweet and spice! I know there are lots of Moroccan Chicken recipes here on 'Zaar, but this one seems a little different to the rest. There are quite a few ingredients, but it is actually very simple to do.
Winter Squash, Chickpea & Red Lentil Stew

Inspired by the flavors of North Africa, this vegetarian stew replaces the tagine with the crock pot. The combination of saffron, ginger and cinnamon give of a wonderful aroma and flavor. It would tempting to substitute canned chickpeas here but you will get a different result. In this dish the chickpeas while tender have greater firmness than the canned type. Time saving tip: Prepare the ingredients the night before, placing the cubed squash, carrots, onions, tomato paste, garlic and ginger in one sealable bag or covered container, the lentils and dried spices in another. In the morning add the contents of both bags/containers, the soaked chickpeas and broth to your crock pot, turn it on and go. -- posted by justcallmetoni

Chickpea Salad With Cumin Vinaigrette

No such thing as too many chickpea salads! This was an especially good version I thought, altered a bit with my own and my BF's taste in mind. Extremely easy and no cooking involved, particularly good for lunch at the office or a weekend picnic since it's best at room temperature. If you'd like to make this for a no-cook summer dinner, it's a main meal for two (with a side of green vegetables) or a side dish for four.
Low Fat Hot Chicken Chili

This is such a household favorite that I usually make a triple recipe, filling our poor little 18-quart Nesco oven to the very brim, and then freeze a bunch of it.

The recipe as I received it called for 1/2 teaspoon of cayenne (hah!). I replaced that with 3 items: roasted New Mexico chiles (Barkers if you like it really hot), chipotle powder, and chipotle puree. If you can't find some
or all of these ingredients, try to find some adobo sauce and use about 3 tablespoons of it. The chipotle puree is just pureed canned chipotles adobado (i.e., in adobo sauce), and it is the adobo that lends a delicious smoky flavor to the dish.

WARNING: IF YOU DO NOT HANDLE SPICY HOT FOOD WELL, replace some/all of the New Mexico peppers, chipotle powder, chipotle puree, and cayenne with something more suitable to your palate. -- posted by Rainier Wolfcastle

Pakistani Style Chanay Ka Pulao (Chickpeas/Garbanzo Beans Pilaf)

This is one of the quickest & yet tastiest meal one can make in emergency situations. Although a lot of people usually have the same recipe for Matar (Greenpeas) Pulao & this Pulao. This recipe is way different than the usual Pulao recipe. This one is a bit spicy & more "masalay daar" as I call it. If you are not used to have it that spicy u can always lessen the quantity of chillie powder. A good tip while making any kind of Pulao is that after you add rice in the water mixture. Cook on a high heat till the water dries up completely & then cover & simmer it on low heat, otherwise you'll end up with a mushy halwa rather than your regular Pulao rice. Ginger garlic paste is also optional in this recipe. Yeah yeah I know its the core ingredient in Pakistani dishes but you can skip it if you want. -- posted by Bint e Naeem

Pat's Low-Fat White Chili

This is a great cold weather dinner. The basic recipe came from a South Beach Diet cookbook.
Suggestions:
Dress it up with all kinds of goodies like fat-free or low fat shredded cheese, fat free sour cream, salsa, cilantro, green chilies, jalapenos or tortilla strips. None of these really add any fat or calories to speak of.

Tortilla strips are usually made by frying strips of flour tortillas for about 30 seconds in oil. I discovered that you can get a close second by spraying a cookie sheet with Pam, laying out strips of whole wheat tortillas, and spraying them again with Pam. Bake at 350 until lightly browned and crisp.

Why whole wheat tortillas? They have a comparable calorie count to flour but the whole wheat takes longer to digest which lowers the calories stored as fat and adds additional fiber to your diet.

I’ve messed with this recipe a LOT. You can play with the ingredients to get a lot more soup. For example, I’ve added the following, none of which really ups the calories enough to even mention;
o	More chicken broth
o	more salsa
o	Fresh lime juice
o	Roasted red peppers

Let this be dinner along with a salad, sliced orange with chili powder and salt sprinkled on it, and baked whole wheat tortilla covered with melted fat free or low fat cheese and jalapenos or green chilies. -- posted by Chef #774395

This is a wonderful recipe that I've had tucked into my cookbook for years - I wish I knew where it originally came from! The garbanzo beans (also known as chickpeas) are an amazing meat stand-in; honestly, you don't even miss the grease once you give these a try! This is also a very cost-effective and easy way to prepare a meal, since garbanzos are cheap and readily available.

This is an adaptation of the hearty and flavorful Thai recipe. It is slightly sweet, slightly spicy, and fills your home with a mouthwatering aroma that can only be beat by its incredible flavor.

I altered the recipe because many of the authentic ingredients (lemongrass, galangal, tamarind, palm sugar, etc.) are not available in my area. You should be able to find all the ingredients in this recipe at Super Wal-Mart or a well-stocked supermarket.

Date and Chickpea Cous Cous

This was a throw together I made one night that turned out brilliantly. You can adjust the seasonings to your taste... just remember the stock and cous cous should be equal quantities. Great blend of sweet, sour and spicy. It's quick, filling, nutritious and will keep for a few days in the fridge - nice cold as well. To make vegan just omit butter. -- posted by Malaliu

Harissa-Spiked Houmous

This recipe is delicous -- for a nosh, cocktail party or just an evening snack! I love these kinds of appetizers because they don't take much time, this one is vegan -- so almost anyone can eat it. I like to serve them with Pita Crisps: preheat oven to 375ºF. Split 6 pitas hrizontally into circles, then cut each circle into 6 triangles. Lay them in a single layer, rough side up, on 2 or 3 baking sheets. Use a pastry brush to brush triangles with olive oil, then sprinkle with fennel seeds and a pinch of sea salt or instead of fennel and sea salt use Mrs Dash salt free seasonings. For example: Table Blend, Original or Garlic & Herb, these have a flavor all their own -- try it you might like it. These can be made about a week ahead, just store in airtight container. -- posted by Manami
