Ricotta Cheesecake

Ricotta cheesecake has a delicate texture and many times it is best to serve the cake from the baking pan. Make sure the cake is well chilled before serving it either at room temperature or slightly chilled. Slice into even wedges and either sprinkle it with a dash of liqueur or serve it with fresh fruit. -- posted by Tonkcats

Lemon Tiramisu

This is my "summer Tiramisu" The original recipe uses one packet of sponge fingers, but I use more to get more coverage on this size of tin. I also added the lemon zest and find it is not too tart, you can leave it out of course if you are not sure about it. You don't have to make this in a spring form pan, if you like to scoop it out of a dish, use whatever suits you. I sometimes use trifle sponges or plain cake instead of the sponge fingers. Oh... the lemons are low fat and very healthy! -- posted by Pets'R'us

Easy Tiramisu

It was "love-at-first-bite" when I first tasted "Tiramisu" last year in a Seattle restaurant, while there visiting our son and Czech daughter-in-law. This spring, my DH and I had Tiramisu again, in several different restaurants during the 4 weeks we were visiting in the Czech Republic. I'd never considered making it, myself, until I found this recipe in THE CAKE DOCTOR cookbook, as I thought it would be too complicated to make at home. Preparation includes 5 minutes for assembly. -- posted by Joje in Oklahoma City, OK, United States

Ricotta Cheesecake

I clipped this recipe out of Homemakers Magazine many years ago and usually make it in the winter when I have candied citron left over from my holiday baking. I find it comparable in taste to any cheesecake made with cream cheese - it is not as heavy but still has that rich taste. -- posted by Irmgard

Easy Pudding Tiramisù

This is not authentic, but it is a fast, easy to make and very tasty version of Venice's favorite cheesecake. It comes from the Magic of Jell-O. The name means "pick me up". Also try substituting vanilla wafers for the lady fingers. If you do, reduce the coffee to 1/2 cup because the wafers won't absorb the liquid as well. -- posted by littleturtle

Homemade Ricotta

This is the easiest cheese recipe ever!! I found the recipe in Gourmet Magazine. I use 1% milk, but you can use any kind, whole, 2% or even skim milk. This produces about 2 cups of dry curd ricotta; you can make it creamier, by draining it for a shorter time, or by stirring some of the drained liquid back into the cheese. If you use lemon juice it makes a good ricotta for desserts, and the one using vinegar is excellent for main dishes. Either can be used interchangeably, it's all about preference. The lemon is very pronounced. -- posted by Kay00427

Sophia Loren’s Tiramisu

Taken from Sophia Loren's "Recipes and Memories" Cookbook, this tiramisu is incredible and it's one of the better traditional tiramisu recipes out there. I'm all for shortcuts, but some of the tiramisu recipes I've come across just ruin the final outcome by taking too many shortcuts & using too many substitutes.
I've made this plenty of times and always get rave reviews. It's pretty close to perfect and certainly tastes homemade as it is.
For those of you who don't know, Tiramisu is a cool, refreshing Italian dessert AKA "Tuscan Trifle". It can be prepared individually in custard cups or in one larger baking dish (that is this recipe). Also, this recipe calls for liquor to be used, however any of the imitation flavorings or liquid flavorings can be used instead. -- posted by BlondieItaliana

From her Chocolate Memories episode. I watched this show today and saw she used savoiardi, which are hard not like the soft American ladyfingers. So I'd like to make this when I find them. Inga says You can find savoiardi in an Italian specialty store. -- posted by Charlotte J
